Leo cheers me up

DSC_0002.JPG

You know what Leo pictures mean..short post. He cheers me up though, maybe he will cheer you up too?

DSC_0006.JPG

He just got continually more depressed as I snapped away!

DSC_0007.JPG

I feel better already, thanks Leo! ;)

For dinner, I had a beer.

DSC_0011.JPG

Oh, and pizza too. ;)

DSC_0013.JPG

We bought some Italian five-grain dough and cut in half, per usual.

DSC_0020.JPG

Topped mine with some chopped pancetta, onions, mozzy, and a little truffle oil(Don’t worry, see the green!!). Mmmm! Can’t wait for leftovers at lunchtime. Yum!

I then picked up my good friend and former roomie, Mandy. She requested Jeremiah’s..okay fine, pull my arm!

I got the gelati which is vanilla ice cream with italian ice. I chose the pomegranate and sour apple italian ice. Yum!

IMG_0265.JPG

We then headed out to meet some friends and watch the Bachelor. Drama, drama, drama. Those girls are crazy!

I may also have had a small piece of brownie or two. The sweet tooth reared it’s ugly head tonight! :)

I am off to bed.

Hopefully, I will be announcing my new site debuting tomorrow!! Still have to tweak a little. So excited to unveil it to you all!

Have a goodnight!

Vlog numero uno!

So, I am excited to say that I made my first vlog today! Okay, barely. It’s boring, and proves I am sort of a geek but hopefully you get a little chuckle out of it. I have wanted to do one for a while so at the end of this post will be the video! :)

I was up bright and early to babysit a little before heading home today.

DSC_0001.JPG

I fueled up with some warm cinnamon heart to heart, plain Oikos, banana and dark honey. As well as a mug of coffee. Mmm.

DSC_0008.JPG

When I got home I prepared a to-go lunch so I could get on the road. Enter: whole wheat wraps.

DSC_0012.JPG

I wrapped up a large handful of spinach, a string cheese, a spicy black bean burger, a blue corn chip for crunch, and some ketchup!

Mmmm..messy though. I wrapped it in parchment paper and snipped one end for easy tear-away access. I also snacked on some unpictured roasted chickpeas and pirate’s booty. I had to tie the bag off to keep from unnecessary snacking out of boredom(*coughcough* see video below).

We decided a relaxed night in was called for so we ordered pizza and drank some wine. We ordered a brick oven pizza with half-eggplant half-meatball.

Guess you can guess what slices I had?

DSC_0017.JPG

I had 1 1/2 eggplant slices and two helpings of salad with avocado, tomatoes and a vinaigrette.

DSC_0019.JPG

Dessert was raspberry sherbet I found in my mom’s freezer. Mmm..a small, perfect amount!

DSC_0023.JPG

Sorry for the brief post, I am exhausted and I have FIVE miles to run tomorrow! Praying the rain holds off until after I get done. Can’t wait!

Without further ado..my first vlog!

Ha, on THAT note..

Goooodnight!

FOUR

…miles that is!

DSC_0018.JPG

Yay, four! It’s not a PDR for me, but I haven’t run that far in a long time. I walked a bit too, I still can’t run four miles straight without stopping, but there’s no shame in that!

Leo was ecstatic for me.

DSC_0001.JPG

DSC_0002.JPG

Apparently Leo wants to eat my shoe laces, of course this was before the four mile run.

DSC_0006.JPG

He’s such a little bear.

For lunch(I ate breakfast very late)..

DSC_0034.JPG

This was also post-run. Again, I had NO groceries and very little appetite. My sister had gotten the polly-o twist string cheese’s when she was here last so I still have a few in my fridge. I ate it along with three big carrots and Sabra roasted red pepper hummus. Yum!

I then snacked on a large handful of unpictured Wonderful pistachios.

Adam and I were going to go on a date tonight but I called him and suggested we work on cleaning and grocery shopping.

He headed to the grocery store with our list and I stayed to clean.

Before(except for the eggs)   After
DSC_0039.JPGDSC_0044.JPG

Lots of fresh produce, two containers of strawberries.(it’s strawberry season, YAY!!!)

DSC_0041.JPG

Apples, nectarines, bananas. I love fresh fruit!

Dinner was homemade pizza and a glass of vino.

DSC_0045.JPG

Greg Norman wine, it’s a Cabernet-Merlot blend. SO good! It came highly recommended and did not disappoint.

Spinach, broccoli and mozzarella pizza with garlic and a little truffle oil. SO yummy! I ate all but a large corner.

DSC_0046.JPG

Dessert was a cookie and milk.

DSC_0052.JPG

The edgie had freezer taste :( so disappointing. I think if I heated it up it would taste better but one cookie and some fat free milk was all I needed!

I am off to bed, I took melatonin(a natural sleep aid) to help me get to bed at a normal hour tonight since I just want to get to bed at a decent time and wake up earlier then I have been. I think I would feel a lot better and more productive!

Good night friends!

Sunday Date Night

Adam and I had a fun little spontaneous date night tonight. We both needed it for sure!

Before I get to that, let’s back up to lunch.

I had some leftover salad tossed with some Annie’s Goddess dressing. I also had one mini-whole wheat pita with some roasted red pepper hummus. I love Sabra’s roasted red pepper hummus!

DSC_0028.JPG

I also had a couple cookies that I brought home from the cookie extravaganza yesterday.

DSC_0030.JPG

I ate a lemon & ricotta cookie and a coconut macaroon. Yumm!

We hung out at home and then headed out for our date night!

First stop: The Wine Room at Park Avenue.

photo.jpg

photo.jpg

First you buy a card, and then add money to it as you want. They have over 150 wines to taste and you can choose the size of your tasting as you go. It’s self-serve and it’s really fun to just go around and try what you want! We already had a card so we added some money and went for some tastings. Then we headed to Urban Flats.

DSC_0031.JPG

We split a salad of caramelized onions, walnuts, blue cheese and a balsamic vinaigrette(on the side). Yum! At first they forgot the pears but they made the salad for me, glad I asked for some. :)

We ordered three flat breads to share. Well, I shared two he was on his own with the steak & portobello.

DSC_0032.JPG
To the right is the roasted vegetable flat bread.
This is the FIG and prosciutto flat bread with blue cheese and mozzarella. SO amazingly good! Sweet, savory. Delicious!!

DSC_0033.JPG

This is Adam’s steak and portobello pizza!

DSC_0034.JPG

I ate this plate..

DSC_0035.JPG

..plus another slice of roasted veggie and the fig and prosciutto.

When we got home, I ate some cookies. Excuse the paper towel, I just wanted my sweets fast! ;)

I only ate one of the lemon ricotta cookies and the coconut-meringue-macaroon cookie. Yummy!

DSC_0037.JPG

I had a great night with Adam, and I am SO ready for bed now!!

:) Goodnight!

Confessions of an off-week.

After breakfast we got ready and headed out to Millenia Mall to meet up with Adam’s family. His brother and sister-in-law are in town from Tallahassee so we had lunch with them at BJ’s Restaurant & Brewhouse. I stayed away from ordering beer and opted for good ole H2O with lemon.

Adam and I shared a house salad with balsamic vinaigrette.

DSC_0028.JPG

I ate most of this margherita flat bread pizza which was actually an appetizer. It was pretty tasty.

DSC_0029.JPG

We did a little Christmas shopping and then headed to our friend’s house to babysit their daughter for them.

A couple hours into babysitting, I knew dinner would still be a couple hours off and I was starting to get hungry! I found they had organic whole wheat cereal that resembled Cheerios. I had half a mug full with some organic whole milk that they had as well.

DSC_0101.JPG

We took her to the park to play.

DSC_0051.JPG

Once she went to bed Adam picked up some take-out from Seito sushi.

Here was our spread..

DSC_0108.JPG

I ended up eating about 5 pieces of veggie tempura, although I took most of the breading off a few of them. It was really thick! I love tempura sweet potato though. Yum!

I also had a “Crunchy Tuna Roll” which had just avocado and tuna. Talk about healthy fats! It also had a little bit of tempura flakes sprinkled on top.

I had a bit of miso soup and we shared some edamame as well. Yum!

I also had some grapes for dessert.

DSC_0109.JPG

So, this has definitely been an off-week. I feel like once you get into a few bad habit days it’s so easy to make worse decisions nutritionally and fitness wise as you go along. I got so caught up in my last week of internship and then going to New York and it’s set me back into bad habits. Hard to admit, but I think it happens to the best of us. It seems that this time of year it’s always easier to make worse decisions. I am pulling myself together and getting back into better habits. I know once I get back in the swing of things it will be so much easier to stick with it. To help me focus, I am making a list of things I would like to work on.

-Start training and follow the half-marathon training plan (unless really sick/injured)

-Drink 64oz. of water a day. Less coffee/alcohol more water/tea.

-Make sure to get more fruits/veggies in my diet.

-GET SLEEP!!!! This is a biggie for me. I get very distracted usually and ignore the fact that I am tired and should at least go read in bed. I love reading in bed! So I am going for at least 8 hours a night. I also want to wake up no later then 7:30-8. That math means bed by 11 most nights. Weekends are going to be more difficult but I will still get 8 hours.

-Less eating out. I am sick of eating out to be honest, when weeks like this hit where we eat out a lot I feel like I need a break! It will also will help us save money.

-Snack smart and make sure to eat something(healthy)every 2-3 hours to keep from feeling hungry.

-Eat breakfast. (another biggie)

I will add to that list as I need to but these are my goals. I don’t think there’s any reason to wait until January 1st to set healthier goals. :)

Now I am off to bed, good night friends!

Two more days!

Only two more days left of my internship! YAY!! Cannot wait to be done. :)

Breakfast was rushed this morning, again. I had a little more time to get ready for my seminar but boy was I SUPER tired! Apparently I have decided to give up on getting 8 hours this week. I know it’s bad to say, but because I don’t have to teach I am more okay with not getting enough sleep as much as it stinks the next day. There’s just too much to do! I’ll be catching up on my zzzz’s after Friday. I hate getting less then 8. Less then 8 don’t feel so great! Oh well..

Breakfast ended up being a Kashi pumpkin pie bar (I am officially obsessed), some tazo awake tea, and a yogurt. All unpictured, I was in a rush and figure you all know what they look like by now so I’m sure you don’t mind.

DSC_0025.JPG

Too cute.

When I got home, I had a photoshoot with Leo..then I made lunch.

DSC_0036.JPG

For lunch I heated up a Morning Star spicy black bean burger topped with organic ketchup and spinach, frozen veggies, frozen broccoli and kale chips! Yummm!

DSC_0039.JPG

I swear there’s a burger under them there spinach leaves!

Along with a string cheese.

DSC_0024.JPG

Also, a glass of V8 fruit juice. Oh, and ketchup with hot sauce for dipping the kale chips!
DSC_0042.JPG

I also had a mug of ginger-green tea. After lunch and cleaning the house!

Tonight we had our small group and Joyce(who usually makes dinner) and her husband were out of town so we had pizza! :)

DSC_0043.JPG

Plus a yummy salad with toasted almond slivers, strawberries and a raspberry vinaigrette! Yummm!

I had another half a slice of pizza and another heaping scoop of that salad with extra strawberries. So yummy!

DSC_0045.JPG

..and a perfectly sized cupcake with chocolate frosting. Deeelish.

Today was super busy! I thought my seminar was three hours, found out this morning it was 3 1/2 which turned into almost 4 hours!! I didn’t really get a day off because once I got home I realized that the students got out of school 30 minutes later. Sort of a bummer. I rested for a little after lunch and then got right into cleaning our apartment until Adam got home, then it was right off to small group. Sort of a bummer I wasn’t more productive. Oh well, the house is now clean! I have two more days until I am freeeee! :)

In other news….

Things that make you say ohmm!

Hello friends! Just finishing up another day..I guess it’s okay because it means I am one more day closer to being done with my internship! I can’t believe I am graduating two weeks from Saturday. I just can’t wait to be LAZY and do what I have wanted to do..yoga, writing, reading, running. I have been doing all of those things but in shorter increments then I have wanted. It’ll be nice to have a week or two to relax and apply for jobs! :)

Before I get to my eats, Leo says hi!

DSC_0023.JPG

I swear we love on him constantly..he’s still depressed. Look at those eyes!

Adam scored major hubby points..
DSC_0026.JPG

While on the phone with him at the grocery store, I mentioned how the Publix I was at didn’t have my Annie’s Goddess dressing(heaven forbid!) I am officially obsessed with this dressing.

He had to stop and pick pumpkin up for me for the recipe I will be baking for Ashley’s vegan bake sale(baking tomorrow now!) I hope you all bid on some yummy baked goods!! :) Anyways..he picked me up a bottle of Annie’s without me asking or reminding him of what kind I liked. He’s so sweet!

DSC_0027.JPG

We were going to make pizza dough using this. We didn’t realize it was gluten and dairy free until we took it out of the cupboard but we trusted it would still taste good. Unfortunately the yeast was dead and did not rise. We had to make a quick trip before the gym to pick up some already made dough. Sadly, they were out of multi-grain dough. We used italian pizza dough instead.

DSC_0030.JPG

Pineapple pizza? Yessum!! :) :) I can’t help it if I know what I like.

DSC_0031.JPG

DSC_0032.JPG

For dessert I had some raspberry sherbet and semi-sweet chocolate chips. Sooo yummy.

DSC_0039.JPG

I was still hungry a bit later so I had this fiberfull applesauce.

DSC_0040.JPG

DSC_0041.JPG

My exciting announcement will have to wait until tomorrow. I don’t want to announce it and then run! So I will wait and announcement sometime this week. :)

I remembered that today is the last day to enter Stonyfield’s Oikos contest!

Here is my entry:

I decided to tell you why I need to say “Ohm!”

This last semester(okay, year) has been really tough for me. I have had to make it through long days in a job that my heart just wasn’t in, but was required for graduation. It’s been difficult and stressful. During the lunch breaks when I just want silence and time with my thoughts I hear frustration, stress and how difficult students have been. I am in an unpaid internship, not that money is everything, but it makes the experience even tougher. Thank goodness I discovered yoga this semester! While I was holding poses and working muscles I didn’t even know I had I still felt super relaxed. I remember calling my mom after my first power yoga class and telling her how my muscles would start to burn and yet I felt like I could fall asleep at the same time. It seemed all that stress, worry, and chaos melted away the instant I let out that “Ohmmm!” it’s one of the best feelings in the world. I left feeling light, happy and couldn’t peel the smile off my face. My personal discovery of yoga has changed my life for the better. I am so glad I get the opportunity to stop, take a deep breath and let out that “ohm” when I need to!

Make sure you head over to Stonyfield’s facebook page and add them! :) I tried making a recipe with Oikos, but I got way over my head! Remember the dreaded chicken pot pie?? I did my best! I felt like this really expresses my heart right now though and I am happy I could share it with you all. So thank you for reading!

I’m off to drink some tea, and head off to bed!

Goodnight everyone, and remember to let out that “ohmmm” when you need to! :)

It’s like Christmas before Thanksgiving!

Well, today was a little hectic. Sorry for only one post today. I suppose it is busy for most people, it is the day before Thanksgiving after all!

My morning started with a green monster..

IMG_1340.JPG

I drank about half, I didn’t have much of an appetite this morning! I actually had a group interview for a job and when my nerves are high, my appetite is way low.

My sister drove and Leo came along. After my interview we ran errands then headed home to pack up for our trip! When I got home, I was starving and I remembered that this was in my freezer..

IMG_1341.JPG
Yummm! It didn’t look as pretty, and I was starving so a photo didn’t happen but it was very good! It packed 16 grams of protein as well. I love Amy’s!

Thankfully, Adam got home early so we were able to pack and get on the road earlier then we thought. But first, we had to head to Super Target for a few essentials. We picked up items to make pies for tomorrow (yay baking!)and I make a mean apple pie.

I also had to pick up an early graduation present for myself from my mom..

IMG_0003.JPG

The Nikon D3000.

Okay okay okay, I know it seems EVERYONE is getting a DSLR. I suppose it’s true but honestly, I have wanted one for at least three years. My Dad was great and got me an SLR style point and shoot but I really felt like it was time for an upgrade. This isn’t a spur of the moment decision, it’s been years people..and I am SO excited. I was between this and the Canon for a while, but they seemed pretty even, and this one just felt perfect in my hands. It’s the smallest Nikon DSLR and is not heavy at all, it will be very easy to take with me places. My sister was so sweet and bought me an SDHC memory card as a graduation present. I even got this super cute camera bag as a gift for myself!

IMG_0005.JPG IMG_0006.JPG IMG_0007.JPG

IMG_0008.JPG

I couldn’t resist. I love it. I wanted a bag that I would want to carry around.

I had a glass of wine once we got to the hotel. Our suite is great! It’s designed for extended stay guests. Full kitchen with an oven and full sized refrigerator! Pretty nice, if we had everything we needed here we would just make the pies in the morning. Oh well, I would have taken more pictures of it but it was pretty messy by the time I got to it. We had a lot of stuff! Or maybe I had a lot of stuff? Oh well..better to over pack then under pack..right?

Dinner didn’t happen until 10:30! We ordered pizza and salads.

DSC_0022.JPG

These photos were with my old camera, the new one was still charging..

IMG_1344.JPG

I nursed this glass of wine along with another one after dinner..

IMG_1346.JPG

I requested veggies..I had these plus one more slice..(maybe even had some garlic butter)..

IMG_1348.JPG

Side salad with Italian dressing.

By this time, my camera had charged so I had some fun..

DSC_0009.JPG
DSC_0010.JPG
DSC_0012.JPG
I had a little fun, tomorrow I am only baking the pie and so I will have plenty of time to read and play with it..I have lots to learn. :) I know you may be rolling your eyes since it’s just one more person with a DSLR..but I am really excited about it. So yay!! :)
I wish you all a very happy, healthy and loving Thanksgiving. Remember all that you are thankful for tomorrow.
Some things I am thankful for:
-My husband
-My faith
-My parents
-My sister
-My stepdad
-My family
-My friends
-My health
-Our doggies
-The fact that I am finding my passion in life and my true calling.
-The fact that I am graduating in 3 1/2 weeks.
-I am truly thankful for this blog and for those of you who read it! Thank you, seriously, I am so thankful for you and your support!!
I would love to know, what are you thankful for this year??

A sweeter night..

Dinner was pizza and beer. Sometimes that’s all I need to cheer me up..of course, we don’t order in. We cook our pizza.

We bought dough at Publix for the quickest, easiest pizza. I requested my much beloved pineapple as a topping.

For our pizza, we picked fresh herbs from our “garden” we picked some thyme, greek oregano, and sweet basil. Chopped them up and sprinkled them on top..

IMG_1148.JPG

Some fresh mozzy, pineapple and herbs..

IMG_1151.JPG

A little EVOO crust..and WAH-LAH! :)

IMG_1154.JPG

I obviously don’t win for best shaped pizza, but it tasted darn good!

IMG_1158.JPG

I love Amber beers, and this is one of my faves..and it’s a light beer, so I feel better about it. ;)

IMG_1161.JPG

I ate all but one piece. I usually get full before this point, today was no exception but it’s so yummy and I can’t help myself. Oh well, I really don’t feel too bad about it, it was yummy and worth it.

IMG_1164.JPG

A little balsamic and EVOO to dip our crusts in. I really really love balsamic.

Okay, I have such amazing friends..case in point: I got a text tonight from Ashley telling me to look outside my door. I handed Adam the phone and opened the door to find an innocent Whole Foods bag sitting on my doorstep. Inside it held a sweet gift from an amazing friend..

IMG_1165.JPG IMG_1171.JPG

It definitely did make my day SO much better!! Ashley, you’re amazing thank you for making me smile and making me realize how great my friends are. You are wonderful, and you are going to KICK BUTT this weekend at that marathon!! You are ready, beautiful and capable! :) Thanks for sweetening up my day more then you know!

I am going to break into this right now, it’s a carrot cake cupcake from whole foods so it’s healthy..right? ;)

I hope you all have a goodnight! I am thanks to a wonderful husband, and incredible friends.

:)

Christmas in Cocoa!

Well, it’s now officially Christmas at the mall in Cocoa! I am on three hours of sleep right now so today is going to be interesting! Mall work goes from about 6PM-5AM. Luckily we were able to leave early since their are two “shifts”. We lasted until 2:45 and decided we would rather drive home awake, then push it and drive home exhausted.

I had a small plastic bag of Pirate’s booty right when we got to the mall as we were checking and replacing lights on the garland. I sipped on my 32 oz. of water as we worked as well. Mmmm H2O!

I also snacked on some monkey munch/puppy chow(whatever you choose to call it!):

IMG_0481.JPG

Yumm! My wonderful friend Ashley brought a huge bowl of this stuff for us to munch on. Chocolate, peanut buttery goodness!

I also snacked on a few pieces of halloween candy throughout the night, about 4 pieces throughout the night. It was a LONG night so it was a nice sugary pick me up.

When we first got there we had three hours of prep work which involves “fluffing” garland, finding which lights work and don’t and replacing the lights that don’t. My pictures came out blurry, but here are some from the work room..

IMG_0484.JPG

IMG_0485.JPG

Yep there’s a whole lotta Christmas going on..

At about 8:30 we broke for dinner which was GREAT because we were starving. The group decided on pizza from the Sbarro in the mall, my only request was that there be veggies on the pizza. Luckily, Adam was ordering so he made sure to get one and even more fortunately I had some other veggie lovers to share with!

IMG_0495.JPG

Plus another piece half the size of this one.

Okay it literally had just come out of the oven when we got it and my veggies tried to escape my ravenous attack. They lost the battle. I scooped the veggies back on and as unattractive as it looks it was yum! They had green peppers, a little brocc, red peppers, onion(notice an Italian theme with the colors?), and mushrooms! Mmmm! I wish their were more veggies on the pizza but it was better then having no veggies at all!

IMG_0493.JPG

I brought some POM tea for a pick me up with dinner. I have never tried POM tea but it was yummy! I bought two of these during a sale at Publix so I have another yummy one waiting in the fridge for me. I loved the fruity green tea taste, it was a nice treat.

IMG_0496.JPG

I also hated the pizza..obviously..

Throughout the night we prepared garland to hang..literally all night! Thank goodness though, the time flew by so fast. I literally couldn’t believe how fast time was passing by. At around 11:30 we hit a wall though and my friend Gayle I were pretty much garland buddies the whole night and we needed a coffee break. The only place to really get coffee that late(the DD wasn’t 24 hours..sad) was 7-eleven. We grabbed our friend Andy and drove down the road and made a coffee run. I ended up drinking an unpictured vanilla iced coffee. It was SUPER sweet! I’m not used to drinks that sweet, but it did the job.

Then during break around 1:45 I dug into this and shared with Adam:

IMG_0500.JPG

He was really excited about this flavor, so was I! It was yummy with a very subtle sweetness. You would expect a little more tartness from a pineapple yogurt but it had just enough. It wasn’t my favorite flavor so far, I liked it..but Adam LOVED it!

We decided to head out at 2:45 since it was just us two driving home and we didn’t want to wait until we were super tired to drive home. Better safe then sorry, right? So we headed home. Luckily I think the coffee took 3 hours to kick in because we were talking the whole way home!

It was my first night home alone in our apartment all night, I ended up turning all the lights on and watching the recorded episode of SNL with Taylor Swift. It was one of the funnier SNL’s I have seen in a while! I think she did great, I especially loved “The Monologue Song”.

Long story longer, I couldn’t fall asleep. I was up until 6 AM..the sun was rising! I fell asleep watching Friends on my laptop. I woke up bright and early at 9:45 and couldn’t fall back asleep. At least I will be able to fall asleep early tonight?

For breakfast I had another breakfast cookie..yummm! I was sadly..and I mean sadly..out of bananas! It was still good but I missed the nanner yummyness! I added half a cup of 0% plain chobani and some more mushy strawberries.

IMG_0502.JPG

Messy, yummy breakfast!

IMG_0506.JPG

I then moved over to the coffee station, especially since..if you look at the clock..I had been awake 4 hours prior. Mmm coffee..

IMG_0511.JPG

I am hoping to get out of the house today..Adam may not be as excited about that he was up until 6 as well, but stayed in Cocoa..and was running around all night. 12 hours! We shall see..wish me luck? ;)

So that was a random job, but those decorations have to get up there somehow. ;) What’s the most random job you’ve ever done?

Katy

P.S.- I just updated my about me section! Go check it out! :)

P.P.S. – Don’t forget to enter the giveaway! You have two days to enter! :)
