A yummy food kind of night.

Adam made a delicious meal tonight!! He had this planned for a couple days..

Chicken roulade with a spicy tomato sauce with mozzy in the middle seasoned with s & p and fresh rosemary.

The pasta had olive oil, mushrooms, onions, garlic powder, farfalle(bowtie) pasta, spinach, oregano, s&p and basil.

Adam said it should have had cream, beef stock, and parmesan cheese to make it extra yummy, but we didn’t have any. It was still absolutely delicious, and I am not just saying that because I share a bed with the chef..

I also had a glass of OJ with my meal.

A couple hours later, I broke into my secret santa gift!! :)

With two glasses filled this much with skim milk. Yummm!

I’m not sure of the exact flavors but the darkest one was more like fudge and a dark, chocolaty flavor. The middle one was more of a blondie and had a sugar cookie taste to it, the third was more the color and consistency of a chocolate chip cookie. They were all divine!! I wasn’t planning on eating all three, I was trying to share with Adam. He had a couple bites of them and I didn’t eat half of one. I had a just over two of these “Edgies”. OH..MY…YUMMM!!! Seriously amazing. Thank you Liz aka VeggieGirl, you’re so sweet for sending me these! So yummmmyy. They are in my freezer now so they will be making appearances in my blog for a while! Although, next time, I will be only eating one at a time. ;) My tummy is not happy I ate so much but my taste buds loved every second!

In other news..

I think I am going to NYC on either Monday night or Tuesday morning! My sister lives there and I am going to go visit her for a few days when she’s off of work. I am really excited to be blogging from there! My mom and sister lived there in 2007, my sister moved back after she got offered the managing position at a popular restaurant there. I’m sad I wasn’t blogging back then. When I went home, I went to the city. I loved it! I will keep you updated if I end up going. I may need to invest in some warm running gear, because I would love to return to Riverside park where I ran that summer all the time. :) If you’ve ever seen “You’ve Got Mail” I ran right past the garden they meet up at, at the very end of the movie where she finds out it’s him. I love the city so much. :) I’m excited!

Nothing like sleeping in..

..to start a day off right! Of course sleeping in to me is sleeping until 9:30. My body really needed it so I was more then happy to oblige.

SInce last Saturday it’s been hard to feel rested no matter how much sleep I have gotten, but I finally feel caught up! I don’t like sleeping in all the time but after a long, hard week I let myself get more then 8 hours and it’s divine.

This was our dinner last night:

This was one of the best meals I have had in a while..I was craving sweet potato(when am I not craving sweet potato? *she says as the microwave beeps and the smell of sweet potatoes fills the air*…….anyways..) so we decided to make sweet potato fries. We coated them in a very light coating coating that included-

  • A little EVOO
  • Paprika
  • Garlic Powder
  • Chili Powder
  • Salt and Pepper

Remember, spices are free reign so add to taste and enjoy!

These were probably the best we ever made, sweet potato fries may be my favorite food..

In a pan I added a very little bit of EVOO along with some fresh broccoli, chopped up baby carrots, some frozen veggies and once those were warmed through I added two handfuls of fresh spinach. Half for Adam, half for moi!

While I cooked up veggies, Adam cooked up some tilapia that he found on sale this week.

Adam cooked it with a little EVOO and spices, I forgot to ask him what he used but I know he used Old Bay and S&P.

So delicious and buttery without adding butter!

All together..

I drank it with some green tea and pomegranate that I hadn’t finished, I just poured it over ice!

Then I switched to vino..

Throughout the night I sipped on a glass and a half.

I noticed we only had a small amount of pumpkin pie ice cream left, I brought the container to share with Adam but he didn’t want any.

To be honest I had a few bites and threw it away since I could already taste freezer. Not the best taste! I settled on a lemon head and twizzler from my halloween candy stash. I’m sorry but I LOVE lemon heads and I allowed myself one. :) I may need to donate this candy to Adam’s office.

When I woke up this morning I read through some blogs and got ready to workout by fueling on some almond butter and banana. Yumm..but it looks like someone snuck a bite before I took a picture..

Me- “Adam! I didn’t even take a picture yet!”

Adam- “I’m sorry! I thought it was funny!”

(Just like I thought the raw onion kiss was funny?)

Me- “It’s okay I am just going to have to tell the blogworld..”

Adam-*Sadface*

Me-”It’s okay, it doesn’t make you a bad husband. I’ve seen it happen.

Adam-”I’ll just cut that part off.”

Me-”I can’t lie about it!!”

Adam- “That’s not lying…”

I took a picture anyways..(;

At the gym the treadmill was taken..grr apartment gyms! I made due with the elliptical and set it to level 10 for 30 minutes on the “Hills” program. Boy was I sweaty after that! I read Women’s Magazine while working but made sure to push it often, especially on the hills.

I didn’t feel %100 after, but luckily Adam made breakfast!

Eggs in a basket and some turkey sausage(+1 more)!

This was yummy and I felt instantly better.

After getting ready we headed off to our favorite Orlando coffee shop, Cup O’Soul to get some work done. Unfortunately their internet was on and off so I didn’t get that much done(hence the later “morning” post) but I got a job application completed which was a huge to-do! I sipped on this while working-

The drink I always get, the llama. I talk about this amazing drink and it’s coffee iced cubes here. Love it!

Now I am getting dinner together before heading off to my beautiful friends baby shower! Then a girl’s night of baking and Twlight watching. I have already seen it once right when it came out last year but have never read the book. I am hoping that watching it with Ryan and Ashley will help me get into it. I am a bit of a skeptic..maybe I will be a late convert. Have you gotten into the Twilight craze?

Happy Friday.

We went to the zoo today! Our first field trip! :) I was excited just to be out of the classroom to enjoy this beautiful weather.

For dinner last night, we made what I am now changing names to a “taco lasagna” we had this “Soft Taco Bake Dinner Kit” in our pantry from a BOGO deal at Publix.

I didn’t want to just throw this away, so instead we tweaked it a bit. Instead of ground beef we used turkey, instead of the awful (overly processed cheese with way too many ingredients then should be legal) cheese sauce we used shredded cheese, and we used onion and spinach to add a healthier boost.

The cooking began and I decided to have a little fun of my own..

I was curious/dumb/brave and decided to try a piece of raw onion. After it burned my throat really bad and did NOT taste like eating other veggies raw I gave Adam a gross oniony kiss and he got mad at me..well more like “fake upset”. I on other hand found it hilarious..

10 Minutes later:

Adam-”My breath STILL tastes like onion!!”

I added this can of black beans to the turkey and taco seasoning mix.

Ugh..rejected cheese sauce when straight into the trash.

Then we started layering. I put a tortilla down then added spinach and raw onion(we wanted a little more tender onion so it cooked while it baked).

Then I finished cooking the turkey and beans.

And added a layer to the mix..

Sprinkle with cheese, and repeat!

Adam chose beer, I chose this POMx pomegranate peach passion white tea. Yummm!

I only drank 1/4 of this so it might make an appearance tonight!

..and of course hot sauce! I took one bit and realized it needed this. Nommmmmmmmm!

I was filling out job applications, writing a resume and cover letter and felt the need for coffee..just not caffeinated at 8 PM. Adam was sweet and ran down the street to pick up a bag of this. He said it was really good. He loves that it’s fair trade, I love that it’s organic and fair trade. ;)

He took this picture of it brewing and it made my heart smile because he supports what I am doing and by taking a picture of food or drink without asking me is just more then I could ask for in showing me that support. :)

Dessert.

I found the largest magic bullet container we had and stuffed it full of;
  • One banana
  • Flax
  • Amazing Grass
  • Soy Milk
  • Plain Yogurt
  • Mangoes
  • Strawberries

The best(and greenest) monster I have had in a while! I don’t why I always thought it “needed” to have fruit juice in it. It totally didn’t. This kept me satisfied for a long time!

Some awake tea with a little agave, that apparently I spilt on the counter..it was 6:30 give me a break! ;)

Adam took a picture of the lunch he made me! I just found out when I was loading my pictures on my computer.

He had to transfer those veggies to a plastic baggie for me though because I needed disposable containers.

I ate most of the veggies, the blackberry and AB sammie, and the pumpkin kiss and saved the bar for a snack when we got back to school.

Okay this zoo broke my heart, this is a small zoo and these animals live in such small homes. I know zoos keep all animals in cages but at least the bigger ones give them more room..

So there you go! My day in pictures. I am SO TIRED! But a lovely dinner and some vino with the husband will be just what the doctor ordered. Back to the gym tomorrow! Much needed. Well, I am off to assist in dinner and finishing up a job application! Enjoy your evening friends!
