A Monster of Green

Today, when noon hit, I decided I wasn’t quite hungry for lunch but I definitely needed a pick-me-up.

In this delicious green monster I had.

-1 packet Pom/Mango Amazing meal

(I got a bunch of packets for Christmas. :) )

-Mangoes

-Strawberries

-Ground Flax

-Soymilk

-Plain fat free yogurt

-One banana

The amazing meal is a bit chalky, but adding more mangoes made it delicious. It filled me up and definitely gave me the boost I needed!

For my actual lunch, when Adam got home a couple hours later, I had a smaller lunch thanks to my awesome GM.

I had two small whole wheat pitas dipped in some Sabra’s roasted red pepper hummus and banana. Perfect and yummy. It’s also helping us keep to our “eating what we have” goal.

A couple hours later, after working on the new site, we got ready to head out for my three-miler that was on the plan. I got to try out my new SpiBelt (thank you, Adam Santa!)

My three miles went well, Adam ran with me a bit but mostly just walked when I walked. Gosh, I hope this gets easier!

I noticed I felt stronger on my run, but still it’s baby steps! I can’t wait until I can reach 6 miles, let alone 10! I can’t wait to conquer longer distances! :) Call me crazy.

I really liked the SpiBelt, It held my phone in place wonderfully as I ran and I didn’t have to mess or fuss with it once which left me to focus on the running at hand. I am happy with it. The dancing may continue! ;)

You’re catching me at the beginning of my racing career, I have run on and off for the last few years but I am getting serious about it now.

When I got back, I fueled the best way I know how right after the holidays.

I iced while munching on a small glass of fat-free organic milk and a gingerbread leg. :)

I spent some time cleaning and trying to organize our Christmas presents, I will show some spotlights tomorrow!

Then, we made dinner.

A small plate of Barilla Plus farfalle with some olive oil and garlic tomato sauce. Yum!

I made us salads, but sadly I was out of my goddess dressing!

I decided to make my own dressing by mixing:

-About a tablespoon dijon

-Balsamic vinegar

-White wine vinegar

-Olive oil

-S&P to taste

-Whisk everything but the olive oil until the very end and then slowly add the oil as you whisk vigorously. Then pour over salad and enjoy!

Mmm..for dessert we heated up these small sweet waffles from Whole Foods and drizzled a little Nutella on top.

This is what happens when you leave your dessert alone with a pastry chef. Thanks Adam. :)

Infusion Tea-licious

Sunday started out as most Sundays do in the Hill household..church! I really love our church, it’s smaller and more intimate. They are very focused on community building and are very good at that as well. We went to a different church back home for Christmas Eve service and it made me realize how much I really love ours here.

Breakfast was my boring bowl of Kashi H2H and GoLean crunch. Yum. I apologize for the dullness, but I really love cereal. It was quick, easy and filling. :)

On my way to church I saw a very exciting message from Anne P., she was coming into town for a bit! I ended up being able to meet her and Megan for a later lunch at Infusion Tea.

This was my second time there, but I really need to eat here more often. I am never disappointed.

Then our food came!

I got a combo with 1/2 a serving of their yummy chili and half a “Concorde” sandwich.

My sandwich had hummus, tabouleh, organic field greens, sunflower seeds and a balsamic glaze.

Absolutely awesome sandwich. The chili was also super delicious! Perfect for the cold weather here in Orlando.

We talked and ate for a couple of hours and then headed to get some fro-yo at CeFiore, per Megan’s recommendation.

I had samples of the acai berry yogurt, and the original flavor.

I settled on the acai flavor, so delicious. Now which toppings to choose?

Our creations. Mine is the one with the pink yogurt in the middle! I had mangoes, kiwi and pom arils topping mine. SO yummy!!

Then we headed to the outlets, which took FOREVER!! I think the entire city of Orlando is shopping right now. I drove separately and I was only there for about twenty minutes to visit LuLuLemon, and then head home. It took 30 minutes alone to get out of the garage! It was mad chaos. I was driving for so long.

I was SO happy to get home where Adam had started dinner. He had sweet potatoes in the oven and I cooked myself up a large handful of spinach (which turned into this measly pile), as well as a spicy black bean burger I put on top of a piece of whole wheat bread with some organic ketchup. Yum!

Dessert was a small piece of cake and a few pieces of Christmas candy. Chocolaty heaven!

I used my small plates for dinner and dessert and really does help me to eat less. I feel like I am eating so much more when on a huge plate it would look measly!

I am now off to relax and head to bed to read some more Twilight, I am way behind on this trend. I tried to hold back but couldn’t any longer. I have SO many good books to read so I want to make it through this one. :)

Christmas #3

Well, we had Christmas with my family, my extended family and today we had Christmas with my new family! :)

First we woke up early to pack up. I had this first thing, yummy organic Stonyfield yogurt. I had the “Super Fruits” flavor which had pomegranate, raspberry and acai. Super delish!

We picked up my sister and took her to the airport on our way back to Orlando. On our way up we were super hungry so we hunted down a Dunkin’ Donuts.

I got my iced coffee with skim and sugar as well as a bagel with a little bit of butter. Yum!

A few hours later we finally made it to his parents house. I snacked on these sausage and cheese balls plus three more as well as some cashews.

I also sipped on some beer. I had about two 1/2 of these throughout the afternoon.

First we opened gifts and then we had a yummy early dinner!

My mother-in-law set up for our dinner which I was so excited about. We don’t usually eat on newspaper, don’t worry. ;)

I started with this salad that I sprinkled blue cheese on as well as some italian vinaigrette, so yummy!

I had a very little bit of steak that the guys grilled up, but this is what got me excited.

Crab legs!! YUM!! Oh my gosh, so good. One of my favorite foods.

After I had a small piece of key lime pie and fruit.

I also had a couple sips of this “Bailey’s appletini” it had 2 oz. of Bailey’s with caramel and .5 oz of green apple vodka.

It was strong for my tastes, I only had two little sips but it was tasty. I also had a little bit of gingerbread, yum!!

I came home to find a package from my dad! He sent me loose leaf tea and this awesome cup that let’s you brew and dispense tea right into the cup! Super easy! :)

I received loose leaf rooibos, blood orange, chamomile, and spearmint tea!

I couldn’t wait so I got right to brewing. I brewed some chamomile with a little blood orange. It’s so much tastier then bagged tea!

Yum! I am off to finish sipping and read. :) Adam is at a bachelor party right now so it’s pretty quiet, the house is a mess with our gifts but I am just going to rest tonight. I need it!

Home for the holidays!

Well, I am finally home for Christmas!

Our drive was all right, except I think all of the crazies are out driving and some of them are driving semis!! But we made it safely.

Along the way Adam and I shared this..Adam ate half, I had a small bite(more for later!)

I commented on one of Larabar’s holiday blog posts and they sent me some free samples of Larabar! They were giving them away for a few days and I was one of the readers they sent them too! I love Larabar and this is definitely my favorite flavor! It’s a perfect mix of peanut butter and jelly. Adam was excited to try this flavor and liked it, he wasn’t crazy about the dryness of of the texture, but I am so used to it. I just love them.

Then we stopped at the healthiest fast food joint we knew we’d pass. Chick-fil-a!

I ordered the chargrilled chicken sandwich which totaled to only 270 calories and over 20 grams of protein. I also had a side salad which had 60 calories with one serving of light Italian dressing. My meal totaled 345 calories! Not bad at all. :)

When we finally arrived around 8:30 I ate some food at my mom’s house.

Some roasted chicken, avocado slices, a couple pieces of bread and some potato salad.

I also sipped on a glass of wine.

For dessert I had a Christmas cookie, lemon & ricotta. Plus half of this blackberry cheesecake.

After we ate and hung out for a coupe hours, we headed to our hotel.

Our hotel is very nice, I love our room! Here’s the tour..

Enjoying some Communitea

Tonight some wonderful girls and I headed to Dandelion Communitea, a local vegetarian restaurant here in Orlando.

Those wonderful girls just happened to be Ashley, Meghann and Ryan! :)

I ordered the bowl of chili which came with blue corn chips.

To drink, I chose the iced tea of the day. Their were actually two options and I first chose the buttercup flavor, which definitely had a buttery note.

The chili was delicious but more like a stew, and filled me up very quickly! The tea? Not my favorite. I drank it just so I could grab some lemon green tea, but that ended up tasting very bitter and a little like lemon cleaner. :-\ I hear the tea is usually great so don’t let that steer you away!

This was my first time at Dandelion and it’s adorable! I could see coming here and bringing my laptop or a good book easily. It was so cute, I wish I had taken more pictures!

It was so great to just relax and talk with the girls. I am so thankful for new friends and I love just getting to know them better!

When I got home I finally dragged all of my Christmas gifts up and then sat down to enjoy some sweets!

A Night With The Girls

So right after I posted I headed to the gym to get my two more miles in from my training plan.

I ran 2.00 miles in 25:30 with three minutes warm-up and cool down. Wednesday I have three miles on the plan that I will get in before we leave for home. I am SO excited to almost be heading home for Christmas! :)

Lunch was delicious!! I decided to have a little fun with two clementines as I waited for last nights pizza leftovers to heat up.

For lunch I had two pieces of the roasted veggie flatbread and three pieces of the blue cheese, mozzarella and fig pizza. Delish!

After I showered and got ready I headed out for more Christmas shopping. Plus this little beauty.

Enter my new favorite non-caffeinated Starbuck’s drink: The Caramel Apple Spice. It’s basically a very yummy apple cider with a little bit of whipped cream and a caramel drizzle on top. To die for, it’s so delicious. I enjoyed every last sip of my tall sized winter drink.

For dinner I was craving two things: A salad and sweet potato.

Wish granted!! I had a sweet potato with some smart balance and some S&P along with a salad of spinach greens, carrots, blue cheese crumbles and some goddess dressing. Yum!

I had a great time tonight catching up with some of best girlfriends! I headed over to my friend Nikki’s place to hang out with some of my friends. Nikki just had a beautiful baby boy and it was fun just enjoying being around him and relaxing with the girls. I received a chocolate cake from my mother-in-law so I brought it over to enjoy with the girls. I had one piece at the beginning of the night and went back for another. They were small pieces, but once that sweet tooth starts going it’s hard to stop!

There will be a note placed on it tomorrow “TAKE TO WORK”, usually when we have a lot of sweets leftover we send it to his work. I did enjoy indulging in a some of this though. Publix makes amazing chocolate cake. This was smaller then looks but it’s very sweet, you don’t need much!

I was starving when I got home still, so I made two egg whites to try and get some more protein in.

I know I haven’t run too many miles yet, but I can already tell my appetite is growing. That’s what I love/hate about working out, you know your metabolism is working harder but it also makes you hungrier! I just want to snack! Oy..it’s all about moderation. Which has been hard lately. ‘Tis the season? :-\

I am off to bed, busy day tomorrow including my first photo shoot ever!! Wish I had a better lens, but it will be fun. I am doing it as a favor for a friend so it will be fun and relaxed. Plus I know the last thing on my Christmas list for Adam and then wrapping! Tomorrow is our last full day in town. It’s almost time to go home! Yay!!

La vie boheme

Dinner was amazing, but first–LUNCH!

When I got home from visiting my beautiful new momma friend, Nikki (spending more then an hour rocking her gorgeous baby boy..melt) I was starving!!

I ate a bit of a late lunch..first I grabbed some booty.

I ate half of this bowl of Pirate’s Booty then put the rest back. I didn’t want to eat too much!

I used this extra hot dug bun for a spicy black bean and blue cheese subbie with organic ketchup. It was yummy, but I don’t think I needed ketchup with the blue cheese!

Also, a little bit of roasted potatoes which I was totally craving!

Now onto my lovely dinner tonight with Adam’s family!

The Boheme was a gorgeous restaurant located in the beautiful Grand Bohemian hotel. That was where Adam and I spent our wedding night, but it was so nice to go back and see it when not caught up in the craziness that is getting married!

We started with drinks in the lounge area..I had two of these yummy gents..amaretto sours! My favorite…like candy. Seriously. Super yummy but also very sweet.

Then we moved over to dinner where I finished my second amaretto sour.

We got right to ordering appetizers.

Using our menus that LIT up! I am serious..I opened my menu first and jumped cause, well, it scared me a little….

I snacked on this piece of whole grain bread along with a couple small pieces of white bread with olive oil and balsamic reduction. YUM!

I sipped on this wonderful Shiraz throughout the night.

My brother-in-law, Nate, ordered the clams as an appetizer.

My father-in-law ordered the calamari, and Nate’s wife Amanda ordered the mushroom ragout.

We shared each appetizer.

My plate, plus a little bit more of everything! Yum!! I also had a bit of crab cake, the best crab cake I have ever had!

I ordered my meal with a salad to start. This was an organic mixed greens salad with feta cheese, toasted almonds, and balsamic vinaigrette! It was a perfect “official” start to my meal. :)

I also had one small bite of Adam’s mozzarella and tomato salad. YUM!! I really am starting to like tomatoes! :)

For my main meal I had the filet mignon (I love filet!!) with a buttermilk blue cheese buttermilk and blueberry sauce with mashed potatoes and asparagus. It was absolutely divine. Seriously, I couldn’t make it through half I was so full, but I heard it reheats well. Hello lunch!!

Of course, I have a separate stomach for dessert, and the six of us ordered three!

I ordered the blackberry creme brulee…oh. my. Lordy.

Our dinner was to celebrate my mother-in-laws birthday as well as my graduation! For everyone’s birthday, Adam’s family chooses to go out to a nice restaurant and we enjoy a wonderful meal together. I really love that about my new family, especially loving food as much as I do!! Luckily. starting end of January, we have a whole slew of birthdays each month! :) Lots of wonderful meals to share with amazing family!

I love Wednesday nights.

First of all, thank you SO much for all of your sweet comments about my hair! As a girl, it’s always nice to hear our hair looks good after we get it done so thank you again. I really appreciate all of your comments on my posts, it means so much to me to hear from you guys! :)

Well, last night was so fun! Our Wednesday night group had a Christmas party and it was just a fun time relaxing, eating great food and just enjoying each others company!

Here are my eats from last night..

This dip is magical. My friend Tiffany makes and it’s a buffalo chicken dip. Oh my gosh it’s addictive. It literally lasted maybe 10 minutes before it was completely gone. I took a little bit so I wouldn’t over indulge.

From top left corner- a delicious pasta salad that a neighbor brought over for us!! How sweet right? then there’s a small scoop of macaroni and cheese, some greenbean and corn casserole, a small piece of garlic bread, salad, pot roast with some horseradish sauce.

Yumm! Delicious! But I got full so fast..here was what I wasn’t able to eat.

I get way too excited about food and want to try everything.

At least I didn’t stuff myself. I made sure to listen to my body and stop as soon as I was full. Which was pretty quick!

For dessert, my wonderful husband made this:

Get this: Hazelnut cheesecake with a pistachio cream. Yep. My husband ladies and gentleman. Recipe to come!

We always meet at our friend’s Jim and Joyce’s house. They, along with another couple lead our Wednesday night group. Joyce is an undiscovered Martha Stewart if I ever saw one.

Beautiful right?! I hope when we finally own a home, I can decorate the way she does! It was a great night, with great friends. I love our small group! :)

I just need to finish Christmas shopping for Adam, pick up something for my Dad and get Christmas cards. I am determined to finish shopping today! Wish me luck. Guys are SO hard to shop for!

I am SO excited for tonight, we’re off to The Boheme, a beautiful restaurant in downtown Orlando located in the Grand Bohemian hotel (where Adam and I stayed our wedding night). We’re going with Adam’s family since my mother-in-law’s birthday was yesterday and I am graduating Saturday! I am so excited. Time to break out the little black dress. :)

A Nothing Kind Of Day.

I am not the girl I used to be that is for sure.

I used to easily sit around all day in my pajamas, sure a little stir crazy but enjoying it nonetheless. Today, I was going crazy! By two I was wishing I had more energy. Sitting around just steals away my energy. You’d think it would give me energy, right? Nope. I felt so drained all day!

Oh well, I know now that I need to find things to occupy me. Maybe instead of writing in my p.j.’s at home. Drive to my favorite coffee shop. Just getting some sun!

Tonight was a REAL treat!!!

Skyline chili..a moment please……..

They have a restaurant back home and it’s amazing. It’s not like your normal everyday chili, this is the chili they use chocolate in. I swear you don’t taste it but it has such a unique and yummy flavor!! The stats on this weren’t too bad either. the bowl was a total of 580 calories and made with ingredients I actually understood. ;) I ate 1/3 of this package on two all-natural hot dogs. It’s the most disturbing thing when you finally start reading labels!! Hot dogs are especially daunting. When organic hot dogs are 6 dollars a pack(ouch)! I was losing hope when I say the words “all natural” on a package. The ingredients list checked out and although they weren’t certified organic, their were no hormones added and every ingredient was natural. PTL!

Piled onto some Publix bakery hotdog buns with cheddar jack sprinkled on top.

I also cooked up a panful of veggies and made a large pile on my plate. I ate 90% of the veggies before I even took the first bite of chili dog.

Holy. Yum.

It tasted exactly like it does in the restaurant. SO flippin’ good. This may be my new favorite “treat” meal!

For dessert, I had another repeat. Two cookies with milk! I swear it’s a fave.

Thanks for chugging along with me on this boring day. Tomorrow though, tomorrow I am SO excited for because I am getting my hair done!! I mean like highlights, cut, the whole enchilada. It’s so fun to be a girl, especially when it means being pampered. I may even splurge on a mani/pedi for my graduation saturday!

I got my cap and gown today!! It’s so surreal I don’t feel like it’s really happening. But I can’t wait!

I’m off to bed, I have to get my quick run in tomorrow morning before my appointment.
