Fun Things Coming in 2010
Isn’t it strange that we’re almost done with the first decade in the 21st century?! Crazy! I can’t wait to see what happens in the next ten, I have a pretty great feeling about the next decade.
After I posted I ran my 3-miler I had on the plan today on the treadmill. Then headed home to shower and get ready to get out of the house!
We are out of stock when it comes to food in our house, so we headed out for lunch! Having Adam home during the day is quite wonderful. I don’t feel so lonely!
We headed to one of my faves, Tijuana Flats.

We ordered our food and grabbed our array of hot sauces from their beautiful hot sauce bar.

I got four, the husband got five.
To eat, I ordered a chicken & bean burrito. “Power lite” which is low fat sour cream and low fat cheese.

My burrito came with onions, tomatoes and lettuce.
I was so ravenous I devoured this lunch. Nom nom nom.
It was a heavier meal, but all pretty good ingredients. I will just eat a lighter dinner.
After we ate, we headed next door to Barnie’s coffee shop where I ordered a green tea and I added a little honey to it.



I am so excited for the new year, I feel so many great things happening! Yay!
Mainly: A big announcement that I will announce sometime this week!
I can’t wait to tell you all, but you must be patient until then. No, I am not pregnant and no, I don’t have a book deal (I just started this blog..I’m not that good.
).
You will have to be patient!
As for now, it’s still 2009 and we are about to go blow the rest of our food budget of the year. It’s a measly amount, but we’ll make it stretch to Thursday..hopefully!

A Night With The Girls
So right after I posted I headed to the gym to get my two more miles in from my training plan.
I ran 2.00 miles in 25:30 with three minutes warm-up and cool down. Wednesday I have three miles on the plan that I will get in before we leave for home. I am SO excited to almost be heading home for Christmas!
Lunch was delicious!! I decided to have a little fun with two clementines as I waited for last nights pizza leftovers to heat up.

For lunch I had two pieces of the roasted veggie flatbread and three pieces of the blue cheese, mozzarella and fig pizza. Delish!

After I showered and got ready I headed out for more Christmas shopping. Plus this little beauty.

Enter my new favorite non-caffeinated Starbuck’s drink: The Caramel Apple Spice. It’s basically a very yummy apple cider with a little bit of whipped cream and a caramel drizzle on top. To die for, it’s so delicious. I enjoyed every last sip of my tall sized winter drink.
For dinner I was craving two things: A salad and sweet potato.

Wish granted!! I had a sweet potato with some smart balance and some S&P along with a salad of spinach greens, carrots, blue cheese crumbles and some goddess dressing. Yum!

I had a great time tonight catching up with some of best girlfriends! I headed over to my friend Nikki’s place to hang out with some of my friends. Nikki just had a beautiful baby boy and it was fun just enjoying being around him and relaxing with the girls. I received a chocolate cake from my mother-in-law so I brought it over to enjoy with the girls. I had one piece at the beginning of the night and went back for another. They were small pieces, but once that sweet tooth starts going it’s hard to stop!

There will be a note placed on it tomorrow “TAKE TO WORK”, usually when we have a lot of sweets leftover we send it to his work. I did enjoy indulging in a some of this though. Publix makes amazing chocolate cake. This was smaller then looks but it’s very sweet, you don’t need much!
I was starving when I got home still, so I made two egg whites to try and get some more protein in.

I know I haven’t run too many miles yet, but I can already tell my appetite is growing. That’s what I love/hate about working out, you know your metabolism is working harder but it also makes you hungrier! I just want to snack! Oy..it’s all about moderation. Which has been hard lately. ‘Tis the season? :-\
I am off to bed, busy day tomorrow including my first photo shoot ever!! Wish I had a better lens, but it will be fun. I am doing it as a favor for a friend so it will be fun and relaxed. Plus I know the last thing on my Christmas list for Adam and then wrapping! Tomorrow is our last full day in town. It’s almost time to go home! Yay!!

So it begins!
Good morning! I am not feeling super chipper this morning. I slept absolutely awful last night! You know when you remember something you forgot you had to do and then that leads to worrying about other things. Oy, I was in bed at a great time, read some Twilight (I am trying to figuring out what all the fuss is about
, and closed my eyes only to have that nervous feeling in my tummy and continued to toss and turn for at least half an hour. Then woke up and couldn’t fall back asleep. Over silly things! Oh well. I am currently sipping on an (unpictured) mug of Awake tea hoping to feel human any second now.
This morning for breakfast I ate some Kashi Heart to Heart and GoLean Crunch! I love this combo. I just love plain ole cereal! I really do.

Had with it a beautiful little clemmie.

I am making my way through that huge box I got. I love these!
I am about to bake up Lindsey’s vegan pumpkin chocolate chip bread (recipe here) because someone bid on it for Ashley’s bake sale!
Then I am going for a 2 mile run. I thought it was a rest day, but since I moved my longer run from Sunday to Saturday today is a run day!
Actually, today is my first day officially training for the half! I am planning on running the ING Georgia half-marathon on March 21st.
I think Sunday will be my rest day which works better for my schedule. I am probably going to run on the dreadmill because I am so used to running on it, and today is the last warm day until later this week so I will use those two other running days to run outside. I am trying to ease my body into running outside, I have bad knees so easing into training is going to be important. I know it’s going to be hard but I can’t wait to get into longer distances. Adam is going to get his old rollerblades from his parents house so he can go with me on my longer runs!
I am currently writing up a Christmas list and they definitely include some running essentials. It only took a 5k to get me hooked!
I am nervous/excited but I am SO glad to have you guys and this blog to help keep me motivated.
Well, I’m off to finish my tea and get started on my to-dos!

Recipe Fail
Okay so I must admit this was my first attempt at making my own recipe..from scratch. I did a little research but obviously not the right kind because it was a fail. I suppose not a complete failure since it was edible and not too bad tasting..but it didn’t quite turn out. This was my attempt at making a healthier chicken pot pie..

Yep that’s what it should like after you eat it, and see it coming back the other way. Gross. I was trying to use yogurt and it coagulated. I think I would need to heat it up slowly? Any thoughts?
I added a little smart balance and flour and it thickened up. I was getting a little flustered trying to figure all of this out..but I pressed on. Imagine those people who have already lost the game but keep playing to hang on to their dignity…that was me. Good thing this is a healthy living blog and not just a food blog. This is why I am more of a baker!
Lessons learned:
Practice makes perfect, and I need to do more research!
Done and done. I will not give up.

Snacked on some of the baked dough. Yum pastry dough..

At least it looked pretty good! It didn’t taste too bad.

I munched on this waiting for Adam to get home.

I had made a pot of half-caf coffee earlier and drank half of the hot mug, and used the rest to make an iced coffee.
I ate one small scoop of the failed pot pie and it filled me up. I had one sip of this..

..before realizing I would rather run then finish it. We headed to the gym and I ran for 40 minutes, mostly an easy pace but I ran 3.02 miles!
I barely made a dent in this glass at all. Sad..but true!
I had dessert afterwards, some yummy coconut cookie dough ice cream!

Looks like a large bowl, yes?

Nope, that probably equaled a scoop and a half!
I’m a huge fan of using smaller plates and bowls! It’ll be one of my tricks for not overdoing it on Thanksgiving.
Another note, I realize I have been eating pretty heavy things. It’s important to remember balance this time of year. I plan on eating lighter the days before and after Thanksgiving to balance out the calorie overload that will be inevitable Thursday. I am just writing down this goal since writing it(especially on the blog) really helps me to follow through!
I’m off to sip my nighttime tea, and read Julie & Julia in bed. Night friends!

Six months with my new last name.
So today, we celebrate our six month-a-versary. I know it’s not an “anniversary” until one year, but it’s fun to celebrate each mini-milestone until the big first year celebration! We are off to one of my favorite restaurants..Seasons 52! Can’t wait, the food will be phenom and so will the company. It’s too bad we can’t go back to Napa to celebrate our half-year celebration!
For breakfast this morning I made yet another breakfast cookie ala Fitnessista. This time with the pears from last night’s salad, some frozen blueberries and strawberries. I microwaved the fruit since I forgot to defrost them in the fridge last night..
- Organic granola
- Chia seeds
- Organic flax seeds
- Roasted almonds
- Dried Goji berries
- Dried kiwi
- Dried mango
- Dried strawberries
- Organic pomegranate
- Lots of LOVE<–I promise that’s on the ingredients list..
Super yummy..it’s crunchy, chewy, sweet and nutty! I had a small bowl as a pre-workout snack..

So amazingly good, It may not last long.
Well we’re off to dinner! I’ll recap later tonight.

Pumpkin Pros!
Welp, that was a fun night of pumpkiness! Before I talk about the pumpkin carving let’s back up..
For pre-workout fuel I ate a yummy mix of almond butter and Honeycrisp apples. I love Honeycrisp apples..and it seems they love us too..

Note to everyone..that HUGE jar of MaraNatha almond butter..only 6 bucks at Costco! Not kidding..
After that I headed to our apartment gym which leaves much to be desired. Oh well, it’s free! I had just taken a week off because I got hit bad with a cold when the cold front came through a week or so ago. I decided to keep it easy today just to be safe and I did thirty minutes on the elliptical. I was going to do abs but I pushed myself hard on the elliptical and did not feel great after. Once my stomach settled I had a smoothie:

This one had about a cup of spinach, four frozen whole strawberries, one banana, frozen mango, OJ, almond milk, flax, AMAZING GRASS and some POM juice. I wouldn’t call this a green monster, I can only put so much spinach into a magic bullet cup. One day I will own a VitaMix..one day..
Not as much green as it looked..swampy..
But yuuhhh-ummmm!
Dinner was mainly made by the hubs! He’s great..and can cook! His nickname in college was “Chef Adam” oh yes, I chose well!
Pork was on sale so we had some of that marinated in a yummy asian marinade we threw together (soy, teriyaki, garlic, hoison, and a little light agave)along with brown rice and..as predictable as it is..more BS!! I mean..brussel sprouts! YAY! I mean YUMMMMM!

Then we got to work! I will show you how it went..in pictures! I will add commentary where needed..

Mm yeah the big one was mine..I don’t know why I chose a heffer of a gourd..the hubs chose the one next to it first.
Mine definitely owns his.








I made a fat cat..wondering what I should name her..any suggestions?
Adam made the skull..overall I think we are pretty awesome at pumpkin carving. Or just had some awesome patterns to follow! I think it’s more the latter.
As a reward for all the hardwork, I treated myself to some pumpkin pie ice cream. Perfect end to a fun night!


Now I MUST head off to bed. I need to work on getting eight hours of sleep. Caitlin’s post really convicted me that I really need to work on getting eight hours again! This 6 1/2-7 hours is NOT cutting it at work and not cutting it for my health and well-being!
Well I am off to sip on some tea and head to bed.

Mondays don’t look good on me.
Hello new friends, and old friends! I just want to say I have such amazing friends I just got done reading the sweetest post by Lindsey. It really is funny how we can seem to get out of touch and then right back into touch. I think God just really wants us to stay friends and I am a-okay with that! She’s one of the sweetest people I know! Ahh..it just left me with warm fuzzies! So did all of your wonderful comments! Thank you SO much for your warm welcome. It’s so encouraging!
Onto today..
As I peeled myself out of bed at 6:20 (which only gave me an hour to wake up, get dressed and out the door) all I could muster was a headshake as the hubs asked me if I wanted tea or coffee. I wanted to say tea but my body was screaming “COFFEE YOU FOOL!” so I listened. I poured myself a cup with the last of my organic creamer and half a packet of Sun Crystals. Mmmm Joe, you helped me through another day.

For breakfast I had what was left of a couple huge pumpkin pancakes leftover from a couple mornings ago..and a tablespoon of almond butter to add a little more substance to this.

It may not look pretty AT ALL but it heated up quite nicely and I am sensing the need to form a recipe for whole wheat pumpkin pancakes and freezing some because it was so warm and comforting this Monday morning!
For lunch I packed myself some baby carrots, a small serving of Tribe hummus(from Costco..LOVE these), a baggie of the booty, some yummy harvest apple/pomegranate apple sauce, and a chocolate milk to add some more protein to this lunch. Which was a good plan..

I don’t normally pack a lunch like this so it was good that I packed the CM because I certainly needed it! I usually can’t each a huge lunch because I am in the middle of teaching the first graders who can make you want to pull your hair out at times. I find that I mostly need to fuel up and sit and rest for the 30 minutes I get. There was actually more hummus then I thought, it bulked up more when stirred. I should have brought some pita to dip in as well..note to self for later!
Okay I must mention that the weather lady just said that tomorrow is going to WARMER..seriously? WARMER? Helloooooo Florida it’s Falllllll EVERYWHERE else in the country..get with the program!! I apologize for the rant..but this is getting ridiculous. Last weekend was such a tease. I’m sorry but right now..at 4..it’s 90 degrees…and it’s getting warmer. Oy..but alas, the 10-day report says next Tuesday it gets down to 82. That would be Fall in Florida folks. I am super ready for 4 seasons..or at least 3!
Okay the pumpkin massacre carving will commence in a few hours and I will take pictures to prove it!
Oh my..my stomach is hating me right now. I need to work on having a snack for me on the way home. Must fuel up for my first workout since being sick with the worst cold ever! Probably a light workout today to ease back into it. See..I wish for cold weather but whenever the weather drops suddenly I either get sick or AWFUL allergies. Oh well, it’s worth it to be able to wear cute sweaters, scarves and boots right?? ACHOOOOOOO!
