A Monster of Green

Today, when noon hit, I decided I wasn’t quite hungry for lunch but I definitely needed a pick-me-up.

In this delicious green monster I had.

-1 packet Pom/Mango Amazing meal

(I got a bunch of packets for Christmas. :) )

-Mangoes

-Strawberries

-Ground Flax

-Soymilk

-Plain fat free yogurt

-One banana

The amazing meal is a bit chalky, but adding more mangoes made it delicious. It filled me up and definitely gave me the boost I needed!

For my actual lunch, when Adam got home a couple hours later, I had a smaller lunch thanks to my awesome GM.

I had two small whole wheat pitas dipped in some Sabra’s roasted red pepper hummus and banana. Perfect and yummy. It’s also helping us keep to our “eating what we have” goal.

A couple hours later, after working on the new site, we got ready to head out for my three-miler that was on the plan. I got to try out my new SpiBelt (thank you, Adam Santa!)

My three miles went well, Adam ran with me a bit but mostly just walked when I walked. Gosh, I hope this gets easier!

I noticed I felt stronger on my run, but still it’s baby steps! I can’t wait until I can reach 6 miles, let alone 10! I can’t wait to conquer longer distances! :) Call me crazy.

I really liked the SpiBelt, It held my phone in place wonderfully as I ran and I didn’t have to mess or fuss with it once which left me to focus on the running at hand. I am happy with it. The dancing may continue! ;)

You’re catching me at the beginning of my racing career, I have run on and off for the last few years but I am getting serious about it now.

When I got back, I fueled the best way I know how right after the holidays.

I iced while munching on a small glass of fat-free organic milk and a gingerbread leg. :)

I spent some time cleaning and trying to organize our Christmas presents, I will show some spotlights tomorrow!

Then, we made dinner.

A small plate of Barilla Plus farfalle with some olive oil and garlic tomato sauce. Yum!

I made us salads, but sadly I was out of my goddess dressing!

I decided to make my own dressing by mixing:

-About a tablespoon dijon

-Balsamic vinegar

-White wine vinegar

-Olive oil

-S&P to taste

-Whisk everything but the olive oil until the very end and then slowly add the oil as you whisk vigorously. Then pour over salad and enjoy!

Mmm..for dessert we heated up these small sweet waffles from Whole Foods and drizzled a little Nutella on top.

This is what happens when you leave your dessert alone with a pastry chef. Thanks Adam. :)

I am off to work on more cleaning!

I work well under pressure

..sort of. ;)

This morning I decided to make a nice, hearty bowl of oats.

I cooked 1/3 cup oats with 2/3 cup lowfat milk. I then added a lot of cinnamon, pumpkin pie spice, 1/2 scoop chocolate protein, vanilla, pinch of salt.

Yes, this was a FAIL on my part. I used saigon cinnamon which is SUPER strong and could barely eat it.

Breakfast #2:

2 1/2 egg white fluffs with a piece of whole wheat toast and a little smart balance. Yum.

I then headed out to finish shopping and I am happy to say that I AM DONE!!!!! Thank goodness.

I also had time to get my eyebrows waxed which always makes me feel tons better. Yes, that’s right, getting hair ripped out of my face makes feel better. ;) We all have our vices?

When I got home I made this large green monster, that’s actually a blueish-purple color. But there are two large handfuls of spinach in there.

Along with blueberries, strawberries, mangoes, amazing grass, half a ripe banana and soy milk.

Very large. This will hold me over until Adam gets home. I am going to eat a small lunch when we get on the road cause I know I will be hungry then. I just need energy to power through.

I had a three mile run on the plan today but considering I leave in about an hour and a half for Fort Lauderdale I really have NO time. I still need to wrap, clean, pack, and make sure we get out on time since it’s about a 3 1/2 drive. Especially with a dog in the car(who may need a break or two).

My plan usually consists of three runs per week. Monday, Wednesday, Saturday. Since I am still on pretty a low weekly mileage I am adjusting as I need to with the holidays. Luckily after Christmas things will get back to normal. :)

My running/work out plan for the week:

Thursday: 3 Miles

Friday (Christmassss): Rest/Elliptical

Saturday: 3 Miles

These will probably be treadmill runs since I don’t think where we are staying has many scenic routes. Unless I can rope my sister and mom into running with me. ;) We’ll see.

We’re also heading home Saturday so I will get that in before we leave.

It’s so important to me to keep active during the holidays when overindulgence has unfortunately happened more then a few times.

I’m off to wrap, clean, shower and pack and I will be back and reporting from Fort Lauderdale! :)

I love being a girl!

I’m off to get my hair done! I just love getting my hair done. I’m getting highlights done as well! Oh and yes, I will put a picture or two up after!

This will be a quick one since I need to leave in about 10 minutes..

For breakfast I had something green..

My green monster included-

-Chocolate amazing meal

-1 Banana

-Scoop of peanut butter

-Some mango

-Unsweetened soymilk

It wasn’t bad, I wasn’t sure I would like a peanut butter smoothie. I am more of a fan of fruit smoothies though!

I then headed outside for an easy two mile run that I had on schedule. Let me tell you, it’s way different then the dreadmill. Okay, obviously. Anyways, it’s going to be a tough time training for 13 if my legs feel this heavy all the time! But I am going to work hard and hopefully it will pay off. :)

I am now off to get ready and head out. See you all later!

Semi-detox Sunday.

Semi-detox because I am not necessarily eating just fruits and veggies but about 85-90% I would say ..I am still doing A LOT better and plan on getting another 64oz. AT LEAST of water today which will really help. I have not been staying hydrated like I should.

This morning started with a yummy green monster. Unfortunately I have a magic bullet and it can only fit so much.

I have to constantly fight with it because sometimes it doesn’t blend (my fault for using it so much) and I have to make a glass and a half of smoothie..oh well.

Plus an orange I had snagged from the hotel we stayed at in Jacksonville..mwahaha.

Then we headed to church, it was a really good sermon but I was sleepy. I sipped on some green tea with 1/4 packed of sugar(I need to start bringing truvia packets in my purse). I also drank 8 oz. of water. Both unpictured, not too exciting anyways.

For lunch, I was craving veggies and goddess dressing. That craving turned into this..

A huge salad with baby spinach leaves, brocc, celery and chickpeas. I had to make due with what we had. Drizzled with goddess dressing it was yummy and satisfying.

I also had a few of Adam’s All-Bran crackers.

Hence why I call it a semi-detox..so far so great. I am starting to feel better already. Tonight I am planning on more veggies and maybe even a sweet potato.

I decided to save another GM for a snack while we put up our tree. I am really excited about going to get it today! We’re off. :)

It’s like Christmas before Thanksgiving!

Well, today was a little hectic. Sorry for only one post today. I suppose it is busy for most people, it is the day before Thanksgiving after all!

My morning started with a green monster..

I drank about half, I didn’t have much of an appetite this morning! I actually had a group interview for a job and when my nerves are high, my appetite is way low.

My sister drove and Leo came along. After my interview we ran errands then headed home to pack up for our trip! When I got home, I was starving and I remembered that this was in my freezer..

Yummm! It didn’t look as pretty, and I was starving so a photo didn’t happen but it was very good! It packed 16 grams of protein as well. I love Amy’s!

Thankfully, Adam got home early so we were able to pack and get on the road earlier then we thought. But first, we had to head to Super Target for a few essentials. We picked up items to make pies for tomorrow (yay baking!)and I make a mean apple pie.

I also had to pick up an early graduation present for myself from my mom..

The Nikon D3000.

Okay okay okay, I know it seems EVERYONE is getting a DSLR. I suppose it’s true but honestly, I have wanted one for at least three years. My Dad was great and got me an SLR style point and shoot but I really felt like it was time for an upgrade. This isn’t a spur of the moment decision, it’s been years people..and I am SO excited. I was between this and the Canon for a while, but they seemed pretty even, and this one just felt perfect in my hands. It’s the smallest Nikon DSLR and is not heavy at all, it will be very easy to take with me places. My sister was so sweet and bought me an SDHC memory card as a graduation present. I even got this super cute camera bag as a gift for myself!

I couldn’t resist. I love it. I wanted a bag that I would want to carry around.

I had a glass of wine once we got to the hotel. Our suite is great! It’s designed for extended stay guests. Full kitchen with an oven and full sized refrigerator! Pretty nice, if we had everything we needed here we would just make the pies in the morning. Oh well, I would have taken more pictures of it but it was pretty messy by the time I got to it. We had a lot of stuff! Or maybe I had a lot of stuff? Oh well..better to over pack then under pack..right?

Dinner didn’t happen until 10:30! We ordered pizza and salads.

I had a little fun, tomorrow I am only baking the pie and so I will have plenty of time to read and play with it..I have lots to learn. :) I know you may be rolling your eyes since it’s just one more person with a DSLR..but I am really excited about it. So yay!! :)

Busy busy day!

Today is a pretty busy day. First I must clean our apartment which magically goes from clean to nightmare in a matter of a couple days. It still amazes me! Anyways, I must clean then work out. Then I am headed over to my in-laws house to help my mother-in-law grade papers for her high school English class they make them do so much work on their breaks! I told her I would help her grade multiple choice papers to hopefully help her out. Then around 5:45 I am picking up my sister from the airport! YAY! Also, her “puppy”(who’s 8 years old) whom we will be fostering essentially for a few weeks to possibly a few months! I am really excited about having a dog around, but it’s also a little stressful. Hopefully we will be good foster parents and it will prepare us for when we get our own puppy.

To fuel for my busy day..

Such a great breakfast! :) Oh and since Lindsey put videos of cute babies I thought you should check these out too..they make me happy..

EDIT: Oh and my WONDERFUL husband finished the dishes before he left for work. (Thanks for the comment babe ;) He is pretty great.

Happy Friday.

We went to the zoo today! Our first field trip! :) I was excited just to be out of the classroom to enjoy this beautiful weather.

For dinner last night, we made what I am now changing names to a “taco lasagna” we had this “Soft Taco Bake Dinner Kit” in our pantry from a BOGO deal at Publix.

I didn’t want to just throw this away, so instead we tweaked it a bit. Instead of ground beef we used turkey, instead of the awful (overly processed cheese with way too many ingredients then should be legal) cheese sauce we used shredded cheese, and we used onion and spinach to add a healthier boost.

The cooking began and I decided to have a little fun of my own..

I was curious/dumb/brave and decided to try a piece of raw onion. After it burned my throat really bad and did NOT taste like eating other veggies raw I gave Adam a gross oniony kiss and he got mad at me..well more like “fake upset”. I on other hand found it hilarious..

10 Minutes later:

Adam-”My breath STILL tastes like onion!!”

I added this can of black beans to the turkey and taco seasoning mix.

Ugh..rejected cheese sauce when straight into the trash.

Then we started layering. I put a tortilla down then added spinach and raw onion(we wanted a little more tender onion so it cooked while it baked).

Then I finished cooking the turkey and beans.

And added a layer to the mix..

Sprinkle with cheese, and repeat!

Adam chose beer, I chose this POMx pomegranate peach passion white tea. Yummm!

I was filling out job applications, writing a resume and cover letter and felt the need for coffee..just not caffeinated at 8 PM. Adam was sweet and ran down the street to pick up a bag of this. He said it was really good. He loves that it’s fair trade, I love that it’s organic and fair trade. ;)

He took this picture of it brewing and it made my heart smile because he supports what I am doing and by taking a picture of food or drink without asking me is just more then I could ask for in showing me that support. :)

I found the largest magic bullet container we had and stuffed it full of;
  • One banana
  • Flax
  • Amazing Grass
  • Soy Milk
  • Plain Yogurt
  • Mangoes
  • Strawberries

The best(and greenest) monster I have had in a while! I don’t why I always thought it “needed” to have fruit juice in it. It totally didn’t. This kept me satisfied for a long time!

Adam took a picture of the lunch he made me! I just found out when I was loading my pictures on my computer.

He had to transfer those veggies to a plastic baggie for me though because I needed disposable containers.

I ate most of the veggies, the blackberry and AB sammie, and the pumpkin kiss and saved the bar for a snack when we got back to school.

Okay this zoo broke my heart, this is a small zoo and these animals live in such small homes. I know zoos keep all animals in cages but at least the bigger ones give them more room..

Hello, Winter?

I think it’s coming..even for a brief moment. This year, “cold fronts” seem to come and go within two days. What. Is. The. Deal? :)

At least tomorrow will feel like Winter, and maybe Friday..Friday actually should feel like Fall..so yay!

Today was stressful again, I feel like the closer I get to being done the longer the days feel. In a week I will have mostly given the class back to the teacher..so YAY!

Graduation: T-Minus 38 days and counting! :) :)

Did you know that you can actually watch my graduation live on the internet? Not kidding. Not that you would want to. But it’s happening. It makes me laugh a little..

For breakfast I made a not-so-green-more-swampy monster:

  • Cranberry juice
  • Almond milk

I really need a VitaMix, I am slowly killing my magic bullet with these smoothies and I would love to put more spinach into my smoothies.

Also burnt one half of my sandwich thins and we’re almost out. So I managed. 3/4 of the burnt one had smart balance, the other half had almond butter and honey.

For my (unpictured) lunch I brought some leftovers from last night..some of these leftovers:

Yummmm! I took one of my smallest tupperware containers and forgot to pack much more. I also snacked on a baggie of organic baby carrots. Since I was still a bit hungry I dove into this:

Yummm! This was my first time eating this, I LOVE the texture of the chewy and the crunchy. Perfect mix. I finally felt full and satisfied!

When I got home I showered and got ready for tonight. After that I needed major fuel, my stomach was reminding me so..

Enter: Cereal.

H2H and Puffins..such a yummy mix! I looooooove me some cereal. Sometimes that’s all I need to smile. I know, I am easily amused.

To celebrate the cold front coming tomorrow(high of upper 60′s) I had one of these babies:

Some exciting news, I found out Adam is taking me to New Smyrna Beach for the weekend of the 20th, the weekend before Thanksgiving break! I am really excited to just get away! I will still be blogging, but we will be cooking up a storm I hope. He’s promised to work with me on some recipes and we’ll have two days to just get away. Much needed, and it starts my week off from school and I will be done teaching in my internship at that point!

The next few weeks are SO exciting. Just thinking about it gives me those excited butterflies in my stomach. I have a direction I am heading in that’s completely different then what I thought but it makes me so happy and just feels SO right. I know God has a total hand in this and I am just hoping/trusting that I will continue being led, because right now it’s a huge jumbled mess of dreams that have to get sorted and figured out. One day at a time! :) After I graduate I will elaborate more, but as I am still finishing up school in my internship I won’t talk much about it yet! :)

Well, on that note it’s off to our Wednesday night group. Sorry for the lame post tonight, Wednesdays are rough! I promise the posts will be much more exciting once internship is done and my schedule is freed up. Looking forward to writing about some topics that interest me as soon as I get some more time in my life! :)
