The Last 36 hours

When I got home from marathon spectating, the numbness wore off and the lack of sleep hit me like a ton of bricks. I felt like a zombie!

The hunger also hit me hard. Adam was so sweet and offered to make me lunch! He also took pictures of it for me.

I had some of this delicious V8 Butternut Squash soup. So delicious!

Along with a grilled cheese using whole wheat bread and reduced fat provolone!

I then passed out on the couch. I woke up a couple of times to find that he had put Friends(my favorite show ever) on for me before he went to get work done at a coffee shop. I slept for three hours!

I woke up already ready for something else. I knew with my increased exercise, lack of sleep, and the cold weather I was really risking a cold(I can already feel one slowly brewing..eek.) I decided to pull out the big guns with a green smoothie.

I blended;

-Handful of spinach

-Peaches

-Mangoes

-Plain yogurt

-Nonfat Milk

-Amazing Meal

Anyways, Adam stopped at Publix on his way home and made me a delicious meal!

Mashed sweet potatoes, organic chicken(thanks babe!!) with a blue cheese, spinach, onion, and mustard topping as well as a lot of fresh green beans! Yum!

I slept for about nine much-needed hours and woke up ready to eat a delicious breakfast.

I know this looks boring but I LOVE cereal!

I mixed some Post banana nut cereal with some Kashi warm cinnamon heart to heart. They were SO delicious together! I also broke up this large banana into the mix. Yum!

Lunch was a whole wheat pita toasted and then stuffed with Sabras roasted red pepper hummus, fresh broccoli, carrots, spring mix, one slice of reduced fat provolone and balsamic. Yummm!

With sweet potato circles on the side. I find that when they are just cut in circles, they crisp a little better.

These are so delicious. I just mixed a little EVOO with chili powder, garlic powder, onion powder, and a little kosher salt and mixed all of the sweet potato circles in the mix. Then baked at 400 for about 45 minutes. I would try 375 next time, but they were yummy!

After I digested I head out for my two miles on the plan for today. I tried to bring Leo with me, but he made it about a quarter of a mile and then had enough, I brought him back to the apartment and finished the rest of my run. It went really well, I felt great!

When I got home I made a light green monster? Although I did not have anymore spinach. :( Grocery run tomorrow! It’s amazing how fast our fridge empties.

We were seriously lacking groceries so we broke this out for dinner. Adam bought it last week because we had a coupon.

I checked the stats and while nutritionally it seemed not too bad, the ingredients list left me disappointed. High fructose corn syrup? Seriously? We agreed we wouldn’t be buying this again!

Our appetizer was half of this bag of edamame steamed, and then sprinkled with kosher salt.

I added the rest of our fresh broccoli into the pan to add a little freshness and bulk it up some.

After I ate, I headed out for girl’s night at my former roommate and best friend, Mandy’s house. Mandy loves chocolate and I was having a serious sweet craving. I texted Mandy to see if I needed to eat dessert before and this is pretty much how it went:

Me- Is there going to be chocolate tonight?? ;) ;)

Mandy- It’s Mandy!! :)

In a very, duh Katy kind of fashion. I can always count on her to provide the chocolate!

We baked up a box of Ghiradelli boxed brownies, oh yeah..the good stuff! :)

With a nice cold glass of milk! Mmmm..I also had another small piece. :)

I am now home about to crawl and bed and continue on with “New Moon”. I am more then half-way done and can’t wait to finish! I have already seen the movie so I can’t wait to get to Eclipse. I also have so many other books I cannot wait to read!

The Final Meal of 2009

Well, my final meal of the year was a four-courser and I delighted in it to the fullest!

Before I dive into the feast, I will recap my breakfast this morning.

I could NOT sleep for the life of me last night, I tossed and turned SO much! A nap may be in store very very soon!

Breakfast this morning was…what I could find. I wanted eggs but we were out. :( It’s the beginning of the month so our budget is replenished. Grocery shopping will commence this weekend!

I had a half-cheese sammie. I toasted a piece of bread and spread a little smart balance on but once I realized we didn’t have eggs, I microed it with a slice of reduced-fat provolone cheese and folded in half. I also had three pieces of turkey bacon and a clementine. This clementine was pretty dry though and I didn’t eat much of it.

I did drink the yummy glass of 1/2 white grape/pomegranate juice and 1/2 H2O though!

Onto last night! We met up with my in-laws at Roy’s. I love the atmosphere of this place. It’s Hawaiian fusion cuisine. I love it!

One of the things I love about this place is that instead of bread, they serve complimentary edamame! :) It’s salted and, according to their website also has a little sugar and japanese red pepper seasoning. So yummy with a slightly spicy kick. I snacked on a lot of these. We ordered another plate after this one. :)

My first drink was my signature favorite, an amaretto sour. It’s super sweet and tastes just like candy. I limited myself to this one, since it was so large!

With dinner, we brought our own wine. (Great money saving tip) It’s only a $15 uncorking fee! Adam brought back tons of wine when he lived in Italy and times he visited, this is at least worth $100 and he spent probably the equivalent of $40 on it. Pretty good deal!

We drank a 2003 Barolo. Oh..my..gosh. Unbelievably good! The aromatics were incredible, and it was just the perfect red wine. Not too heavy for the seafood we ate and not too dry either. It was wonderful.

They had a special menu for New Year’s Eve and a welcome note in the menu for the evening..

We got to choose one item from four sections. I started with the crispy duck spring rolls. The four of us shared mostly everything!

I ate two of these.

Adam ordered froie gras which is goose liver. I have never had it before and these days I won’t say no to trying much. It was amazingly buttery with a light crispy sear on it. Really good.

This was my sample plate..I had some shrimp with a little bit of white cheddar grits with roasted pepper as well as half a duck dumpling.

I chose the lobster bisque which was a lot thinner then most bisques BUT it also had large chunks of lobster which you won’t find in many lobster bisques. It was good but I barely made a dent in it. It was made with chive oil as well as applewood smoked bacon which I got bits of as I ate, the salty smokiness worked so well with the cream and buttery taste of the lobster.

Adam ordered a mushroom consomme which was so meaty and delicious.

For my main course I ordered the “Mochi dusted Hawaiian Opakapaka” which was served with a sweet potato puree, bok choy, and carrots in a “macadamia nut garlic Meuniere sauce”.

According to “The Gutsy Gourmet” a meuinere sauce is brown butter, parsley, salt, and fresh lemon juice.

It was incredibly good.

The fish was a very mild, pacific crimson snapper. The sweet potato and bok choy sold me on this dish and nothing on this plate dissapointed. I couldn’t make a huge dent on it, because I was getting so stuffed! I ate about 1/3 of the fish, all of the sweet potato, one half of the bok choy and the carrots. The sauce was delicious.

I also had a bite of lobster risotto. Yum!

We were feeling sleepy from all of the food, so before dessert I ordered an espresso..mmm..

For dessert, I chose..

“The Study of Chocolate Decadence”

I mean, can you say no to a dessert with a name like that?

A chocolate truffle, a chocolate torte with a peanut butter center, and both white and dark chocolate fudge in a raspberry sauce.

I ate half each. It was SO rich!

I also had a few bites of Adam’s dessert..

“A Macadamia Nut Financier Cake” which had vanilla ice cream, and a fig syrup.

His was super delicious as well, I enjoyed a taste of the cake and fig syrup as well as a few bites of his ice cream. So nice of him to share! ;)

After dinner we headed to a local restaurant that Adam’s father and brother play at and I had a glass of prosecco to celebrate the New Year.

We went to a party afterwards but we left when some of our friends did since we didn’t know many people there and were home by 11:30.

We were exhausted and I was happy to be with Leo and my husband and watch Friends. :) We watched the ball drop and stayed up a little bit longer.

What a great last day of 2009. The first day of 2010 is feeling like a day of rest, hey I have a WHOLE YEAR to get ready for!! :)

A Night With The Girls

So right after I posted I headed to the gym to get my two more miles in from my training plan.

I ran 2.00 miles in 25:30 with three minutes warm-up and cool down. Wednesday I have three miles on the plan that I will get in before we leave for home. I am SO excited to almost be heading home for Christmas! :)

Lunch was delicious!! I decided to have a little fun with two clementines as I waited for last nights pizza leftovers to heat up.

For lunch I had two pieces of the roasted veggie flatbread and three pieces of the blue cheese, mozzarella and fig pizza. Delish!

After I showered and got ready I headed out for more Christmas shopping. Plus this little beauty.

Enter my new favorite non-caffeinated Starbuck’s drink: The Caramel Apple Spice. It’s basically a very yummy apple cider with a little bit of whipped cream and a caramel drizzle on top. To die for, it’s so delicious. I enjoyed every last sip of my tall sized winter drink.

For dinner I was craving two things: A salad and sweet potato.

Wish granted!! I had a sweet potato with some smart balance and some S&P along with a salad of spinach greens, carrots, blue cheese crumbles and some goddess dressing. Yum!

I had a great time tonight catching up with some of best girlfriends! I headed over to my friend Nikki’s place to hang out with some of my friends. Nikki just had a beautiful baby boy and it was fun just enjoying being around him and relaxing with the girls. I received a chocolate cake from my mother-in-law so I brought it over to enjoy with the girls. I had one piece at the beginning of the night and went back for another. They were small pieces, but once that sweet tooth starts going it’s hard to stop!

There will be a note placed on it tomorrow “TAKE TO WORK”, usually when we have a lot of sweets leftover we send it to his work. I did enjoy indulging in a some of this though. Publix makes amazing chocolate cake. This was smaller then looks but it’s very sweet, you don’t need much!

I was starving when I got home still, so I made two egg whites to try and get some more protein in.

I know I haven’t run too many miles yet, but I can already tell my appetite is growing. That’s what I love/hate about working out, you know your metabolism is working harder but it also makes you hungrier! I just want to snack! Oy..it’s all about moderation. Which has been hard lately. ‘Tis the season? :-\

I am off to bed, busy day tomorrow including my first photo shoot ever!! Wish I had a better lens, but it will be fun. I am doing it as a favor for a friend so it will be fun and relaxed. Plus I know the last thing on my Christmas list for Adam and then wrapping! Tomorrow is our last full day in town. It’s almost time to go home! Yay!!
