Bananas Foster Oatmeal
Yesterday I decided to take the day off, I drove home and kind of had a rough day overall. Today is a MUCH better day and I am very grateful for that!

Now onto today!
This morning started off with a two mile run! Love getting it done early. It was a good, easy run!
When I got home, I made yummy oats for Adam and I. This recipe was inspired by Katie’s banana-brulee oats!
I call it-
Banana’s Foster Oats
I made our oats(I made too small a batch for both of us so this is a single serving recipe):
-1/2 Cup oats
-1 Cup Light vanilla soymilk (makes all the difference to me)
-Pinch of salt
-Couple drops of vanilla
Then I “melted” the bananas. Katie, you are a genius! Each time I opened the microwave to check the bananas I was met with the caramelized banana smell that amazingly glorious! Banana wantons, banana’s foster, and anything with cooked bananas and ice cream I love. This was brilliant and I have never thought of it before!

I scooped the oats into the bowl and topped with the melted bananas in the middle then sprinkled a brown-sugar caramel cookie(as I am calling it for the moment) I am still working on the recipe but I baked it yesterday and then broke it up and placed it in a container until this morning. Then sprinkled on top for a crunchy, caramel, brown sugary and banana bite in every spoonful which gave it the brown sugar, butter taste I love about banana’s foster! It was pretty fantastic, considering I am just starting to like oatmeal and I ate a huge bowl!

Lunch was pretty random as my dinner was last night(see above photos) but so yummy!

I heated up some frozen brussels sprouts in the microwave. I officially love brussels sprouts in every form. Mmmm! A couple of carrots, string cheese and a piece of cornbread my mom sent home with me from Whole Foods, they have fantasticly sweet cornbread. Love it! That looks like a ton of butter, I promise it’s not!
I am working on my new site and a freelance article for the rest of the day, Adam is at a few meetings right now and then we will be able to go work at a coffee shop together. I should be able to debut the new site either by tomorrow or Wednesday! YAY! I am SO beyond excited to show you all and tell you the new name.

Home, sweet home.
I am still home in Fort Lauderdale, guess I just love it that much!
I really do love being home with my mom, we’re super close.
This morning started out very quickly, I slept until almost 8:30(I had to stay up and finish New Moon!) I then quickly got dressed for my run and then we took Leo to the groomers! We dropped him off for the day and then headed to a park nearby.
I snacked on this Kashi bar for a mini-breakkie.

It stinks not having something like a Garmin around because the trail on the park was really hard to follow and I never knew exactly how far I was going. I decided to use time as my witness.
I definitely did ~5 miles. Four miles takes me about 55 minutes, and I ran a total of 1 hr. 15 minutes with a long warm-up and cool-down. I may have done a little more then five but I’m not sure.
It wasn’t the easiest run, my legs felt SO heavy the whole time. It was also warm!! Not too bad with the breeze but still warmer then I have been running in. Still, I completed five miles!! YAY!!
I forgot to take a picture post five, but I will on my next five miler, Wednesday.
We spotted a Jamba Juice right by the park and decided before we even got the park that post-run fuel would find us there! My mom walked and jogged a bit and I ran! We met up at the car after and headed over. I worked at Jamba Juice summer of my Sophomore year, it’s my absolutely favorite smoothie store and sadly there’s none in Orlando. Boo! I took advantage and was happy to see they had…
OATMEAL!!!! Perfect.

They use organic steel-cut oats, cook it in soymilk and you can pick a fruit topping and it comes with brown sugar CRUMBLES! These were crumbled straight from heaven. Seriously, you know I am just getting used to liking oatmeal and I ate this so quick! The crumbles were like crunchy candy bits in my oatmeal and of course I cannot have oats without some banana. YUM!

I had a “Sunrise Strawberry” on the side. My fave smoothie here, I try and recreate this all the time at home. I had this every shift at work. It’s bananas, strawberries, non-fat yogurt and soymilk. That’s it! It’s very yogurty and yummy.

Perfect post five-mile meal! I am so tempted to get this combo on the way home tomorrow for lunch. I think I will!

After we ran home, showered and got ready in record speed we got Bo and brought him to the vet. Bo is our golden retriever/chow. We used to be best buds, but then I moved away to college.
He doesn’t usually where shirts, but he has some rough areas he’s been scratching which is why he ended up at the vets in the first place.

He was scared and spent most the time hiding behind our legs, his usual hiding place.

We picked up my grandma and headed to my favorite place, Whole Foods! I love the Ft.Lauderdale Whole Foods, so big! There’s only one big WF in Orlando, the one near me is tiny!
I hit the hot bar up sooo quick.
Spring mix salad with carrot and chickpeas drizzled with some Annie’s Goddess dressing, teriyaki tofu/rice mix, a little couscous, two baked plaintains, and a roasted corn, squash and peppers mix.

Yum..my favorite lunch spot!
Washed down with a yummy Izze.

We picked up handsome Leo at the groomers then spent some time with my grandfather who is sick. He looks a lot better then he did at Christmas. PTL! I just hope he gets to watch the Daytona race in a couple of weeks, he loves cars and racing.
I decided to stay here tonight instead of driving home. I have had a headache on and off all day and I was exhausted.
This meant, another wonderful home cooked meal!(thanks mom!)
A sausage/beef/turkey burger, yes ALL three, on a whole wheat bun. So yummy! A swiss chard, chopped tomatoes, garlic, shallots sauteed in some EVOO and salt & pepper mix, and mashed potatoes! Mmmm..so comforting and yummy. Love. My mom has blogger approved plates.

We went to run an errand and stopped for a decadent dessert. I LOVE Dairy Queen!!
I got a small blizzard with butterfinger pieces, be still my heart!
Truly decadent, a wonderful treat!

It’s been a wonderful day of eats. My stomach is happy! I am now going to ice my knees a little late since they are bugging me. :-\ I can tell I definitely did five miles. This is another weekly PDR for me! YAY!! I ran eleven miles this past week. Makes me happy.
I am off to start a new book and sip on some tea.

Christmas Party Time.
After babysitting ended so late last night, we decided to sleep in. Unfortunately, having a dog (or dogs) is sort of like having children and sometimes they are not going to let you sleep. I walked Leo super early this morning, and then fell asleep on the couch so he could sleep next to me. Adam is completely against dogs in the bed. That’s all I am going to say about that. Love you babe!
Adam woke me up and I went back into bed and passed out for another couple hours. I woke up and knew what I wanted for breakfast.

I’ve been bitten by the oat bug. This time I used mostly the same mix as yesterday:
-Oats
-Soymilk and water
-1/2 scoop protein powder
-One banana (I can’t have oats with a banana)
-Vanilla
-Stevia
Once it all started to combine I added some frozen berries. Big mistake. It turned the consistency all grainy, but I still ate it all. I am guessing the liquid from the frozen berries didn’t mix well with something. I am still experimenting.
Right after breakfast, we FINALLY decorated our Christmas tree!
I LOVE our star!! We had searched a few places for one and Target had this one. I absolutely love it, it looks like twigs and holly!

We decorated the tree at first with multi-colored lights but they did not match our star at all. Luckily they were free lights, and I mentioned that I would much prefer white. This morning he turned the lights on and he had replaced them to white without me knowing! Good husband.
Here are some of our ornaments, we only have a few but our collection will grow..

This Jelly Belly ornament we got on our honeymoon. My aunt used to live near wine country and she lived so close to the JB factory. I knew it would be one place Adam would really enjoy(we watch Unwrapped all of the time). It was so fun! I will have to recap the honeymoon another time, but we picked this up there. The swing literally hangs on a branch. It’s Adam’s favorite.

We got this last year at Hallmark when the ornaments were on sale. It lights up as well and quotes lines from the movie, A Christmas Story.

If you didn’t know what movie this was from, go watch it! It’s my favorite Christmas movie. It’s not the holiday season without watching this movie!

We kept it really simple with the solid ornaments. I really love it. We also added candy canes for more decoration!
After we decorated we changed and headed to the gym. I ended up doing 30 minutes on the elliptical.
Later in the day I headed to a blogger Christmas party! Meghann invited us all to celebrate the holidays with good food and friends. It was at Sarah’s house, she was a wonderful hostess. (thanks Meghann and Sarah!!)

We all brought something. It was a pot-luck “linner” since it began at 3.
I brought the cookies next to the candle. I actually brought paper plates, bowls and utensils but I felt like I couldn’t arrive with something to eat. I guess that’s the foodie in me.
Okay it was only Pillsbury “simply” cookie dough that I had in the fridge. Hey, it was something! I had a coupon from the paper a few weeks ago and picked it up knowing I would need it sometime.


Ashley is beautiful! I also got to meet Katy for the first time. When you share a name that people usually tease for being spelt strangely (i.e-Catty) you bond.
Sweet Ryan let me try out her 35mm lens. I LOVED it!! I am currently deciding on a 50mm or 35mm.

I had a bowl of delicious 15-bean soup that Meghann made with some of Ashley’s quinoa on top.

Here is my dessert plate. Before you judge, I just wanted a small bite of everything. I honestly barely made a dent. Ask Adam, I asked him to take it away after I had a few bites.

Those wantons were DELICIOUS!! I want to say they had marshmallow and chocolate with peppermint. SO yummy! Meghann made pumpkin cornbread, and Kelly made Christmas cookies.

Ryan made raw cheesecake. Honestly it was phenomenal. It tasted like a coconut chocolate torte. It was so rich and creamy!
Adam and I also shared some hot apple cider which was delicious!

Leo came to hang out with the dogs! Of course, that means he hid from them most of the time. He stayed pretty close.
I loved meeting everyones “children” here’s Sam, Sarah’s dog.

We also played a “White Elephant” present exchange.

I was number 7. Out of 8!


Adam and I ended up with a bottle of wine!! Not too bad if I say so myself.

Leo stayed close and sat between Meghann and I. Spoiled puppy.


The gift I brought was a cute/silly one. I bought this piggy bank at Target. It was too cute, I couldn’t pass it up!


We headed home after a fun time and needed something fast and easy to make for dinner!

Enter: leftovers and veggies! I headed up some of the chicken enchilada from lunch the other day. Also headed up some extra chicken from dinner with Adam’s parents to bulk up the protein value. I split the enchilada in half and shred the extra chicken into the cheesy pile. I also cooked up some frozen veggies and cut some slices of the five grain bread I bought for dinner on Friday. I ended up stealing more of Adam’s veggies so that they filled half my plate. It was a free dinner!! Okay, not totally free. But making my Friday lunch stretch into three meals really made me happy.
For dessert, I had two of the cookies I brought to the party and a cold glass of organic 1% moo-milk. I usually get skim, but Adam ran into Publix and grabbed that instead.


One of my favorite desserts. Simply wonderful. Of course, I dunked. Who do you think I am? An amateur?
Tomorrow starts day one of training for the half-marathon. Okay, it’s a rest day. But still..here we goooo!
