Happy Birthday Dad!

Well, when you’re a food/healthy living blogger and you have yet to go grocery shopping. Well, that makes for a boring blog entry. So boring, I didn’t even take a picture of my breakfast! I had a piece of toast with smart balance and a cheese stick that I broke over the toast. It wasn’t that great, but it was all we had! We’ll have to figure out something until tomorrow because it’ll be coupon cutting time!

I woke up at ELEVEN today. I never do that but I guess my body just needed it. It was too late to get my run in at that point though. Adam and I have limited time today since he has to work tonight, and we need to get out of the house together. SO, running will commence after church tomorrow or later if I have time!

I am off to enjoy my day. :)

Nothing like sleeping in..

..to start a day off right! Of course sleeping in to me is sleeping until 9:30. My body really needed it so I was more then happy to oblige.

SInce last Saturday it’s been hard to feel rested no matter how much sleep I have gotten, but I finally feel caught up! I don’t like sleeping in all the time but after a long, hard week I let myself get more then 8 hours and it’s divine.

This was our dinner last night:

This was one of the best meals I have had in a while..I was craving sweet potato(when am I not craving sweet potato? *she says as the microwave beeps and the smell of sweet potatoes fills the air*…….anyways..) so we decided to make sweet potato fries. We coated them in a very light coating coating that included-

  • A little EVOO
  • Paprika
  • Garlic Powder
  • Chili Powder
  • Salt and Pepper

Remember, spices are free reign so add to taste and enjoy!

These were probably the best we ever made, sweet potato fries may be my favorite food..

In a pan I added a very little bit of EVOO along with some fresh broccoli, chopped up baby carrots, some frozen veggies and once those were warmed through I added two handfuls of fresh spinach. Half for Adam, half for moi!

While I cooked up veggies, Adam cooked up some tilapia that he found on sale this week.

Adam cooked it with a little EVOO and spices, I forgot to ask him what he used but I know he used Old Bay and S&P.

So delicious and buttery without adding butter!

All together..

I drank it with some green tea and pomegranate that I hadn’t finished, I just poured it over ice!

Then I switched to vino..

Throughout the night I sipped on a glass and a half.

I noticed we only had a small amount of pumpkin pie ice cream left, I brought the container to share with Adam but he didn’t want any.

To be honest I had a few bites and threw it away since I could already taste freezer. Not the best taste! I settled on a lemon head and twizzler from my halloween candy stash. I’m sorry but I LOVE lemon heads and I allowed myself one. :) I may need to donate this candy to Adam’s office.

When I woke up this morning I read through some blogs and got ready to workout by fueling on some almond butter and banana. Yumm..but it looks like someone snuck a bite before I took a picture..

Me- “Adam! I didn’t even take a picture yet!”

Adam- “I’m sorry! I thought it was funny!”

(Just like I thought the raw onion kiss was funny?)

Me- “It’s okay I am just going to have to tell the blogworld..”

Adam-*Sadface*

Me-”It’s okay, it doesn’t make you a bad husband. I’ve seen it happen.

Adam-”I’ll just cut that part off.”

Me-”I can’t lie about it!!”

Adam- “That’s not lying…”

I took a picture anyways..(;

At the gym the treadmill was taken..grr apartment gyms! I made due with the elliptical and set it to level 10 for 30 minutes on the “Hills” program. Boy was I sweaty after that! I read Women’s Magazine while working but made sure to push it often, especially on the hills.

I didn’t feel %100 after, but luckily Adam made breakfast!

Eggs in a basket and some turkey sausage(+1 more)!

This was yummy and I felt instantly better.

After getting ready we headed off to our favorite Orlando coffee shop, Cup O’Soul to get some work done. Unfortunately their internet was on and off so I didn’t get that much done(hence the later “morning” post) but I got a job application completed which was a huge to-do! I sipped on this while working-

The drink I always get, the llama. I talk about this amazing drink and it’s coffee iced cubes here. Love it!

Now I am getting dinner together before heading off to my beautiful friends baby shower! Then a girl’s night of baking and Twlight watching. I have already seen it once right when it came out last year but have never read the book. I am hoping that watching it with Ryan and Ashley will help me get into it. I am a bit of a skeptic..maybe I will be a late convert. Have you gotten into the Twilight craze?

Christmas in Cocoa!

Well, it’s now officially Christmas at the mall in Cocoa! I am on three hours of sleep right now so today is going to be interesting! Mall work goes from about 6PM-5AM. Luckily we were able to leave early since their are two “shifts”. We lasted until 2:45 and decided we would rather drive home awake, then push it and drive home exhausted.

I had a small plastic bag of Pirate’s booty right when we got to the mall as we were checking and replacing lights on the garland. I sipped on my 32 oz. of water as we worked as well. Mmmm H2O!

I also snacked on some monkey munch/puppy chow(whatever you choose to call it!):

Yumm! My wonderful friend Ashley brought a huge bowl of this stuff for us to munch on. Chocolate, peanut buttery goodness!

I also snacked on a few pieces of halloween candy throughout the night, about 4 pieces throughout the night. It was a LONG night so it was a nice sugary pick me up.

When we first got there we had three hours of prep work which involves “fluffing” garland, finding which lights work and don’t and replacing the lights that don’t. My pictures came out blurry, but here are some from the work room..

Yep there’s a whole lotta Christmas going on..

At about 8:30 we broke for dinner which was GREAT because we were starving. The group decided on pizza from the Sbarro in the mall, my only request was that there be veggies on the pizza. Luckily, Adam was ordering so he made sure to get one and even more fortunately I had some other veggie lovers to share with!

Okay it literally had just come out of the oven when we got it and my veggies tried to escape my ravenous attack. They lost the battle. I scooped the veggies back on and as unattractive as it looks it was yum! They had green peppers, a little brocc, red peppers, onion(notice an Italian theme with the colors?), and mushrooms! Mmmm! I wish their were more veggies on the pizza but it was better then having no veggies at all!

I brought some POM tea for a pick me up with dinner. I have never tried POM tea but it was yummy! I bought two of these during a sale at Publix so I have another yummy one waiting in the fridge for me. I loved the fruity green tea taste, it was a nice treat.

I also hated the pizza..obviously..

Throughout the night we prepared garland to hang..literally all night! Thank goodness though, the time flew by so fast. I literally couldn’t believe how fast time was passing by. At around 11:30 we hit a wall though and my friend Gayle I were pretty much garland buddies the whole night and we needed a coffee break. The only place to really get coffee that late(the DD wasn’t 24 hours..sad) was 7-eleven. We grabbed our friend Andy and drove down the road and made a coffee run. I ended up drinking an unpictured vanilla iced coffee. It was SUPER sweet! I’m not used to drinks that sweet, but it did the job.

Then during break around 1:45 I dug into this and shared with Adam:

He was really excited about this flavor, so was I! It was yummy with a very subtle sweetness. You would expect a little more tartness from a pineapple yogurt but it had just enough. It wasn’t my favorite flavor so far, I liked it..but Adam LOVED it!

We decided to head out at 2:45 since it was just us two driving home and we didn’t want to wait until we were super tired to drive home. Better safe then sorry, right? So we headed home. Luckily I think the coffee took 3 hours to kick in because we were talking the whole way home!

It was my first night home alone in our apartment all night, I ended up turning all the lights on and watching the recorded episode of SNL with Taylor Swift. It was one of the funnier SNL’s I have seen in a while! I think she did great, I especially loved “The Monologue Song”.

Long story longer, I couldn’t fall asleep. I was up until 6 AM..the sun was rising! I fell asleep watching Friends on my laptop. I woke up bright and early at 9:45 and couldn’t fall back asleep. At least I will be able to fall asleep early tonight?

For breakfast I had another breakfast cookie..yummm! I was sadly..and I mean sadly..out of bananas! It was still good but I missed the nanner yummyness! I added half a cup of 0% plain chobani and some more mushy strawberries.

I then moved over to the coffee station, especially since..if you look at the clock..I had been awake 4 hours prior. Mmm coffee..

I am hoping to get out of the house today..Adam may not be as excited about that he was up until 6 as well, but stayed in Cocoa..and was running around all night. 12 hours! We shall see..wish me luck? ;)

So that was a random job, but those decorations have to get up there somehow. ;) What’s the most random job you’ve ever done?

Lovely lovely lunch!

With some lovely lovely ladies! :)

But first..my Friday! It’s been the LONGEST week ever! I don’t know why but it seems the same for many of my friends. Friday could not come soon enough! I started my morning in a wonderful, wonderful way! I like things in twos today don’t I?

Mmm..I LOVE THIS! I’m actually not the biggest blueberry fan. I like them a lot but they aren’t first choice. For some reason I was craving it Friday morning! I put it on top of a Fitnessista Breakfast Cookie that was made with the following:

  • About 1/2 cup of oats
  • Splash of skim milk
  • Banana
  • Tablespoon of almond butter
  • Flax
  • A packet of Sun Crystals
  • 1/2 scoop of chocolate protein powder
  • Cinnamon
  • Pumpkin pie spice

I put it in the fridge with some frozen strawberries so they would defrost. The next morning I put it all together:

So unbelievably yummy and filling! This is a new favorite!

It was my friend Hayley’s birthday so a bunch of us headed to Kata in Winter Park for some yummy food! It’s a Thai/Sushi restaurant and I was excited for some Thai food! I dressed up for the occasion..after I long week I just wanted to feel cute and comfortable…and warm!

Everyday I go into school I don’t really do my makeup, I just try and look professional and decent so at the end of the week it’s nice to feel comfortable! You know what I mean? Also after a long week of dealing with chatty first graders you apparently want to fight someone..

Once there I ordered the Panang curry as mild as they could make it(still super spicy which I expected) I like spicy food a lot just not so spicy I can’t taste my food! It came with a small salad and miso soup (I also snacked on a small amount of edamame):

Yumm and spicy! I needed more rice at one point to help out with the spicyness!

While driving home I had some halloween candy too! Only a couple pieces..very needed and worth it!

Once home I passed out. I had every intention of blogging but after a week like this, I could have fallen asleep at 7 EASY! So by 11 I was absolutely done for the day!

This morning I woke up(after a delicious 9 hours of sleep)  and sipped on some awake tea before lacing up and heading to the gym. I ran two miles in 26:30 after not running for a few weeks. I took it easy today to ease back into it. I’m not a fast/long distance runner. I’m a beginner..working on building up my endurance. I can log those 2 miles for the POTM Challenge! YAY!

After running I had a yummy Arnold’s whole wheat sandwich thin with almond butter and honey:

Yummy! I ate light this morning because I was headed to lunch with some awesome friends/bloggers!

Lindsey, my wonderful friend and talented writer of Sound Eats was in town. We met up with Megan, Ryan, and Ashley as well at Infusion Tea! If you read a lot of blogs you probably have heard about this place. The food and tea are both incredible! I am hooked. I ordered a half roasted pear salad and half a bowl of their pumpkin soup:

Mmmm..SO yummy!

My salad had roasted pears, a balsamic reduction, a pecan crisp, blue cheese on top of organic field greens. Yeah..I know! I am ordering a whole one next time..for sure!

The pumpkin soup was so yummy and comforting, I felt like I could take a nap after sipping on it. It was served so cute in it’s little mug..

When I got home, before Adam left we finished our cupcakes since they may not make it until tomorrow night(we’re working tonight) so we broke in..yummy treat. I am loving sweets today!

It was such a great afternoon chatting, eating, and learning. I felt like I learned a lot, I just sat there and listened most of the time because I was so interested in learning more about the blogging world. I am really thankful to have friends nearby with similiar interests! It was a fun afternoon.

Now I am off to work from 6-2AM decorating a mall for Christmas! Yep..my father-in-law has been doing this for a really long time. I helped last year and I am off to help again! It’s going to be a long night but Adam and I will make plenty of money to spend on Christmas gifts..and some to save too! ;) I will take pictures as the night goes on. I’m off to pack healthy snacks!
