Things that make you say ohmm!
Hello friends! Just finishing up another day..I guess it’s okay because it means I am one more day closer to being done with my internship! I can’t believe I am graduating two weeks from Saturday. I just can’t wait to be LAZY and do what I have wanted to do..yoga, writing, reading, running. I have been doing all of those things but in shorter increments then I have wanted. It’ll be nice to have a week or two to relax and apply for jobs!

While on the phone with him at the grocery store, I mentioned how the Publix I was at didn’t have my Annie’s Goddess dressing(heaven forbid!) I am officially obsessed with this dressing.
He had to stop and pick pumpkin up for me for the recipe I will be baking for Ashley’s vegan bake sale(baking tomorrow now!) I hope you all bid on some yummy baked goods!!
Anyways..he picked me up a bottle of Annie’s without me asking or reminding him of what kind I liked. He’s so sweet!

We were going to make pizza dough using this. We didn’t realize it was gluten and dairy free until we took it out of the cupboard but we trusted it would still taste good. Unfortunately the yeast was dead and did not rise. We had to make a quick trip before the gym to pick up some already made dough. Sadly, they were out of multi-grain dough. We used italian pizza dough instead.

I can’t help it if I know what I like.


For dessert I had some raspberry sherbet and semi-sweet chocolate chips. Sooo yummy.

I was still hungry a bit later so I had this fiberfull applesauce.


My exciting announcement will have to wait until tomorrow. I don’t want to announce it and then run! So I will wait and announcement sometime this week.
I remembered that today is the last day to enter Stonyfield’s Oikos contest!
Here is my entry:
I decided to tell you why I need to say “Ohm!”
This last semester(okay, year) has been really tough for me. I have had to make it through long days in a job that my heart just wasn’t in, but was required for graduation. It’s been difficult and stressful. During the lunch breaks when I just want silence and time with my thoughts I hear frustration, stress and how difficult students have been. I am in an unpaid internship, not that money is everything, but it makes the experience even tougher. Thank goodness I discovered yoga this semester! While I was holding poses and working muscles I didn’t even know I had I still felt super relaxed. I remember calling my mom after my first power yoga class and telling her how my muscles would start to burn and yet I felt like I could fall asleep at the same time. It seemed all that stress, worry, and chaos melted away the instant I let out that “Ohmmm!” it’s one of the best feelings in the world. I left feeling light, happy and couldn’t peel the smile off my face. My personal discovery of yoga has changed my life for the better. I am so glad I get the opportunity to stop, take a deep breath and let out that “ohm” when I need to!

I tried making a recipe with Oikos, but I got way over my head! Remember the dreaded chicken pot pie?? I did my best! I felt like this really expresses my heart right now though and I am happy I could share it with you all. So thank you for reading!

Back to Monday.
This may be a weak post..it’s Monday, so you’ll have to forgive me.
This morning started out pretty weak too.
I had ZERO appetite so I had a strawberry Stonyfield probiotic yogurt. Yum. I packed a couple bars, one for lunch and one for breakfast when I finally got hungry.
I ended up eating the blueberry zbar for breakfast as well once at school. It was YUMMY! Just like a blueberry muffin, one that you could feel good about.

I also sipped on some Tazo Awake tea and agave in my tea cup.

For lunch, I had some spaghetti with arrabiata pasta sauce(a little spicy tomato sauce), a cheese stick, a banana, and the Kashi pumpkin pie bar.
Every Monday the teachers have a meeting while the students are at specials. Candy is usually served, and today I did not feel bad about taking a few pieces. I had a mini snickers, a mini milky way, and some smarties. I needed a little Monday pick me up. It was a looooong day!
I headed to Publix because I am baking for Ashley’s vegan bake sale tonight!! Thanks to Lindsey for the recipe I am going to use. Can’t wait!
I headed home and grabbed a handful of unpictured Pirate’s Booty (I figure you have seen it enough
) I toasted up a slice of Pepperidge Farm Oatmeal bread and spread some pumpkin butter on. I was so ravenous..that this happened.

Sorry friends, I was so hungry!
Adam and I are now off to work-out. Fun announcement later!

Oh, Christmas tree!
Today we set out for some Christmas cheer. I am a real Christmas tree kind of girl. I can never use a fake one, unless I really have to one day for whatever reason. At first, I wanted to wait until next weekend but having a tree in the house just makes me feel better and for the final stretch of my internship(one more week!) I needed all the cheer I could get.
I remember coming home from school and plugging the tree right in and doing my homework by it just to smell the pine tree gloriousness! Onto the rest of my day..

Oh, bother.
We headed out to run errands which included stops at Ross, Michael’s, and Target to get some Christmas decorations. Then we headed to good ol’ Home Depot for our tree. You northerners get to chop yours down, we pick ours up at home improvement stores. It didn’t take long to find the right one.
We paid, and got it tied to our roof.

I had a little fun with my camera, I am sure the car behind us thought I was crazy. Or a spy..

When we got home, I gave Leo a bath. Then put out some of our new decorations.



It’s fun to start building our holiday collections. I can’t wait to have a bigger home(note: not an apartment) to decorate. One day! For now our one bedroom apartment will have to make do.

For dinner, I picked up some kale and brussel sprouts and used some chickpeas from earlier and stuck all three in the oven to roast. Mmmmmm…I used my LARGE plate for this and it was filled up with goodies.
The brussel sprouts were drizzled with EVOO, S&P and paprika.

Same with the kale along with some garlic powder as well.

All three went in the oven at 375. The kale took about 12 minutes, the brussels and chickpeas took about 25 minutes.
Together they made a super filling and satisfying meal!

I had done good sticking with mostly veggies today! I feel so much better already and know I am back on a healthy track. But I did share this giant bottle of beer with Adam, per his brother Nate’s recommendation.

In a chilled mug. It was refreshing! It definitely had an apricot taste in the finish and was smooth, not bitter at all. I enjoyed it.

For dessert, some Ghiradelli semi-sweet chocolate chips.

Along with a bowl of raspberry sherbet. It was about 150 calories worth. Yum!
I’m getting hungry again, but it’s bed time. Hopefully a mug of tea will help fill me up and doze me to sleep! I’m off to finish my last week in my internship. PTL!!!!! I cannot wait for Friday afternoon to come. Luckily, I have Wednesday off(sort of). I am on campus for a seminar until noon and then have the rest of the day to myself!!! Aka to clean.
