Apple Pie, my oh my!

Well, for some reason my post wouldn’t upload last night. I am posting it this morning..

Finally time for the apple pie recipe! Well, dinner before dessert right?

I raided the pantry for dinner and found this box in our closet, it was part of a BOGO at Publix.

All together with a black bean burger topped with spinach and some 365 ketchup and hot sauce.
I also scooped the hot rice pilaf onto a handful of spinach so it would wilt a bit.

A large plate of edamame for the hubs and I to share as well..

My sister picked up a pint of Publix raspberry sherbet. I actually wanted sorbet(which is a bit healthier) but oh well. This was plenty yum and brought be back to when I was a kid. This stuff was my favorite!

We ate around 6 and by 9 I was starving..my stomach is used to too much food..

Snack pack of carrots, hummus and some mozzy. I only ate half of the hummus. Along with half of an unpictured toasted sandwich thin.

With some pomegranate juice water.

Okay and who left the bag of Jelly Belly’s here?!? Adam had to take them away..fast..

Now for my apple pie recipe!

When I first made this, I used Paula Deen’s recipe. I made some changes(and included a lot less butter..sorry Paula!).

Here is my version:

I just use a regular store bought pie crust, it was easiest!

For the filling:

(Note: this was for a deep pie dish, you can adjust how much of each ingredient you use to fit your pie pan!)

-6 small (or three large) Granny Smith apples, or any baking apples peeled and chopped(or sliced)

-24 Oz. apple sauce

-1 1/2 tablespoons ground cinnamon

-1/2 heaping cup sugar

-1/4 cup light brown Sugar

-One Lemon

-Two tablespoons flour

  • Place chopped apples in a large bowl.
  • Squeeze the lemon juice into the bowl over the apples, keeping the seeds out and stir to cover all of the apples.(This prevents browning and brings out the sweetness in the apples)
  • Add 24 oz. plain, unsweetened apple sauce to the apples.
  • Add cinnamon, sugar, brown sugar and mix the contents of the bowl.
  • Add flour and mix one more time until mixed well.
  • You can add more cinnamon/sugar to taste if needed.

If it tastes good in the bowl, it will taste good in the pie! :)
Line the bottom of the pan with one sheet of pie crust. I love to weave strip of pie crust on top and add a little shape in the middle..

Normally I just do two leaves, but since this was my only contribution so I wanted to go all out.

To top it, I used..

  • 3 tablespoons flour
  • 1 tablespoon butter
  • A pinch of salt

..you can add sugar which caramelizes better, to be honest I forgot the sugar! But it still turned out yummy and with so much sugar in the filling, you really don’t need anymore!

Bake at 425 for 10 minutes and then reduce to 350 for another 45 minutes. Definitely cover the edge of the crust with foil once it starts browning, it will brown a lot quicker then the rest of the crust!

Next time, I am going to it completely from scratch. :) I love making apple pie!
