A Sunday Full of Friends
Sundays should be a day of rest, but today it was super busy! A great kind of busy though.
We headed to a different church today because Marko, our great friend from Italy, was in town.
On our way to church, we stopped by Dunkin Donuts for a quick breakfast since we still haven’t gone grocery shopping yet!
Adam asked for whole wheat a few times. Apparently that means plain bagel.
I ate 3/4 of one slice on the way to church and ate the rest later.

Along with a small iced coffee skim & sugar!

After church, we went to hang out with friends for a bit and picked up Publix subs for everyone. Mmmm..

I had a Boars Head turkey on wheat bread with lettuce, green peppers, banana peppers, and tomatoes.
We headed home for just a little bit before heading to a get together with some of the people closest to Marko.
I snacked on pita chips & dip mostly, nothing worth taking a picture of.

This is Adam and I with Marko. He’s so great!
We got home around 10 and I still needed a substantial dinner. Super late dinner..but dinner.
I read off everything we had out loud into song form..
“What can we make with swiss miss, almond butter, larabars, cheese, gatorade, water, pasta noodles, tuuuunaaaa!”
I managed to find enough for a yummy, albeit unbalanced, dinner.
A sweet potato, some roasted-toasted chickpeas and a black bean burger.

Mmmm…

That hit the spot.
I didn’t run my four miles today
I HATE that..but to be honest, seeing so many friends in one day made it so worth it. I do need to start buckling down with my training though and I know it.
13.1 … I got my eye on you.
I will talk about my day a little more tomorrow, but Adam and I need some time together before he goes back to work for real tomorrow.
Goodnight friends!

New Cameras Are Fun
Today was fun..

..we added a new member to our family!
Adam sold his point-and-shoot and we needed a new one. I played with it a little, it will be nice to not ALWAYS have to lug around my DSLR. Although I am in love with my DSLR so I will probably still drag it around.
For lunch we headed to one of my favorite places..Greens & Grille! Mmm.
For lunch I chose the Fall salad..
SO good.

This salad has mixed greens, beets, peas, goat cheese, and roasted potatoes with a sherry thyme vinaigrette. Mmmm.

It’s a pretty gah-jiss salad if I may say.
It kept me full for a really long time too! I couldn’t even finish it all and I wasn’t hungry until later tonight.
Around seven I headed to my friend Jamie’s house. She’s in town from Italy where she is working in ministry in Florence. I hadn’t seen her for a few months so I was super excited to see her.
When I got there I got hungry but hadn’t gotten dinner. So I munched on snacks she had set out for us.

A little queso sort-of dip with spinach, salsa, and guacamole! I had some more chips and dip throughout the night.
I got hungry for real food and Jamie was sweet and let me have one of their Lean Cuisines. I would have taken a picture but it was just rice, beans and sauce and wasn’t pretty by any means.
It was good though and hit the spot. I also had a vanilla coke zero, I never really have soda so this was a treat. I love vanilla coke!
I am home now about to get to bed to read.
I will leave you with some pictures of Oviedo chickens..

We live close to Oviedo and drive through it often and they have chickens roaming around. Their are even bumper stickers that read “I break for Oviedo chickens.”
Their are strict laws protecting them. Unfortunately I have heard of the local Church’s chicken feeding them..well..you get it.

Have a goodnight!!

Us vs. The Cookie Dough
For lunch Adam surprised me with Annie..well, Annie’s organic mac and cheese.
What’s a classic partnership with mac and cheese? Well, hotdogs..duh!

I managed to make this a colorful meal by munching on carrots and half a bag of cooked spinach. Mmmm..
I cooked the spinach with a very small amount of EVOO, onion powder, garlic powder, and S&P.

We used the all-natural hotdogs I had scrounged for at the grocery store. I never read labels before but I got chills, hotdog is the notorious “stuff what you can into a meat product” item. The organic meat hotdogs were three times the price of regular and well, Adam is harder to convince on that subject and I couldn’t blame him. For a dollar more I found an all-natural hotdog that, while not organic, did not use hormones in their meat and had some pretty good stats. Lesson learned: READ LABELS!!! You can find decent alternatives to notoriously “bad” foods. Plus these hotdogs were DELICIOUS! Sooo good.
I was going to meet Adam at a coffee shop down the street but given the torrential downpour, I stayed home and rested. I did not sleep well last night AT ALL. I had read once that alcohol may keep you awake, I researched and found this on Women’s Health magazine’s website which told me that while alcohol makes you drowsy, it keeps you from falling into deeper levels of sleep. Hence, why I was tossing and turning all night! I only had a couple glasses of wine and a glass of prosecco but that’s more then I usually have at once and I think it was definitely a factor.
For dinner, we headed to Adam’s parents house. I spent time with my mother-in-law Kay, while Adam headed out to do some work.
I had a sweet potato with a little butter and S&P, green beans with slivered almonds, mushrooms, and steak. Steak isn’t my favorite, I ate about half of this. I love filet, but most steak is too fatty for me. I just had the texture. This was delicious, but I still only need a few bites of it.

When the boys headed out, Kay and I set out to conquer this:

My mom made this for them, it’s a cookie mix. She then hand wrote the recipe out.

She found this on Food Network’s website. There were a whole bunch of recipes, cute huh?
Problem is, they sort of described the directions wrong. Or they didn’t explain them enough. See, there is cocoa powder in the mix. Well, they called for Dutch-process cocoa powder which has baking powder included. Most people just use regular and I’m not sure if my mom did this but the first batch didn’t spread or rise AT ALL. They ended up being “Super Chunk Balls” which sound fun, but they were too crumbly. I googled(TGFG..thank goodness for Google) and found the reviews which told me that lots of people had the same issue. The dough was SO dry and dame out crumbly.
I added another egg and a splash of milk, if you’re a baker you know that you mix the wet first and the dry first and then usually combine in some order. So this was risky, but it was that or stick with what we had which were yummy, but missing something.
The second batch was SUPER tasty, even if they didn’t look too appetizing.

Kay and I then watched (500) Days Of Summer:

I LOVED this movie! The music, first of all, LOVE! I need this soundtrack. It’s also very different, which I really like but not done in a cheesy way at all. It reminded me of one of my favorite movies, Garden State. Although they were nothing alike, if that makes sense. Just very creative and funny. I love Zooey Deschanel too. I highly recommend this movie!
I am now typing from the dining room table. Aka the “office/dining room/flower holder” Adam bought me flowers, he apologized that they were carnations but there are some daisies in there. Either way, he bought me flowers and no matter what kind they are I am so thankful.

One of my goals is to do blog work here so that I am not always on the computer, which can happen when I blog from the couch, which I usually do. This will help me focus.
So yay.
Oh and tomorrow is my Dad’s birthday!
{Happy Birthday DAD!! <33 Love you!}
Goodnight!

The Last of 2009
I always think it’s so strange to stop and think, “Wow, it will never be 2009 again!”, it always blows my mind a little.
For breakfast:

I know..snooze..but I needed something quick and yummy and cereal is the man for the job..if cereal is a dude.
For lunch, I wanted something light, since tonight we are going to be enjoying a four-course meal!

Salad with spring mix and spinach, chickpeas, a little bit of Italian dressing and two large carrots on the side.

Munch, munch, munch!
For a little saltiness, I microed two pieces of turkey bacon. Mmmm!

This post is coming late because after lunch we drove to our favorite coffee shop to find out it closed at 1 P.M. for NYE. Oh well, we stopped for Starbucks and then decided to head home. I caused us to detour when I realized I didn’t have a cute outfit for New Years Eve! Can’t have that now, can we?
I ended up on a cute pair of black skinny jeans(on sale at Target) and a cute black blazer which I have wanted for a while now. I am still deciding on an undershirt.
Tonight we are meeting up with my in-laws to head to Roy’s restaurant. I LOVE Roy’s! Adam and I went there for Valentine’s day last year, tonight is fixed menu with four courses. Pictures and a recap tomorrow morning, I am sure we wont be home until after midnight!
Yesterday, while cleaning, I took pictures of some things we got for christmas and wanted to share.

Anthro has my heart, check out these two cups and saucers we received from my mom. SO cute!! Perfect for the blog.
Good thing I got a gift card from there..

..it came in this little guy. He’s so cute/weird I had to take a picture.
Or two.

Besides the one library book..check out what I got. I am SO excited. Right now I am reading “New Moon” but after that…
Again, so excited. My “read more” goal will be a lot easier to accomplish. Thanks mom and Adam!
I am off to finish getting ready for the evenings festivities. See you all in 2010!!
Oh..and..BE SAFE!!
Au revoir, 2009!

A Monster of Green
Today, when noon hit, I decided I wasn’t quite hungry for lunch but I definitely needed a pick-me-up.

Enter: A monster of green.

In this delicious green monster I had.
-1 packet Pom/Mango Amazing meal
(I got a bunch of packets for Christmas.
)

-Mangoes
-Strawberries
-Ground Flax
-Soymilk
-Plain fat free yogurt
-One banana
The amazing meal is a bit chalky, but adding more mangoes made it delicious. It filled me up and definitely gave me the boost I needed!
For my actual lunch, when Adam got home a couple hours later, I had a smaller lunch thanks to my awesome GM.

I had two small whole wheat pitas dipped in some Sabra’s roasted red pepper hummus and banana. Perfect and yummy. It’s also helping us keep to our “eating what we have” goal.
A couple hours later, after working on the new site, we got ready to head out for my three-miler that was on the plan. I got to try out my new SpiBelt (thank you, Adam Santa!)

The lighting wasn’t great, but it’s okay..I had my belt!

I was so excited, I had to dance.

Okay Adam, no more pictures!

My three miles went well, Adam ran with me a bit but mostly just walked when I walked. Gosh, I hope this gets easier!
I noticed I felt stronger on my run, but still it’s baby steps! I can’t wait until I can reach 6 miles, let alone 10! I can’t wait to conquer longer distances!
Call me crazy.
I really liked the SpiBelt, It held my phone in place wonderfully as I ran and I didn’t have to mess or fuss with it once which left me to focus on the running at hand. I am happy with it. The dancing may continue!
You’re catching me at the beginning of my racing career, I have run on and off for the last few years but I am getting serious about it now.
When I got back, I fueled the best way I know how right after the holidays.

I iced while munching on a small glass of fat-free organic milk and a gingerbread leg.

I spent some time cleaning and trying to organize our Christmas presents, I will show some spotlights tomorrow!
Then, we made dinner.

A small plate of Barilla Plus farfalle with some olive oil and garlic tomato sauce. Yum!
I made us salads, but sadly I was out of my goddess dressing!
I decided to make my own dressing by mixing:
-About a tablespoon dijon
-Balsamic vinegar
-White wine vinegar
-Olive oil
-S&P to taste
-Whisk everything but the olive oil until the very end and then slowly add the oil as you whisk vigorously. Then pour over salad and enjoy!

Mmm..for dessert we heated up these small sweet waffles from Whole Foods and drizzled a little Nutella on top.
This is what happens when you leave your dessert alone with a pastry chef. Thanks Adam.

I also had half of the caramel.

I had this with a small glass of fat-free milk (and maybe had another ginger bread leg
).
I am off to work on more cleaning!
Have a great night!!

You’re getting warmer..
..to the big announcement!
I am very excited about it.
But first, the food..
I woke up with a few pieces of turkey bacon, two egg whites and a piece of whole wheat toast and raspberry spread.
I ate all but 1/4 of the piece of toast. This was super filling and delicious.
I LOVE turkey bacon, I grew up on it and to be honest I like it more then regular bacon because I am so used to it. It gets so super crispy and yummy.

When I got home I prepared a delicious lunch with a bunch of things I was craving. Gotta love when the bod craves nutritious foods!
I made a small sweet potato that I topped with the usual: a little smart balance and a little S&P. I wilted three large handfuls of spinach, and cooked up a spicy black bean burger.
Sorry I eat those a lot, I just LOVE them!! I also had a side of fresh carrot sticks.

Mmmm warm and yummy on a cold Florida day like today, it’s barely hitting the 50′s..don’t judge that is COLD for Florida!
I am off to get some work done and help clean the apartment. This place gets SO messy especially after traveling.
Hope you all have a fabulous afternoon!

Fun Things Coming in 2010
Isn’t it strange that we’re almost done with the first decade in the 21st century?! Crazy! I can’t wait to see what happens in the next ten, I have a pretty great feeling about the next decade.
After I posted I ran my 3-miler I had on the plan today on the treadmill. Then headed home to shower and get ready to get out of the house!
We are out of stock when it comes to food in our house, so we headed out for lunch! Having Adam home during the day is quite wonderful. I don’t feel so lonely!
We headed to one of my faves, Tijuana Flats.

We ordered our food and grabbed our array of hot sauces from their beautiful hot sauce bar.

I got four, the husband got five.
To eat, I ordered a chicken & bean burrito. “Power lite” which is low fat sour cream and low fat cheese.

My burrito came with onions, tomatoes and lettuce.
I was so ravenous I devoured this lunch. Nom nom nom.
It was a heavier meal, but all pretty good ingredients. I will just eat a lighter dinner.
After we ate, we headed next door to Barnie’s coffee shop where I ordered a green tea and I added a little honey to it.

I am so excited for the new year, I feel so many great things happening! Yay!
Mainly: A big announcement that I will announce sometime this week!
I can’t wait to tell you all, but you must be patient until then. No, I am not pregnant and no, I don’t have a book deal (I just started this blog..I’m not that good.
).
You will have to be patient!
As for now, it’s still 2009 and we are about to go blow the rest of our food budget of the year. It’s a measly amount, but we’ll make it stretch to Thursday..hopefully!
Have a great day friends.

Happy Christmas eve
Happy Christmas Eve everyone!!
I am in such a good mood! It’s Christmas, I am getting to be with my most of my family (miss you Dad!!) and I am in a very nice hotel with my husband. Oh, and it also may be the endorphins kicking in!
I slept in until 10, and it felt delicious!! The bed is one of those beds that just steals you to sleep, it feels like a giant marshmallow cloud. Okay, that may be exaggerating but it really is pretty darn comfortable!
Adam went out early this morning and did a little grocery shopping for breakfast.
When I woke up with both headed straight to the hotel gym. I had three miles to get in!
They had super nice touch screen treadmills, sorry for no pictures! I was kind of dreading the “dread”mill. It wasn’t too awful, luckily I had a T.V. right in front of me so it helped the time go by. Unfortunately, the safety clip fell off TWICE so I had to restart both times. I got so frustrated, since I was already 10 minutes in the first time. I guesstimated how much I needed to run but definitely overshot, which I would rather have done to not risk being under 3 miles. With a 5 minute warm-up and warm-down 3.1 miles took me probably around 43 minutes. I definitely did more then 3.1 but I am not sure how much.
I wish I had a Garmin!!
Too late to add that to the Christmas list now.
When we got back I was super hungry!
It was a little after 11 and since we won’t head to my mom’s place until 2:30, this was pretty much brunch.
A bowl of H2H with some GoLean crunch. One of my favorite combos! My sweet husband is lactose intolerant so I had this with some Smart Balance lactose free milk.

I had a few pieces of fruit from this mix. No melon, YUM! I am not a huge melon fan. I prefer the good(more expensive) stuff. Thanks Adam!!

He also surprised me and got us each a Chobani.

I chose blueberry. Yumm!
I also sipped on some Tazo earl grey tea with a little bit of sugar(I forgot Truvia packets) and I ams till sipping on it!
I’m off to shower, and figure out what to wear for tonight.
At 2:30 I am heading to my mom’s and we’ll hang out there for a couple hours before heading to Christmas Eve service at my old church and then we have a family Christmas eve party where I will be surrounded by more family then I have been around in at least five years. So crazy, but it should be fun.
Lots of pictures to come tonight!!
I hope you all are enjoying your holiday if you celebrate Christmas, if not I hope you enjoy this wonderful day anyway!

My first photoshoot
For lunch I continued eating leftovers, I apologize for the boring eats lately but sometimes you just need to eat what you have! Especially since we leave tomorrow until the weekend.
I had some spinach salad with blue cheese crumbles and carrots as well as a few pieces of leftover pizza. So yummy.

Along with an unpictured Christmas cookie and a half. The lemon ricotta and half a macaroon. The macaroon was good, but the lemon ricotta is my FAVE! I need to make these sometime!
Then I headed out to take pictures of my friends baby that she is giving as a gift for Christmas. She treated me to coffee on the way to Park Ave.

Iced coffee with skim milk, sugar, and a shot of pumpkin syrup. SO delicious!!!
I went to the mall to find one last gift and then came home for a snack.

Now I am resting and waiting to head out for dinner with the girls!
See you all later.

Sunday Date Night
Adam and I had a fun little spontaneous date night tonight. We both needed it for sure!
Before I get to that, let’s back up to lunch.
I had some leftover salad tossed with some Annie’s Goddess dressing. I also had one mini-whole wheat pita with some roasted red pepper hummus. I love Sabra’s roasted red pepper hummus!

I also had a couple cookies that I brought home from the cookie extravaganza yesterday.

I ate a lemon & ricotta cookie and a coconut macaroon. Yumm!
We hung out at home and then headed out for our date night!
First stop: The Wine Room at Park Avenue.

First you buy a card, and then add money to it as you want. They have over 150 wines to taste and you can choose the size of your tasting as you go. It’s self-serve and it’s really fun to just go around and try what you want! We already had a card so we added some money and went for some tastings. Then we headed to Urban Flats.

We split a salad of caramelized onions, walnuts, blue cheese and a balsamic vinaigrette(on the side). Yum! At first they forgot the pears but they made the salad for me, glad I asked for some.
We ordered three flat breads to share. Well, I shared two he was on his own with the steak & portobello.

To the right is the roasted vegetable flat bread.
This is the FIG and prosciutto flat bread with blue cheese and mozzarella. SO amazingly good! Sweet, savory. Delicious!!

This is Adam’s steak and portobello pizza!

I ate this plate..

..plus another slice of roasted veggie and the fig and prosciutto.
When we got home, I ate some cookies. Excuse the paper towel, I just wanted my sweets fast!
I only ate one of the lemon ricotta cookies and the coconut-meringue-macaroon cookie. Yummy!

I had a great night with Adam, and I am SO ready for bed now!!
Goodnight!
Katy
