Leo cheers me up

You know what Leo pictures mean..short post. He cheers me up though, maybe he will cheer you up too?

He just got continually more depressed as I snapped away!

I feel better already, thanks Leo!
For dinner, I had a beer.

Oh, and pizza too.

We bought some Italian five-grain dough and cut in half, per usual.

Topped mine with some chopped pancetta, onions, mozzy, and a little truffle oil(Don’t worry, see the green!!). Mmmm! Can’t wait for leftovers at lunchtime. Yum!
I then picked up my good friend and former roomie, Mandy. She requested Jeremiah’s..okay fine, pull my arm!
I got the gelati which is vanilla ice cream with italian ice. I chose the pomegranate and sour apple italian ice. Yum!

We then headed out to meet some friends and watch the Bachelor. Drama, drama, drama. Those girls are crazy!
I may also have had a small piece of brownie or two. The sweet tooth reared it’s ugly head tonight!
I am off to bed.
Hopefully, I will be announcing my new site debuting tomorrow!! Still have to tweak a little. So excited to unveil it to you all!

The Last 36 hours
When I got home from marathon spectating, the numbness wore off and the lack of sleep hit me like a ton of bricks. I felt like a zombie!
The hunger also hit me hard. Adam was so sweet and offered to make me lunch! He also took pictures of it for me.
I had some of this delicious V8 Butternut Squash soup. So delicious!

Along with a grilled cheese using whole wheat bread and reduced fat provolone!

I then passed out on the couch. I woke up a couple of times to find that he had put Friends(my favorite show ever) on for me before he went to get work done at a coffee shop. I slept for three hours!
I woke up already ready for something else. I knew with my increased exercise, lack of sleep, and the cold weather I was really risking a cold(I can already feel one slowly brewing..eek.) I decided to pull out the big guns with a green smoothie.
I blended;
-Handful of spinach
-Peaches
-Mangoes
-Plain yogurt
-Nonfat Milk
-Amazing Meal

Take that sickness, in your face! Or..please go away?
Anyways, Adam stopped at Publix on his way home and made me a delicious meal!
Mashed sweet potatoes, organic chicken(thanks babe!!) with a blue cheese, spinach, onion, and mustard topping as well as a lot of fresh green beans! Yum!

I ate with a little cranberry H2O.

I slept for about nine much-needed hours and woke up ready to eat a delicious breakfast.
I know this looks boring but I LOVE cereal!

I mixed some Post banana nut cereal with some Kashi warm cinnamon heart to heart. They were SO delicious together! I also broke up this large banana into the mix. Yum!
Lunch was a whole wheat pita toasted and then stuffed with Sabras roasted red pepper hummus, fresh broccoli, carrots, spring mix, one slice of reduced fat provolone and balsamic. Yummm!

With sweet potato circles on the side. I find that when they are just cut in circles, they crisp a little better.

These are so delicious. I just mixed a little EVOO with chili powder, garlic powder, onion powder, and a little kosher salt and mixed all of the sweet potato circles in the mix. Then baked at 400 for about 45 minutes. I would try 375 next time, but they were yummy!
After I digested I head out for my two miles on the plan for today. I tried to bring Leo with me, but he made it about a quarter of a mile and then had enough, I brought him back to the apartment and finished the rest of my run. It went really well, I felt great!
When I got home I made a light green monster? Although I did not have anymore spinach.
Grocery run tomorrow! It’s amazing how fast our fridge empties.

We were seriously lacking groceries so we broke this out for dinner. Adam bought it last week because we had a coupon.

I checked the stats and while nutritionally it seemed not too bad, the ingredients list left me disappointed. High fructose corn syrup? Seriously? We agreed we wouldn’t be buying this again!

Our appetizer was half of this bag of edamame steamed, and then sprinkled with kosher salt.

I added the rest of our fresh broccoli into the pan to add a little freshness and bulk it up some.

This was my bowl.

After I ate, I headed out for girl’s night at my former roommate and best friend, Mandy’s house. Mandy loves chocolate and I was having a serious sweet craving. I texted Mandy to see if I needed to eat dessert before and this is pretty much how it went:
Me- Is there going to be chocolate tonight??
Mandy- It’s Mandy!!
In a very, duh Katy kind of fashion. I can always count on her to provide the chocolate!
We baked up a box of Ghiradelli boxed brownies, oh yeah..the good stuff!

With a nice cold glass of milk! Mmmm..I also had another small piece.
I am now home about to crawl and bed and continue on with “New Moon”. I am more then half-way done and can’t wait to finish! I have already seen the movie so I can’t wait to get to Eclipse. I also have so many other books I cannot wait to read!
Oh and one important note..I forgot to mention that the Oikos giveaway is open to U.S. residents ONLY! I am SO sorry to my international friends!

Us vs. The Cookie Dough
For lunch Adam surprised me with Annie..well, Annie’s organic mac and cheese.
What’s a classic partnership with mac and cheese? Well, hotdogs..duh!

I managed to make this a colorful meal by munching on carrots and half a bag of cooked spinach. Mmmm..
I cooked the spinach with a very small amount of EVOO, onion powder, garlic powder, and S&P.

We used the all-natural hotdogs I had scrounged for at the grocery store. I never read labels before but I got chills, hotdog is the notorious “stuff what you can into a meat product” item. The organic meat hotdogs were three times the price of regular and well, Adam is harder to convince on that subject and I couldn’t blame him. For a dollar more I found an all-natural hotdog that, while not organic, did not use hormones in their meat and had some pretty good stats. Lesson learned: READ LABELS!!! You can find decent alternatives to notoriously “bad” foods. Plus these hotdogs were DELICIOUS! Sooo good.
I was going to meet Adam at a coffee shop down the street but given the torrential downpour, I stayed home and rested. I did not sleep well last night AT ALL. I had read once that alcohol may keep you awake, I researched and found this on Women’s Health magazine’s website which told me that while alcohol makes you drowsy, it keeps you from falling into deeper levels of sleep. Hence, why I was tossing and turning all night! I only had a couple glasses of wine and a glass of prosecco but that’s more then I usually have at once and I think it was definitely a factor.
For dinner, we headed to Adam’s parents house. I spent time with my mother-in-law Kay, while Adam headed out to do some work.
I had a sweet potato with a little butter and S&P, green beans with slivered almonds, mushrooms, and steak. Steak isn’t my favorite, I ate about half of this. I love filet, but most steak is too fatty for me. I just had the texture. This was delicious, but I still only need a few bites of it.

When the boys headed out, Kay and I set out to conquer this:

My mom made this for them, it’s a cookie mix. She then hand wrote the recipe out.

She found this on Food Network’s website. There were a whole bunch of recipes, cute huh?
Problem is, they sort of described the directions wrong. Or they didn’t explain them enough. See, there is cocoa powder in the mix. Well, they called for Dutch-process cocoa powder which has baking powder included. Most people just use regular and I’m not sure if my mom did this but the first batch didn’t spread or rise AT ALL. They ended up being “Super Chunk Balls” which sound fun, but they were too crumbly. I googled(TGFG..thank goodness for Google) and found the reviews which told me that lots of people had the same issue. The dough was SO dry and dame out crumbly.
I added another egg and a splash of milk, if you’re a baker you know that you mix the wet first and the dry first and then usually combine in some order. So this was risky, but it was that or stick with what we had which were yummy, but missing something.
The second batch was SUPER tasty, even if they didn’t look too appetizing.

Kay and I then watched (500) Days Of Summer:

I LOVED this movie! The music, first of all, LOVE! I need this soundtrack. It’s also very different, which I really like but not done in a cheesy way at all. It reminded me of one of my favorite movies, Garden State. Although they were nothing alike, if that makes sense. Just very creative and funny. I love Zooey Deschanel too. I highly recommend this movie!
I am now typing from the dining room table. Aka the “office/dining room/flower holder” Adam bought me flowers, he apologized that they were carnations but there are some daisies in there. Either way, he bought me flowers and no matter what kind they are I am so thankful.

One of my goals is to do blog work here so that I am not always on the computer, which can happen when I blog from the couch, which I usually do. This will help me focus.
So yay.
Oh and tomorrow is my Dad’s birthday!

A Monster of Green
Today, when noon hit, I decided I wasn’t quite hungry for lunch but I definitely needed a pick-me-up.

Enter: A monster of green.

In this delicious green monster I had.
-1 packet Pom/Mango Amazing meal
(I got a bunch of packets for Christmas.
)

-Mangoes
-Strawberries
-Ground Flax
-Soymilk
-Plain fat free yogurt
-One banana
The amazing meal is a bit chalky, but adding more mangoes made it delicious. It filled me up and definitely gave me the boost I needed!
For my actual lunch, when Adam got home a couple hours later, I had a smaller lunch thanks to my awesome GM.

I had two small whole wheat pitas dipped in some Sabra’s roasted red pepper hummus and banana. Perfect and yummy. It’s also helping us keep to our “eating what we have” goal.
A couple hours later, after working on the new site, we got ready to head out for my three-miler that was on the plan. I got to try out my new SpiBelt (thank you, Adam Santa!)

The lighting wasn’t great, but it’s okay..I had my belt!

I was so excited, I had to dance.

My three miles went well, Adam ran with me a bit but mostly just walked when I walked. Gosh, I hope this gets easier!
I noticed I felt stronger on my run, but still it’s baby steps! I can’t wait until I can reach 6 miles, let alone 10! I can’t wait to conquer longer distances!
Call me crazy.
I really liked the SpiBelt, It held my phone in place wonderfully as I ran and I didn’t have to mess or fuss with it once which left me to focus on the running at hand. I am happy with it. The dancing may continue!
You’re catching me at the beginning of my racing career, I have run on and off for the last few years but I am getting serious about it now.
When I got back, I fueled the best way I know how right after the holidays.

I iced while munching on a small glass of fat-free organic milk and a gingerbread leg.

I spent some time cleaning and trying to organize our Christmas presents, I will show some spotlights tomorrow!
Then, we made dinner.

A small plate of Barilla Plus farfalle with some olive oil and garlic tomato sauce. Yum!
I made us salads, but sadly I was out of my goddess dressing!
I decided to make my own dressing by mixing:
-About a tablespoon dijon
-Balsamic vinegar
-White wine vinegar
-Olive oil
-S&P to taste
-Whisk everything but the olive oil until the very end and then slowly add the oil as you whisk vigorously. Then pour over salad and enjoy!

Mmm..for dessert we heated up these small sweet waffles from Whole Foods and drizzled a little Nutella on top.
This is what happens when you leave your dessert alone with a pastry chef. Thanks Adam.

I also had half of the caramel.

I had this with a small glass of fat-free milk (and maybe had another ginger bread leg
).
I am off to work on more cleaning!

Infusion Tea-licious
Sunday started out as most Sundays do in the Hill household..church! I really love our church, it’s smaller and more intimate. They are very focused on community building and are very good at that as well. We went to a different church back home for Christmas Eve service and it made me realize how much I really love ours here.
Breakfast was my boring bowl of Kashi H2H and GoLean crunch. Yum. I apologize for the dullness, but I really love cereal. It was quick, easy and filling.

On my way to church I saw a very exciting message from Anne P., she was coming into town for a bit! I ended up being able to meet her and Megan for a later lunch at Infusion Tea.

This was my second time there, but I really need to eat here more often. I am never disappointed.

It was so fun to finally meet Anne and to hang out with Megan for the second time.

Wonderful Chai tea latte.

Then our food came!
I got a combo with 1/2 a serving of their yummy chili and half a “Concorde” sandwich.

My sandwich had hummus, tabouleh, organic field greens, sunflower seeds and a balsamic glaze.

Absolutely awesome sandwich. The chili was also super delicious! Perfect for the cold weather here in Orlando.
We talked and ate for a couple of hours and then headed to get some fro-yo at CeFiore, per Megan’s recommendation.
I had samples of the acai berry yogurt, and the original flavor.


I settled on the acai flavor, so delicious. Now which toppings to choose?


Our creations. Mine is the one with the pink yogurt in the middle! I had mangoes, kiwi and pom arils topping mine. SO yummy!!

Then we headed to the outlets, which took FOREVER!! I think the entire city of Orlando is shopping right now. I drove separately and I was only there for about twenty minutes to visit LuLuLemon, and then head home. It took 30 minutes alone to get out of the garage! It was mad chaos. I was driving for so long.
I was SO happy to get home where Adam had started dinner. He had sweet potatoes in the oven and I cooked myself up a large handful of spinach (which turned into this measly pile), as well as a spicy black bean burger I put on top of a piece of whole wheat bread with some organic ketchup. Yum!

Dessert was a small piece of cake and a few pieces of Christmas candy. Chocolaty heaven!

I used my small plates for dinner and dessert and really does help me to eat less. I feel like I am eating so much more when on a huge plate it would look measly!
I am now off to relax and head to bed to read some more Twilight, I am way behind on this trend. I tried to hold back but couldn’t any longer. I have SO many good books to read so I want to make it through this one.

Home for the holidays!
Well, I am finally home for Christmas!
Our drive was all right, except I think all of the crazies are out driving and some of them are driving semis!! But we made it safely.
Along the way Adam and I shared this..Adam ate half, I had a small bite(more for later!)

I commented on one of Larabar’s holiday blog posts and they sent me some free samples of Larabar! They were giving them away for a few days and I was one of the readers they sent them too! I love Larabar and this is definitely my favorite flavor! It’s a perfect mix of peanut butter and jelly. Adam was excited to try this flavor and liked it, he wasn’t crazy about the dryness of of the texture, but I am so used to it. I just love them.
Then we stopped at the healthiest fast food joint we knew we’d pass. Chick-fil-a!
I ordered the chargrilled chicken sandwich which totaled to only 270 calories and over 20 grams of protein. I also had a side salad which had 60 calories with one serving of light Italian dressing. My meal totaled 345 calories! Not bad at all.

When we finally arrived around 8:30 I ate some food at my mom’s house.

Some roasted chicken, avocado slices, a couple pieces of bread and some potato salad.
I also sipped on a glass of wine.

For dessert I had a Christmas cookie, lemon & ricotta. Plus half of this blackberry cheesecake.

After we ate and hung out for a coupe hours, we headed to our hotel.
Our hotel is very nice, I love our room! Here’s the tour..

They have Tazo tea and starbucks coffee! Thank goodness.

They also have a fridge, so Adam will probably head out in the morning to get some things for breakfast.

I now have to head to the lobby to send this since we don’t have free wifi. :-\ But then I will be heading right back to head to bed! I am SO tired!

Enjoying some Communitea
Tonight some wonderful girls and I headed to Dandelion Communitea, a local vegetarian restaurant here in Orlando.
Those wonderful girls just happened to be Ashley, Meghann and Ryan!
I ordered the bowl of chili which came with blue corn chips.

To drink, I chose the iced tea of the day. Their were actually two options and I first chose the buttercup flavor, which definitely had a buttery note.

The chili was delicious but more like a stew, and filled me up very quickly! The tea? Not my favorite. I drank it just so I could grab some lemon green tea, but that ended up tasting very bitter and a little like lemon cleaner. :-\ I hear the tea is usually great so don’t let that steer you away!
This was my first time at Dandelion and it’s adorable! I could see coming here and bringing my laptop or a good book easily. It was so cute, I wish I had taken more pictures!
It was so great to just relax and talk with the girls. I am so thankful for new friends and I love just getting to know them better!
When I got home I finally dragged all of my Christmas gifts up and then sat down to enjoy some sweets!

Christmas cookies of course!
I sipped on a little organic low-fat milk as well.

I am about to brew some of my own tea and try and get these gifts wrapped before Adam gets home from his dinner tonight!

I love Wednesday nights.
First of all, thank you SO much for all of your sweet comments about my hair! As a girl, it’s always nice to hear our hair looks good after we get it done so thank you again. I really appreciate all of your comments on my posts, it means so much to me to hear from you guys!
Well, last night was so fun! Our Wednesday night group had a Christmas party and it was just a fun time relaxing, eating great food and just enjoying each others company!
Here are my eats from last night..

This dip is magical. My friend Tiffany makes and it’s a buffalo chicken dip. Oh my gosh it’s addictive. It literally lasted maybe 10 minutes before it was completely gone. I took a little bit so I wouldn’t over indulge.

I also had a few unpictured wheat thins with cream cheese and jam. Yum!

Feast, I tell you, a feast!

From top left corner- a delicious pasta salad that a neighbor brought over for us!! How sweet right? then there’s a small scoop of macaroni and cheese, some greenbean and corn casserole, a small piece of garlic bread, salad, pot roast with some horseradish sauce.
Yumm! Delicious! But I got full so fast..here was what I wasn’t able to eat.

I get way too excited about food and want to try everything.
At least I didn’t stuff myself. I made sure to listen to my body and stop as soon as I was full. Which was pretty quick!
For dessert, my wonderful husband made this:

Get this: Hazelnut cheesecake with a pistachio cream. Yep. My husband ladies and gentleman. Recipe to come!
We always meet at our friend’s Jim and Joyce’s house. They, along with another couple lead our Wednesday night group. Joyce is an undiscovered Martha Stewart if I ever saw one.

This morning, I had a bowl of H2H and GoLean Crunch.

I am off to get ready and head out to see my friend Nikki and her brand new little boy, then I need to head to the mall. I just need to finish Christmas shopping for Adam, pick up something for my Dad and get Christmas cards. I am determined to finish shopping today! Wish me luck. Guys are SO hard to shop for!
I am SO excited for tonight, we’re off to The Boheme, a beautiful restaurant in downtown Orlando located in the Grand Bohemian hotel (where Adam and I stayed our wedding night). We’re going with Adam’s family since my mother-in-law’s birthday was yesterday and I am graduating Saturday! I am so excited. Time to break out the little black dress.

Look out New York ’cause here I come!
Sorry for the lack of post, I am a busy busy bee trying to get ready to head to to NYC tomorrow! AH! Impromptu traveling is exactly as stressful as it sounds!
Trust me..
Anyways, onto my day..

Adam made me a yummy mix of:
-1 egg
-1 egg white
-Some Jimmy Dean sausage breakfast skillets(potatoes, peppers, onions, sausage) that Adam was already preparing, not the healthiest but yummy and it’s Sunday!
I also had a clementine on the side!
We headed to church where we heard the most amazing story by a man from Ethiopia, his name is Bekele Shanko. If you want to hear an absolutely incredible story, e-mail me! I would love to tell you all about it!
After church we ran around for about four hours, well I pretty much dragged Adam around, trying to find warmer clothes I could take to NYC. I was getting stressed because I wanted to find cute, flat boots but it was hard to find my size, and they make those boots so darn narrow! My poor wide feet would not survive New york in those. Alas, I am new boot-less, but I got a few pieces that will help me stay warm, you will see them this week!
For lunch, we stopped at “The Burger Bar” in the Seminole Town Center in nearby Sanford. I don’t eat red meat much, but these burgers were super fresh and made on the spot. They were also ginormous, I didn’t need a side this was the whole meal!
I ordered the “Dirty Martini” which was a blackened burger with sliced black olives, red onion, lettuce, and crumbled blue cheese. Yummm.

I dove right into dessert..yes, more edgies. Get used to it. I have lots of these!
I ate the left one and Adam and I shared the one on the right. Need I say it? Amazing. Still.

I love milk with chocolate desserts! I had a glass of skim on the side.

A few hours later, I had some of my probiotic yogurt by Stonyfield! Love this.

I am also nursing this cup of bedtime tea and a little agave.

I also know a couple hershey kisses made their way without a picture being taken. I have been craving sweets more lately. Not a good thing.
Tomorrow is going to be crazyyyyyy! I am praying that the planes I fly on happen to be a couple of the 100+ planes that are now equipped with wi-fi so I can get some work done on the plane! Other wise I have a stash of chick flicks for both flights.
I am flying into Atlanta for about 30 minutes, and then I am heading to New York! It’s going to be a long day, but I will be ready.
I am going to do my best to do a morning and night post while in New York, but I may be limited to one post depending on what we do! Either way I can’t wait to take lots of pictures for you and to report on my trip! I am hoping we can squeeze into Serendipity since I have never been, and hopefully head to the Food Network building in Chelsea.
My mom and sister lived in New York in 2007, my sister ended moving back after they moved home so I won’t be doing most of the touristy things since I have done them many times before. I am hoping to explore more and find other fun things to check out!
I was hoping to start training Tuesday for the half-marathon, but I am so not used to running in 30-degree weather, so we’ll see. I may just do some inside exercises and start training when I get home. We’ll see. I don’t have warm running clothes, but I am packing what I do have and hopefully I can make it work!
Any tips on carrying a DSLR around a large city? I have a cute bag but it’s a little bulky. I may just use my bag as my purse and carry everything in there. Thoughts?

EDIT: I almost forgot to mention a very very very HAPPY BIRTHDAY to RYAN!! YAY! I hope it was wonderful!
