The Last of 2009
I always think it’s so strange to stop and think, “Wow, it will never be 2009 again!”, it always blows my mind a little.
For breakfast:

I know..snooze..but I needed something quick and yummy and cereal is the man for the job..if cereal is a dude.
For lunch, I wanted something light, since tonight we are going to be enjoying a four-course meal!

Salad with spring mix and spinach, chickpeas, a little bit of Italian dressing and two large carrots on the side.

Munch, munch, munch!
For a little saltiness, I microed two pieces of turkey bacon. Mmmm!

This post is coming late because after lunch we drove to our favorite coffee shop to find out it closed at 1 P.M. for NYE. Oh well, we stopped for Starbucks and then decided to head home. I caused us to detour when I realized I didn’t have a cute outfit for New Years Eve! Can’t have that now, can we?
I ended up on a cute pair of black skinny jeans(on sale at Target) and a cute black blazer which I have wanted for a while now. I am still deciding on an undershirt.
Tonight we are meeting up with my in-laws to head to Roy’s restaurant. I LOVE Roy’s! Adam and I went there for Valentine’s day last year, tonight is fixed menu with four courses. Pictures and a recap tomorrow morning, I am sure we wont be home until after midnight!
Yesterday, while cleaning, I took pictures of some things we got for christmas and wanted to share.

Anthro has my heart, check out these two cups and saucers we received from my mom. SO cute!! Perfect for the blog.
Good thing I got a gift card from there..

..it came in this little guy. He’s so cute/weird I had to take a picture.
Or two.

Besides the one library book..check out what I got. I am SO excited. Right now I am reading “New Moon” but after that…
Again, so excited. My “read more” goal will be a lot easier to accomplish. Thanks mom and Adam!
I am off to finish getting ready for the evenings festivities. See you all in 2010!!

A Monster of Green
Today, when noon hit, I decided I wasn’t quite hungry for lunch but I definitely needed a pick-me-up.

Enter: A monster of green.

In this delicious green monster I had.
-1 packet Pom/Mango Amazing meal
(I got a bunch of packets for Christmas.
)

-Mangoes
-Strawberries
-Ground Flax
-Soymilk
-Plain fat free yogurt
-One banana
The amazing meal is a bit chalky, but adding more mangoes made it delicious. It filled me up and definitely gave me the boost I needed!
For my actual lunch, when Adam got home a couple hours later, I had a smaller lunch thanks to my awesome GM.

I had two small whole wheat pitas dipped in some Sabra’s roasted red pepper hummus and banana. Perfect and yummy. It’s also helping us keep to our “eating what we have” goal.
A couple hours later, after working on the new site, we got ready to head out for my three-miler that was on the plan. I got to try out my new SpiBelt (thank you, Adam Santa!)

The lighting wasn’t great, but it’s okay..I had my belt!

I was so excited, I had to dance.

My three miles went well, Adam ran with me a bit but mostly just walked when I walked. Gosh, I hope this gets easier!
I noticed I felt stronger on my run, but still it’s baby steps! I can’t wait until I can reach 6 miles, let alone 10! I can’t wait to conquer longer distances!
Call me crazy.
I really liked the SpiBelt, It held my phone in place wonderfully as I ran and I didn’t have to mess or fuss with it once which left me to focus on the running at hand. I am happy with it. The dancing may continue!
You’re catching me at the beginning of my racing career, I have run on and off for the last few years but I am getting serious about it now.
When I got back, I fueled the best way I know how right after the holidays.

I iced while munching on a small glass of fat-free organic milk and a gingerbread leg.

I spent some time cleaning and trying to organize our Christmas presents, I will show some spotlights tomorrow!
Then, we made dinner.

A small plate of Barilla Plus farfalle with some olive oil and garlic tomato sauce. Yum!
I made us salads, but sadly I was out of my goddess dressing!
I decided to make my own dressing by mixing:
-About a tablespoon dijon
-Balsamic vinegar
-White wine vinegar
-Olive oil
-S&P to taste
-Whisk everything but the olive oil until the very end and then slowly add the oil as you whisk vigorously. Then pour over salad and enjoy!

Mmm..for dessert we heated up these small sweet waffles from Whole Foods and drizzled a little Nutella on top.
This is what happens when you leave your dessert alone with a pastry chef. Thanks Adam.

I also had half of the caramel.

I had this with a small glass of fat-free milk (and maybe had another ginger bread leg
).
I am off to work on more cleaning!

New Year’s Goals
Okay, I don’t actually have 2,000 goals..but I do have goals for the new year!
To fuel for the morning, Adam made me breakfast!
I have a piece of whole wheat toast with a little smart balance, one egg and one egg white scrambled, and a clementine!

Mmm..I haven’t had coffee or tea yet this morning. I think I am going to brew some tea though.
Mmm..
As 2010 approaches, we all begin to think “ahh a new year, a time for resolutions.” To be honest, I hate resolutions. Okay, hate may be a strong word. I dislike them, a lot. Perhaps because my resolutions are never faithful to me. Or perhaps I am never faithful to my resolutions..
Instead, I would like to think of healthy goals to reach for. I have seen many other bloggers make their lists so here I go!
Katy’s 2010 Goals
-Have a consistent blogging schedule(this one’s for you guys
) and stick with it!
-Wake up no later then 7:30, which means go to bed no later then 11:30.
-Read a few hours a day, and don’t wait to read until 10 at night(cause when reading a good book, I could stay up past midnight..)
-Get serious with my training and plan the week ahead what days I am running and what days I am cross-training.
-Run for myself.
-Create a new recipe every week.
-Figure out what I want to do with my life.(
)
-Take at least two trips with my husband.
-Take at least three trips total.
-Attend at least two blogging conferences.
-Blog for fun, always for fun. I love writing and blogging and that you are on this journey with me!
2010 is going to be such a great year, I can feel it in my bones!!

My big announcement!!
Okay so tonight I didn’t bring my camera (total accident) so I don’t have pictures of my food.
Tonight we had an impromptu invite with friends to the same mexican restaurant I went to with my friend Mandy a few weeks ago.
I picked the healthiest options I could find: one chicken taco & a small salad. The salad turned out to have shredded cheese and sour cream(I wondered why they didn’t ask what dressing I wanted). I proceeded to scoop off the sour cream. Their wasn’t too much cheese but it was shredded lettuce and so nutritional value was nada really. I also had a chicken taco which wasn’t too bad. I also had a couple bites of Adam’s burrito it had a lot of cheese and just two bites made my stomach turn! Glad I chose mostly lettuce as my dinner.
I also had some chips and yummy salsa.
I tried to take pictures with my phone but they are just no bueno. So, instead, I will make my big announcement!
Oh and include some fun pictures of a cute puppy..

We took these while I sat outside working on something..*coughcough*..

It was such a gorgeous day here that I spent some time outside while working on(announcement time)..drumroll please..
My new self-hosted site!! That’s right, I am switching to a new host.
Okay, I know, so what??
Well, I am also changing the name of the blog!!
I found a name that really suits where this blog is heading and while I can’t tell you yet what it is just yet, I can tell you I should be debuting by February 1st!
A new look, a new name, a new site!! While it will still be the same blog, it’s getting a HUGE makeover.
I will keep the same format, but will work on adding new content, setting up some more giveaways/challenges, and finally filling out the FAQ section of this site!
How can you help? Message me any questions you have, even if you think they might be silly! I would love to answer any questions.
I will also be adding a recipe section and a half-marathon training tab to show you my training plan, and keep you updated on specific posts about training.
I can’t wait to make the switch and for you to all join me. I also can’t wait to tell you the new name, but that will have to wait until the switch..stay tuned!!

You’re getting warmer..
..to the big announcement!
I am very excited about it.
But first, the food..
I woke up with a few pieces of turkey bacon, two egg whites and a piece of whole wheat toast and raspberry spread.
I ate all but 1/4 of the piece of toast. This was super filling and delicious.
I LOVE turkey bacon, I grew up on it and to be honest I like it more then regular bacon because I am so used to it. It gets so super crispy and yummy.

When I got home I prepared a delicious lunch with a bunch of things I was craving. Gotta love when the bod craves nutritious foods!
I made a small sweet potato that I topped with the usual: a little smart balance and a little S&P. I wilted three large handfuls of spinach, and cooked up a spicy black bean burger.
Sorry I eat those a lot, I just LOVE them!! I also had a side of fresh carrot sticks.

Mmmm warm and yummy on a cold Florida day like today, it’s barely hitting the 50′s..don’t judge that is COLD for Florida!
I am off to get some work done and help clean the apartment. This place gets SO messy especially after traveling.

A Whole Lot Of Green
Adam and I just had a nice movie night, watching “The Hangover” it wasn’t as funny as I expected, I think because I heard for SO LONG how funny everyone thought it was. The husband enjoyed it greatly, I thought it was pretty fun but it didn’t live up to all the hype to me. Sad day, but still nice to have a movie night with Adam.
We went grocery shopping and stayed pretty close to budget! Success! It’ll definitely be an “eat what you have” sort of week. Basically, get creative and only eat what’s in your kitchen. I think we can do it.
We bought some produce, and some things for lunch. Of course I bought a bag of spinach and bananas. These are essentials in my weekly grocery list!
When we got home, we loved on Leo a bit. The boy and the husband are still developing their relationship.

Belly rubs earn brownie points.
For dinner? Exactly what I wanted..a whole bunch of green!! Since I had a heavier lunch, I wanted to balance it with a very light dinner.

It was so big I used one of our mixing bowls to hold it!

Delish nutrish. I broke up some carrot sticks and topped the salad with them.
I also added half a can of reduced-sodium garbanzo beans to add a little more bulk.
I topped the salad with about a tablespoon of goddess dressing(all I had left) plus some balsamic vinegar.
I couldn’t, for the life of me, get the beans and carrots to all stay on the top.

But it all made it into my tummy, the perfect light dinner!
Adam had salad too.

Along with his red meat and onions! At least I got him to eat some green.
For dessert, a tiny yet satisfying sliver of chocolate cake.

Tomorrow I am picking up friends from the airport and hopefully get this place clean. Also, hopefully I will be finding some jobs to apply to.
What’s the best job you’ve ever had? I think the job I enjoyed the most was being a youth ministry intern. It was so amazing, I got to be a kid again and it was my job!! SO fun to see the students grow and mature into awesome teens and to now see some going to college. Loved it!

Fun Things Coming in 2010
Isn’t it strange that we’re almost done with the first decade in the 21st century?! Crazy! I can’t wait to see what happens in the next ten, I have a pretty great feeling about the next decade.
After I posted I ran my 3-miler I had on the plan today on the treadmill. Then headed home to shower and get ready to get out of the house!
We are out of stock when it comes to food in our house, so we headed out for lunch! Having Adam home during the day is quite wonderful. I don’t feel so lonely!
We headed to one of my faves, Tijuana Flats.

We ordered our food and grabbed our array of hot sauces from their beautiful hot sauce bar.

I got four, the husband got five.
To eat, I ordered a chicken & bean burrito. “Power lite” which is low fat sour cream and low fat cheese.

My burrito came with onions, tomatoes and lettuce.
I was so ravenous I devoured this lunch. Nom nom nom.
It was a heavier meal, but all pretty good ingredients. I will just eat a lighter dinner.
After we ate, we headed next door to Barnie’s coffee shop where I ordered a green tea and I added a little honey to it.



I am so excited for the new year, I feel so many great things happening! Yay!
Mainly: A big announcement that I will announce sometime this week!
I can’t wait to tell you all, but you must be patient until then. No, I am not pregnant and no, I don’t have a book deal (I just started this blog..I’m not that good.
).
You will have to be patient!
As for now, it’s still 2009 and we are about to go blow the rest of our food budget of the year. It’s a measly amount, but we’ll make it stretch to Thursday..hopefully!

Boring Bowl
Well, it’s almost noon and I am still in my P.J.’s the hubs is home working since his office is closed all week(his building is part of the UCF campus) which is great for me!
I am going to run my three miles for the day and then probably head to one of our favorite coffee shops so I can blog, and he can work.
For breakfast, my cereal bowl.

I realized, cereal is to me what oats are to other bloggers.
Oats are to me, what cereal is to other bloggers. Great every once in a while. I hope that will change. But for now. My boring bowl of cereal will have to suffice.
Along with some coffee.

I am off to run my three miles and hopefully wake up. I feel so tired when I wake up! I don’t even drink a lot of coffee or tea in the morning. I just sip on my first cup and usually don’t finish.
Are you a morning person? I guess I’m not, oh how I wish I was!!

Infusion Tea-licious
Sunday started out as most Sundays do in the Hill household..church! I really love our church, it’s smaller and more intimate. They are very focused on community building and are very good at that as well. We went to a different church back home for Christmas Eve service and it made me realize how much I really love ours here.
Breakfast was my boring bowl of Kashi H2H and GoLean crunch. Yum. I apologize for the dullness, but I really love cereal. It was quick, easy and filling.

On my way to church I saw a very exciting message from Anne P., she was coming into town for a bit! I ended up being able to meet her and Megan for a later lunch at Infusion Tea.

This was my second time there, but I really need to eat here more often. I am never disappointed.

It was so fun to finally meet Anne and to hang out with Megan for the second time.

Wonderful Chai tea latte.

Then our food came!
I got a combo with 1/2 a serving of their yummy chili and half a “Concorde” sandwich.

My sandwich had hummus, tabouleh, organic field greens, sunflower seeds and a balsamic glaze.

Absolutely awesome sandwich. The chili was also super delicious! Perfect for the cold weather here in Orlando.
We talked and ate for a couple of hours and then headed to get some fro-yo at CeFiore, per Megan’s recommendation.
I had samples of the acai berry yogurt, and the original flavor.


I settled on the acai flavor, so delicious. Now which toppings to choose?


Our creations. Mine is the one with the pink yogurt in the middle! I had mangoes, kiwi and pom arils topping mine. SO yummy!!

Then we headed to the outlets, which took FOREVER!! I think the entire city of Orlando is shopping right now. I drove separately and I was only there for about twenty minutes to visit LuLuLemon, and then head home. It took 30 minutes alone to get out of the garage! It was mad chaos. I was driving for so long.
I was SO happy to get home where Adam had started dinner. He had sweet potatoes in the oven and I cooked myself up a large handful of spinach (which turned into this measly pile), as well as a spicy black bean burger I put on top of a piece of whole wheat bread with some organic ketchup. Yum!

Dessert was a small piece of cake and a few pieces of Christmas candy. Chocolaty heaven!

I used my small plates for dinner and dessert and really does help me to eat less. I feel like I am eating so much more when on a huge plate it would look measly!
I am now off to relax and head to bed to read some more Twilight, I am way behind on this trend. I tried to hold back but couldn’t any longer. I have SO many good books to read so I want to make it through this one.

Christmas #3
Well, we had Christmas with my family, my extended family and today we had Christmas with my new family!
First we woke up early to pack up. I had this first thing, yummy organic Stonyfield yogurt. I had the “Super Fruits” flavor which had pomegranate, raspberry and acai. Super delish!

We picked up my sister and took her to the airport on our way back to Orlando. On our way up we were super hungry so we hunted down a Dunkin’ Donuts.

I got my iced coffee with skim and sugar as well as a bagel with a little bit of butter. Yum!

A few hours later we finally made it to his parents house. I snacked on these sausage and cheese balls plus three more as well as some cashews.

I also sipped on some beer. I had about two 1/2 of these throughout the afternoon.

First we opened gifts and then we had a yummy early dinner!
My mother-in-law set up for our dinner which I was so excited about. We don’t usually eat on newspaper, don’t worry.

I started with this salad that I sprinkled blue cheese on as well as some italian vinaigrette, so yummy!

I had a very little bit of steak that the guys grilled up, but this is what got me excited.

Crab legs!! YUM!! Oh my gosh, so good. One of my favorite foods.
After I had a small piece of key lime pie and fruit.

I also had a couple sips of this “Bailey’s appletini” it had 2 oz. of Bailey’s with caramel and .5 oz of green apple vodka.

It was strong for my tastes, I only had two little sips but it was tasty. I also had a little bit of gingerbread, yum!!
I came home to find a package from my dad! He sent me loose leaf tea and this awesome cup that let’s you brew and dispense tea right into the cup! Super easy!

I received loose leaf rooibos, blood orange, chamomile, and spearmint tea!
I couldn’t wait so I got right to brewing. I brewed some chamomile with a little blood orange. It’s so much tastier then bagged tea!

Yum! I am off to finish sipping and read.
Adam is at a bachelor party right now so it’s pretty quiet, the house is a mess with our gifts but I am just going to rest tonight. I need it!
