Oh, Christmas tree!

Today we set out for some Christmas cheer. I am a real Christmas tree kind of girl. I can never use a fake one, unless I really have to one day for whatever reason. At first, I wanted to wait until next weekend but having a tree in the house just makes me feel better and for the final stretch of my internship(one more week!) I needed all the cheer I could get. :) I remember coming home from school and plugging the tree right in and doing my homework by it just to smell the pine tree gloriousness! Onto the rest of my day..

First, a daily pic of Leo.

Looking like Eeyore.

Oh, bother.

We headed out to run errands which included stops at Ross, Michael’s, and Target to get some Christmas decorations. Then we headed to good ol’ Home Depot for our tree. You northerners get to chop yours down, we pick ours up at home improvement stores. It didn’t take long to find the right one.

We paid, and got it tied to our roof.

I had a little fun with my camera, I am sure the car behind us thought I was crazy. Or a spy..

Our tree couldn’t escape if he tried..

When we got home, I gave Leo a bath. Then put out some of our new decorations.

It’s fun to start building our holiday collections. I can’t wait to have a bigger home(note: not an apartment) to decorate. One day! For now our one bedroom apartment will have to make do. :)

Skinny tree, but perfect for it’s narrow spot.

For dinner, I picked up some kale and brussel sprouts and used some chickpeas from earlier and stuck all three in the oven to roast. Mmmmmm…I used my LARGE plate for this and it was filled up with goodies.

The brussel sprouts were drizzled with EVOO, S&P and paprika.

Same with the kale along with some garlic powder as well.

A little EVOO, S&P for the chickpeas.

All three went in the oven at 375. The kale took about 12 minutes, the brussels and chickpeas took about 25 minutes.

Together they made a super filling and satisfying meal!

I had done good sticking with mostly veggies today! I feel so much better already and know I am back on a healthy track. But I did share this giant bottle of beer with Adam, per his brother Nate’s recommendation.

“9″ beer! We picked it up a local gourmet market we love,

In a chilled mug. It was refreshing! It definitely had an apricot taste in the finish and was smooth, not bitter at all. I enjoyed it. :)

For dessert, some Ghiradelli semi-sweet chocolate chips.

Along with a bowl of raspberry sherbet. It was about 150 calories worth. Yum!

I’m getting hungry again, but it’s bed time. Hopefully a mug of tea will help fill me up and doze me to sleep! I’m off to finish my last week in my internship. PTL!!!!! I cannot wait for Friday afternoon to come. Luckily, I have Wednesday off(sort of). I am on campus for a seminar until noon and then have the rest of the day to myself!!! Aka to clean. ;)

Oh, pictures of the tree to come when we finish decorating! :)

Pumpkin Pros!

Welp, that was a fun night of pumpkiness! Before I talk about the pumpkin carving let’s back up..

For pre-workout fuel I ate a yummy mix of almond butter and Honeycrisp apples. I love Honeycrisp apples..and it seems they love us too..

Note to everyone..that HUGE jar of MaraNatha almond butter..only 6 bucks at Costco! Not kidding..

After that I headed to our apartment gym which leaves much to be desired. Oh well, it’s free! I had just taken a week off because I got hit bad with a cold when the cold front came through a week or so ago. I decided to keep it easy today just to be safe and I did thirty minutes on the elliptical. I was going to do abs but I pushed myself hard on the elliptical and did not feel great after. Once my stomach settled I had a smoothie:

This one had about a cup of spinach, four frozen whole strawberries, one banana, frozen mango, OJ, almond milk, flax, AMAZING GRASS and some POM juice. I wouldn’t call this a green monster, I can only put so much spinach into a magic bullet cup. One day I will own a VitaMix..one day..

Not as much green as it looked..swampy..

IMG_0018But yuuhhh-ummmm! :)

Dinner was mainly made by the hubs! He’s great..and can cook! His nickname in college was “Chef Adam” oh yes, I chose well! ;)

Pork was on sale so we had some of that marinated in a yummy asian marinade we threw together (soy, teriyaki, garlic, hoison, and a little light agave)along with brown rice and..as predictable as it is..more BS!! I mean..brussel sprouts! YAY! I mean YUMMMMM!

Then we got to work! I will show you how it went..in pictures! I will add commentary where needed..

IMG_0033

Mm yeah the big one was mine..I don’t know why I chose a heffer of a gourd..the hubs chose the one next to it first.

Mine definitely owns his.

I made a fat cat..wondering what I should name her..any suggestions?

Adam made the skull..overall I think we are pretty awesome at pumpkin carving. Or just had some awesome patterns to follow! I think it’s more the latter. ;)

As a reward for all the hardwork, I treated myself to some pumpkin pie ice cream. Perfect end to a fun night!

Now I MUST head off to bed. I need to work on getting eight hours of sleep. Caitlin’s post really convicted me that I really need to work on getting eight hours again! This 6 1/2-7 hours is NOT cutting it at work and not cutting it for my health and well-being!

Well I am off to sip on some tea and head to bed. :) Night everyone!
