Two more days!
Only two more days left of my internship! YAY!! Cannot wait to be done.
Breakfast was rushed this morning, again. I had a little more time to get ready for my seminar but boy was I SUPER tired! Apparently I have decided to give up on getting 8 hours this week. I know it’s bad to say, but because I don’t have to teach I am more okay with not getting enough sleep as much as it stinks the next day. There’s just too much to do! I’ll be catching up on my zzzz’s after Friday. I hate getting less then 8. Less then 8 don’t feel so great! Oh well..
Breakfast ended up being a Kashi pumpkin pie bar (I am officially obsessed), some tazo awake tea, and a yogurt. All unpictured, I was in a rush and figure you all know what they look like by now so I’m sure you don’t mind.

When I got home, I had a photoshoot with Leo..then I made lunch.
For lunch I heated up a Morning Star spicy black bean burger topped with organic ketchup and spinach, frozen veggies, frozen broccoli and kale chips! Yummm!
I swear there’s a burger under them there spinach leaves!
Along with a string cheese.

Also, a glass of V8 fruit juice. Oh, and ketchup with hot sauce for dipping the kale chips!

I also had a mug of ginger-green tea. After lunch and cleaning the house!
Tonight we had our small group and Joyce(who usually makes dinner) and her husband were out of town so we had pizza!

Plus a yummy salad with toasted almond slivers, strawberries and a raspberry vinaigrette! Yummm!
I had another half a slice of pizza and another heaping scoop of that salad with extra strawberries. So yummy!

..and a perfectly sized cupcake with chocolate frosting. Deeelish.
Today was super busy! I thought my seminar was three hours, found out this morning it was 3 1/2 which turned into almost 4 hours!! I didn’t really get a day off because once I got home I realized that the students got out of school 30 minutes later. Sort of a bummer. I rested for a little after lunch and then got right into cleaning our apartment until Adam got home, then it was right off to small group. Sort of a bummer I wasn’t more productive. Oh well, the house is now clean! I have two more days until I am freeeee!
In other news….

Supporting cancer research and getting yummy treats?? What more could you want? I am making one of Lindsey’s recipes: pumpkin chocolate chip loaf! I’m making it more of a dessert bread by adding more sugar. It’s delicious!

Have your cake and eat it too!
Last night we cooked up “on our own” dinners which usually mean we both eat something completely different. This time, it meant different proteins. I had a spicy black bean burger with organic “huck-uptsh” and hot sauce. Okay, when I was a little kid I called ketchup “huck-uptsh” for some reason that was easier then ketchup. I cooked up some 5-minute Israeli cous-cous and veggies. YUM! My mom made couscous a lot growing up but I haven’t had it in soooo long.

I love couscous.



Adam really wanted me to show the “rabbit” at work, it was a gift I got him while we were dating and it makes wine work removal super easy! We love it.

So yummm! I love Pinot Noir, especially from Oregon.

We also broke into our wedding cake topper. We saved our topper in three large sections and vacuum sealed it. We ate one on our one month, and since our six mont just passed, we decided to try(and hope) that the cake still tasted amazing.

Ohhh..my…GOSH!! It tasted PERFECT! Like we froze it yesterday!! We had two layers, this was my favorite. It was coconut cake with a guava filling. Incredible! I had that slice plus another one the same size. I looove it. Oh and the best fondant ever, Adam said he never likes the taste of it but this one he does. Yum yum yum! If you need a reference for a great cake in Orlando, ask me!

This morning began with coffee with a little skimmy and sugar.

Breakfast was my last of my Chobani (le sigh..) and my yummy MixMyGranola..

Yumm..I am scarfing it at the moment so we’re not late for church!
