Party in the U.S.A

Hey friends! It is 2 A.M. and I am still awake! I just got home from a fun bachelorette party and had a great time. I should get to bed since I am getting up early to hit the Disney Marathon expo with Ashley and Ryan. Oh well, I will take a sweet nap when I get home from our field trip. Hopefully!

For a mid-morning snack, I had some of this delicious Stonyfield yogurt!

I then had a little yoga time! I did a warm-up on one segment of Exercise TV then I did the AM yoga which was 12 minutes.

I got about 20 minutes of morning yoga in and it felt SO great! I am the person that thinks “20 minutes only? not even worth it!” but this really energized me for the rest of the day and helped stretch my sore muscles. This lady was SUPER perky.

For lunch I wasn’t sure what to have, I didn’t have dressing for salad(we need more balsamic) and I didn’t want another sammie.

Enter: SOUP! Perfect on a coooold day…..in..Florida! HA, I am NOT complaining. I love love love this weather and since 300 days(AT LEAST) out of 365 are super hot and sticky I am relishing this. I can’t wait to (hopefully) one day move a little more north.

Okay, back to the soup!

We found a coupon in the paper for some Select Harvest soup.

I heated up the soup, put some string cheese on the top and toasted some whole wheat pita on the side.

I also had a sweet potato and carrots. It was an orange tinged lunch..I see that. I eat so many sweet potatoes but they are inexpensive, easy and SOOOO good!!!

Just in case you were wondering, I microwave 98% of my sweet potatoes. So quick and easy! Just puncture holes with a fork or knife(be careful!) stick it on a microwave safe plate and micro starting with four minutes and if it’s a bigger potato, nuke it for five! Sometimes you have to play with it. Some days(like today) it’s perfectly soft and yummy, other days I have to keep microwaving it because it’s a little al dente.

I didn’t take food pics tonight since it was all sort of crazy once I arrived to my former roomie, Mandy’s place. I carpooled with Mandy and my other friend Natalie to the party.

For dinner I had a chik-fil-a grilled chicken sammie(270 calories, not bad at all and great when you are in a rush!) I also ordered a medium fruit salad which has apple, strawberries, and mandarin oranges. Yummy!

It was a fun night that involved lingerie, inappropriate (but hilarious) bachelorette party games, and a blow-up doll named Peter Pecker. It was frightening, feel free to use your imagination on that one.

Then we hit a local bar for some dancing. So fun. Throughout 5 1/2 hours of bachelorette fun I had two drinks and a shot that was more the size of half a shot and wasn’t strong. I did not need to drink more then that which is great because I was able to drive home to sleep in my own bed and not wake up feeling like death in the morning. ;)

I am off to bed friends! It’s late..or early? I am going to beg Ashley to take me to ‘bucks in the morning, for sure.

Pizza, Pumpkins, Power Yoga

I am having a wonderful day over here! How about yourselves?

It’s probably because this is the only day I have had off all semester and considering I have been teaching twenty first graders every day of it, I needed this break!

Last night was so relaxing and nice. Adam took great care of me since I was feeling off all day. He ran to Publix to pick up things for semi-homemade pizzas! This is something we did once a week this summer and we return to it often because it’s easy, inexpensive and SO yummy! We received a pizza stone as one of our wedding gifts and it is INCREDIBLE! If you love to make pizza and don’t have one. Please head to Bed, Bath and Beyond right now and purchase one. You will thank me, and provide a piece of pizza in gratitude. ;) Or maybe just enjoy it yourself.

We used store bought pizza dough, we often use multi-grain dough but Adam said there was only one there and it didn’t look good. So we bought reagular pizza dough. We cut it in half and I took the smallest looking piece, although with dough it’s hard to tell! Next time I am going to make Jenna’s pizza dough though, we just needed something quick and easy!

Now before I show you my topping, I must say it is my FAVORITE pizza topping. Not even gonna lie, my former roomie Tristen and I would order this with black olives all. The. Time.

PINEAPPLE!!!!!

I know it’s not to far fetched at all. But I love it. I often get weird looks and never understand why. No Hawaiian pizza here, I don’t like ham! I just love plain, fresh, pineapple alllllll over my pizza. Yum! Yum! Yum!

I poured the pizza sauce on the dough then added some shredded Sargento mozzarella. I sprinkled the chopped pineapple onto the pizza and then sprinkled it with som thyme, oregano and little bit of S&P. I also brushed the crust lightly with EVOO. It looks drenched here but I assure you it is not! Just enough to add a yummy flavor to the crust. I wish their were scratch and sniff pictures because it smelled amazing while it was cooking! With the pizza stone it only takes 8-10 minutes to cook the pizza!

Then it ends up looking like this:

I wish I had better lighting in my house..but I had to stress how much I truly loved this pizza. L.O.V.E!!

I ate all but one piece, which I will be enjoying as I make a “leftover” lunch later.

I was going to wash it down with a beer..

..but decided to save it for the weekend and enjoy a Le Croix instead. Adam grabbed it and took a sip before I could warn him and all he could muster was “That’s NOT sweet at ALL!”. There’s a subtle sweetness to it, not much but it’s growing on me! It’s something a little different then water, and zero calories! I felt so good knowing I wasn’t wasting calories on a soda, or artificial sweetners. I may try and add some POM juice to it today to sweeten it a bit since I have just enough POM juice left!

A little (or a lot) of POM never hurt anybody. ;)

I took every advantage of yoga this morning on my day off! My throat felt better and while I shouldn’t push it much, I knew I could modify what I needed to and I just needed to be very aware of what my body was telling me the whole time.

Unfortunately this morning I started feeling queasy, but I realized I had been sitting around for over an hour without food in my tummy, I really needed to break. fast! ;) I put together an (unpictured) smoothie since I needed something to settle my tummy but wanted something like. I used:

  • One whole banana
  • Handful of frozen strawberries
  • Mangoes
  • Plain yogurt
  • Flax
  • Amazing Grass

Love that grass! ;) I didn’t use spinach like I normally do because I was feeling quesy and knew I needed something a little more simple. While it doesn’t add a taste to it, I just knew it would be harder to digest. I felt instantly better, especially after two ginger pills! ;)

Class was led by Calvin, and if you read Ryan’s blog you probably read about her experience the other morning. As he walked in and began to teach, instead of getting more nervous since this was only my second class, I decided that it’s better for me to sit in a different spot (i.e. not the cozy corner) and have a different teacher then the previous class. I grow comfortable with familiarity and I want to be able to adapt to any situation in yoga. It turned out great! I was still feeling a little off so I just carefully listened to my body and felt when I should rest and when I should try. I rested a lot more then I did the first time, but it was still great. Feeling like I could tell what my body could handle and what I shouldn’t force it to do felt so great! It’s more important to rest then to push yourself. I want to be a pro right away and you can’t do that in yoga. You must rest. You must NOT force your body to do what it’s not ready for. Rest is something I think us Americans have a hard time doing. That’s why I love yoga. :) I can already tell even though I rested, I am going to hurt tomorrow! I love being sore though! I love to know my body was pushed just beyond what it could do and new muscles are beginning to form. I hope to be able to continue practicing at least twice a week. I can’t wait to see where I am in a year!

My tummy was grumbling all the way home so I made myself this:

I finally made pumpkin oats! I have to admit..I never…really..liked…oatmeal. Should I hide now before I get oats thrown at me? I have slowly started eating more and more. I LOVED THIS!! Soooo yummy. Cooked up:

  • 1/3 cup soy milk, water, oats
  • Splash of vanilla
  • Saigon Cinnamon
  • Pumpkin pie spice mix
  • One packet of Sun Crystals

I tasted it before I poured it into my bowl and realized there was something missing..almond butter of course! I added it to my bowl..I think it loves me:

I went to move the spoon and it made an almond butter heart! I feel the love!

I am resting now, found out a meeting with a friend is cancelled because she is sick. Poor girl! I am going to use this day to work on my blog, right on this spot on my cozy couch. It’s going to be wonderful. :)
