Have I left the couch?
I am being super lazy today and I love it(sort of)! I am actually already going stir crazy. I will make my way to the gym, probably with Adam when he gets home.
I did get up to make some breakfast.
Pumpkin oats with chocolate chips and a ginger green tea!

Was not crazy about how the oats came out. I added some agave and even some stevia and brown sugar and it still tasted gourdy. :-\
Oh well, I ate half. The chocolate chips made it much better.

Lunch was leftovers with a little blue cheese crumble and some oregano sprinkled on top!
Sorry for the boring post. I am currently researching jobs! So begins the long, arduous process of finding a job.

Pumpkin three-ways.
Good Tuesday everybody, I hope yours is going grand. Mine was another long day, but I sort of get a break tomorrow?
Before I jump to tomorrow, we’ll start with today.
Breakfast-

Sorry for the dark picture, I notice now I don’t care too much about lighting in the morning because I am soooo tired and don’t really notice until I am writing..like now!
I ended up toasted an Arnold’s sandwich thin sandwich with pumpkin butter. Yumm! I ate this around 8 when I got to school.

Yeah, I need to eat more(wish it were easier) because I was hungry by 10 again! It seems no matter what I eat, and no matter what time my stomach is always feeling hollow by 10. Frustrating! Especially since I can’t really leave twenty kids to go scarf a snackie. I taught today for the last time(we had a sub half the day) so hopefully these last few days I won’t be starving by lunch!
Lunch was unpictured. I just had three small slices of leftover pineapple pizza(not as pretty as the freshly cooked version) from last night. I also had some more cranberry apple sauce, and a pumpkin pie bar from Kashi. Carb overload!

When I got home I dug into one of these! YAY! I have seen some bloggies snack on this flavor and HAD to try it. I love pumpkin can’t you tell??

With a little H2H makes Katy a happy girl.

I liked it! It wasn’t like pumpkin pie to me, more cinnamon then pumpkin flavor I thought, but I still liked it. I love the texture of Stonyfield’s yogurt. So smooth and creamy. Good thing I bought two more of these!
I just realized I had pumpkin three-ways today! Crazy..I just love pumpkin.
I feel like I can rest a little, and maybe even sleep in a little tomorrow!! I am off to a “Now That You’re Graduating” seminar in the morning until noon and then I am free as a bird!! Maybe I can get Adam to take me to lunch after! He works right by my campus so he’ll be dropping me off and picking me up since I don’t have a parking permit this semester.
I’m off to decide if I am going to work-out and then I think we are going out for some wine and tapas! Yay!!

Hello, Winter?
I think it’s coming..even for a brief moment. This year, “cold fronts” seem to come and go within two days. What. Is. The. Deal?
At least tomorrow will feel like Winter, and maybe Friday..Friday actually should feel like Fall..so yay!
Today was stressful again, I feel like the closer I get to being done the longer the days feel. In a week I will have mostly given the class back to the teacher..so YAY!
Graduation: T-Minus 38 days and counting!
Did you know that you can actually watch my graduation live on the internet? Not kidding. Not that you would want to. But it’s happening. It makes me laugh a little..
For breakfast I made a not-so-green-more-swampy monster:

- Spinach
- Stonyfield Strawberry yogurt
- Amazing Grass
- Mango
- Blueberries
- Strawberries
- Cranberry juice
- Almond milk
I really need a VitaMix, I am slowly killing my magic bullet with these smoothies and I would love to put more spinach into my smoothies.

Also burnt one half of my sandwich thins and we’re almost out. So I managed. 3/4 of the burnt one had smart balance, the other half had almond butter and honey.
For my (unpictured) lunch I brought some leftovers from last night..some of these leftovers:

Yummmm! I took one of my smallest tupperware containers and forgot to pack much more. I also snacked on a baggie of organic baby carrots. Since I was still a bit hungry I dove into this:

Yummm! This was my first time eating this, I LOVE the texture of the chewy and the crunchy. Perfect mix. I finally felt full and satisfied!
When I got home I showered and got ready for tonight. After that I needed major fuel, my stomach was reminding me so..
Enter: Cereal.

H2H and Puffins..such a yummy mix! I looooooove me some cereal. Sometimes that’s all I need to smile. I know, I am easily amused.
To celebrate the cold front coming tomorrow(high of upper 60′s) I had one of these babies:

Some exciting news, I found out Adam is taking me to New Smyrna Beach for the weekend of the 20th, the weekend before Thanksgiving break! I am really excited to just get away! I will still be blogging, but we will be cooking up a storm I hope. He’s promised to work with me on some recipes and we’ll have two days to just get away. Much needed, and it starts my week off from school and I will be done teaching in my internship at that point!
The next few weeks are SO exciting. Just thinking about it gives me those excited butterflies in my stomach. I have a direction I am heading in that’s completely different then what I thought but it makes me so happy and just feels SO right. I know God has a total hand in this and I am just hoping/trusting that I will continue being led, because right now it’s a huge jumbled mess of dreams that have to get sorted and figured out. One day at a time!
After I graduate I will elaborate more, but as I am still finishing up school in my internship I won’t talk much about it yet!
Well, on that note it’s off to our Wednesday night group. Sorry for the lame post tonight, Wednesdays are rough! I promise the posts will be much more exciting once internship is done and my schedule is freed up. Looking forward to writing about some topics that interest me as soon as I get some more time in my life!

Pizza, Pumpkins, Power Yoga
I am having a wonderful day over here! How about yourselves?
It’s probably because this is the only day I have had off all semester and considering I have been teaching twenty first graders every day of it, I needed this break!
Last night was so relaxing and nice. Adam took great care of me since I was feeling off all day. He ran to Publix to pick up things for semi-homemade pizzas! This is something we did once a week this summer and we return to it often because it’s easy, inexpensive and SO yummy! We received a pizza stone as one of our wedding gifts and it is INCREDIBLE! If you love to make pizza and don’t have one. Please head to Bed, Bath and Beyond right now and purchase one. You will thank me, and provide a piece of pizza in gratitude.
Or maybe just enjoy it yourself.

We used store bought pizza dough, we often use multi-grain dough but Adam said there was only one there and it didn’t look good. So we bought reagular pizza dough. We cut it in half and I took the smallest looking piece, although with dough it’s hard to tell! Next time I am going to make Jenna’s pizza dough though, we just needed something quick and easy!
Now before I show you my topping, I must say it is my FAVORITE pizza topping. Not even gonna lie, my former roomie Tristen and I would order this with black olives all. The. Time.

PINEAPPLE!!!!!
I know it’s not to far fetched at all. But I love it. I often get weird looks and never understand why. No Hawaiian pizza here, I don’t like ham! I just love plain, fresh, pineapple alllllll over my pizza. Yum! Yum! Yum!

I poured the pizza sauce on the dough then added some shredded Sargento mozzarella. I sprinkled the chopped pineapple onto the pizza and then sprinkled it with som thyme, oregano and little bit of S&P. I also brushed the crust lightly with EVOO. It looks drenched here but I assure you it is not! Just enough to add a yummy flavor to the crust. I wish their were scratch and sniff pictures because it smelled amazing while it was cooking! With the pizza stone it only takes 8-10 minutes to cook the pizza!
Then it ends up looking like this:

I wish I had better lighting in my house..but I had to stress how much I truly loved this pizza. L.O.V.E!!
I ate all but one piece, which I will be enjoying as I make a “leftover” lunch later.
I was going to wash it down with a beer..

..but decided to save it for the weekend and enjoy a Le Croix instead. Adam grabbed it and took a sip before I could warn him and all he could muster was “That’s NOT sweet at ALL!”. There’s a subtle sweetness to it, not much but it’s growing on me! It’s something a little different then water, and zero calories! I felt so good knowing I wasn’t wasting calories on a soda, or artificial sweetners. I may try and add some POM juice to it today to sweeten it a bit since I have just enough POM juice left!
A little (or a lot) of POM never hurt anybody.

Neither did pumpkin pie ice cream posing next to two cute punkin’ babes!
I took every advantage of yoga this morning on my day off! My throat felt better and while I shouldn’t push it much, I knew I could modify what I needed to and I just needed to be very aware of what my body was telling me the whole time.
Unfortunately this morning I started feeling queasy, but I realized I had been sitting around for over an hour without food in my tummy, I really needed to break. fast!
I put together an (unpictured) smoothie since I needed something to settle my tummy but wanted something like. I used:
- One whole banana
- Handful of frozen strawberries
- Mangoes
- Plain yogurt
- Flax
- Amazing Grass
Love that grass!
I didn’t use spinach like I normally do because I was feeling quesy and knew I needed something a little more simple. While it doesn’t add a taste to it, I just knew it would be harder to digest. I felt instantly better, especially after two ginger pills!
Class was led by Calvin, and if you read Ryan’s blog you probably read about her experience the other morning. As he walked in and began to teach, instead of getting more nervous since this was only my second class, I decided that it’s better for me to sit in a different spot (i.e. not the cozy corner) and have a different teacher then the previous class. I grow comfortable with familiarity and I want to be able to adapt to any situation in yoga. It turned out great! I was still feeling a little off so I just carefully listened to my body and felt when I should rest and when I should try. I rested a lot more then I did the first time, but it was still great. Feeling like I could tell what my body could handle and what I shouldn’t force it to do felt so great! It’s more important to rest then to push yourself. I want to be a pro right away and you can’t do that in yoga. You must rest. You must NOT force your body to do what it’s not ready for. Rest is something I think us Americans have a hard time doing. That’s why I love yoga.
I can already tell even though I rested, I am going to hurt tomorrow! I love being sore though! I love to know my body was pushed just beyond what it could do and new muscles are beginning to form. I hope to be able to continue practicing at least twice a week. I can’t wait to see where I am in a year!
My tummy was grumbling all the way home so I made myself this:

I finally made pumpkin oats! I have to admit..I never…really..liked…oatmeal. Should I hide now before I get oats thrown at me? I have slowly started eating more and more. I LOVED THIS!! Soooo yummy. Cooked up:
- 1/3 cup soy milk, water, oats
- Splash of vanilla
- Saigon Cinnamon
- Pumpkin pie spice mix
- One packet of Sun Crystals
I tasted it before I poured it into my bowl and realized there was something missing..almond butter of course! I added it to my bowl..I think it loves me:

I went to move the spoon and it made an almond butter heart! I feel the love!
I am resting now, found out a meeting with a friend is cancelled because she is sick. Poor girl! I am going to use this day to work on my blog, right on this spot on my cozy couch. It’s going to be wonderful.

Pumpkin Pros!
Welp, that was a fun night of pumpkiness! Before I talk about the pumpkin carving let’s back up..
For pre-workout fuel I ate a yummy mix of almond butter and Honeycrisp apples. I love Honeycrisp apples..and it seems they love us too..

Note to everyone..that HUGE jar of MaraNatha almond butter..only 6 bucks at Costco! Not kidding..
After that I headed to our apartment gym which leaves much to be desired. Oh well, it’s free! I had just taken a week off because I got hit bad with a cold when the cold front came through a week or so ago. I decided to keep it easy today just to be safe and I did thirty minutes on the elliptical. I was going to do abs but I pushed myself hard on the elliptical and did not feel great after. Once my stomach settled I had a smoothie:

This one had about a cup of spinach, four frozen whole strawberries, one banana, frozen mango, OJ, almond milk, flax, AMAZING GRASS and some POM juice. I wouldn’t call this a green monster, I can only put so much spinach into a magic bullet cup. One day I will own a VitaMix..one day..
Not as much green as it looked..swampy..
But yuuhhh-ummmm!
Dinner was mainly made by the hubs! He’s great..and can cook! His nickname in college was “Chef Adam” oh yes, I chose well!
Pork was on sale so we had some of that marinated in a yummy asian marinade we threw together (soy, teriyaki, garlic, hoison, and a little light agave)along with brown rice and..as predictable as it is..more BS!! I mean..brussel sprouts! YAY! I mean YUMMMMM!

Then we got to work! I will show you how it went..in pictures! I will add commentary where needed..

Mm yeah the big one was mine..I don’t know why I chose a heffer of a gourd..the hubs chose the one next to it first.
Mine definitely owns his.








I made a fat cat..wondering what I should name her..any suggestions?
Adam made the skull..overall I think we are pretty awesome at pumpkin carving. Or just had some awesome patterns to follow! I think it’s more the latter.
As a reward for all the hardwork, I treated myself to some pumpkin pie ice cream. Perfect end to a fun night!


Now I MUST head off to bed. I need to work on getting eight hours of sleep. Caitlin’s post really convicted me that I really need to work on getting eight hours again! This 6 1/2-7 hours is NOT cutting it at work and not cutting it for my health and well-being!
Well I am off to sip on some tea and head to bed.

Getting walked by the dog..
Well, another noob mistake: Making sure camera is actually taking pictures..hmm..at least I am learning all this now. I guess you have to learn somehow right? Oy.
Anyways….

….at least we got our pumpkins!
I was sad to see my pictures at the patch had not come out..

See the contrast of emotions between myself and Bo who looks plenty happy over my shoulder..

Then we attempted a walk through the art festival down the street..Bo’s mission instead was to walk US around and sniff every inch of grass, tree or bush in sight. We didn’t last long.
The hubs and his nephew, Bo..

Dinner is now cooking..mmmm..post on that later. Just trying to savor each and every last delectable bit of the weekend left..Sunday nights can be so depressing!

Off to the patch of pumpkins!
Sorry for no morning post, stayed with my mom last night at her friends place since they are out of town. Yep, this noob of a blogger left her camera cord, memory card USB plug-in, and phone charger at home. So I had no way to get my pictures to YOU! I’m learning, so bear with me! Deal? Deal!
Well..my mom just left. I hate that she lives 3 1/2 hours away..I know I know it’s not much but it’s just far enough.
We had a great weekend though and I am super grateful for that. We went yesterday to the VegFest, which was nice. We lasted only about an hour though, it was SO stinkin’ hot!
This morning I got up and went straight to Joe..this Joe that is:
He’s so good to me..
The place we were staying at only had sugar and the powdered Coffee Mate creamer, neither of which are my faves. I didn’t pack well, but coffee is coffee! So I took what I could get.
We headed out to church and met up with my husband. I love my church! I realized on the way though that the coffee had viciously tricked my tummy into believing it was full. Joe..how could you?
I snacked on a bit of this in church:

But only a little bit because it was super crunchy! It was good, especially with the spices in it. But I think I much prefer soft snack bars. I also sipped on a little unpictured green tea.
After visiting with people after church we headed to Panera for a quick bite to eat since my mom wanted something light. I just wanted something..I got a super comforting bowl of broccoli cheddar soup and a chunk of french bread.

Super yumm..with a cup of water. Anyone else frustrated that when you choose to make a better choice by drinking water they punish you with super mini-sized cups? I feel like I have to get up every few minutes to refill..I think more people should choose water over soda and they should be encouraging it as well! Just my opinion..what do you think?
Well the whole reason my mom came was to bring up my dog Bo from home. We’re dog sitting for the next couple days until we bring him to her friends house. They are out of town until tomorrow night but have a golden retriever so Bo won’t be lonely during the day. My mom is flying up to NC and then she and my step-dad will be driving through to get him next Monday.
Anyways, all that to say that we are bringing him to the local art festival right now and then headed to a pumpkin patch. It’s our first time carving pumpkins together, including unmarried dating time. Oh and this pumpkin carving adventure is sponsored by mom..she treated us to our pumpkins!
