The Honest Scrap

So I have received my first award a few weeks Caitlin from The Twenty-Fifth Year sent me the “Honest Scrap” award.

The rules of the Honest Scrap Award are: divulge 10 honest things about yourself. Then pass the award on to 7 bloggers who you believe will be 100% truthful!

All right, let’s get scrappy..
1.) I have only recently begun chipping away at the thought of what I want to do when I get out of college..which is next month. It’s super exciting but sometimes I just wish I knew it 4 years ago. Better late then never?
2.) Adam and I do not plan on staying in Florida, in fact we hope to be moving to another state in the next 5 years. Their are many reasons, one of them being that my soul needs a new setting. I hope to settle down somewhere with mountains, four seasons, a great school system for whenever the pitter-patter of little beautiful feet arrive, and a place surrounded by beauty(even if I end up in a city where I can drive to beauty. ;) )
3.) I often don’t drink the coffee I post on my blog. Okay I know it’s silly, why would you put it up then? Usually I sip on it and don’t even get through half but it’s easier to say that then say “well, I drink 1/5 of this cup of coffee” sometimes I drink most of it, other times it sits as I get ready for work. I know that was a pointless admission, but I will let you know when I drink all of it and when I don’t if you really want to know. ;)

4.) I love the people in this community. It’s amazing to meet people with the same interests and I feel oddly comfortable sitting at a table with five people all taking pictures of their food. Really, the bloggers in Orlando are awesome and I can’t wait to meet more bloggers and blog readers! :)
5.) My family is so supportive and that means the world to me. I couldn’t dream the way I do without an amazing support system. I’m very blessed.
6.) I love Italy with all of my heart and soul. God really met me there and I just have such a heart for the Italian people. They are amazing and so much fun oh and man, do they know how to cook!
7.) I want to only get better at blogging. I blog for myself truly and love that you read it, but I also want my blog to be the best it can be because that’s the kind of blog I want to read. :)
8.) I really think so many reforms need to be made when it comes to cafeteria food in schools. I feel like I see something fried, something drenched in cheese, and many unhealthy things served on a daily basis. It could be so easy and inexpensive to replace with healthier options. That’s a mission I would love to get involved in one day! Can you imagine if local farmers partnered up with schools? How awesome would that be?
9.) I am Italian, German and Irish mainly but I have a whole bunch of smidges of all things European! My grandmother on my mom’s side is from Germany, and was Jewish living in Frankfurt during WW2. She and my great-grandmother escaped to Shanghai and lived there for another 10 years before coming over and living in New York City. She still remembers seeing Hitler in person when she was just 6 years old. I would love to write her story one day.
10.) As a Christian I know I am NOT perfect, I mess up all the time. The point is that we are going to mess up whether we want to or not, whether we are trying to or not. But we’re forgiven. That is beautiful to me. My relationship with God is the most important thing in my life. :) I totally 100% respect everyone and their beliefs. It’s just a huge part of me and therefore feel I should share it with you. So, thank you for listening!

Happy 30th!

Today is my thirtieth day blogging! YAY! I am celebrating by vegging out, catching up on blogs, and in a couple hours I will be running errands and literally running. :)

I am just really excited to have a month under my belt. It’s tough getting used to a whole new routine that includes taking 100+ pictures most days and writing a lot! I love it though. I already have seen such a huge change in my life and I can’t wait to see how it all pans out! :)

Thank you to those who have joined me so far, I really appreciate your comments! They mean so much to me and especially just starting out as a little fish in a huge pond they really encourage me to keep writing! Now onto my eats..

My morning bowl started with the end of my MixMyGranola..so sad, because it was SO good!

Add a little plain yogurt and mix then drizzle with dark local honey for an amazing breakfast yogurt bowl! :) Mmmmm..

I haven’t really left my spot on the couch for a while but I got up to make lunch..I first grabbed a small handful of booty…Pirate’s Booty that is. I munched while deciding what to make for lunch..

We had a coupon for more mozzy(mozzarella cheese) so I decided to go with that and add some fresh basil from the garden..

Three huge leaves of basil added with a handful of spinach, can’t tell which is which can you?

Okay that may look like hard boiled eggs but it’s a couple of slices mozzy. Mmmm..I’m Italian, we never were without some Mozzarella in the frigde. I drizzled a littl EVOO on top with some fresh ground pepper and a pinch of salt.

Added a snack pack of carrots and a little goddess dressing(barely made a dent in the dressing)..

This sandwich was AMAZINGGGG! It will be repeated again, holy moly so good. I loved the texture and the taste of the fresh basil. It’s worth having the herbs just to make this sandwich again. I know tomatoes would have been a natural addition, but a)I didn’t have any. b) I don’t like most American grown tomatoes. Why do I say American grown? Because Italy’s tomatoes are out of this world good! I ate those all the time, even though I never ate tomatoes before going there. Which makes sense since it’s a huge part of their daily eats. But anyways, recently I had some tomato and it wasn’t bad at all so you may see me slowly start adding them in! It’s always a good time to start liking more fruits and veggies! :)

Do you notice you like things now that you hated growing up?

Used to hate & now love:

-Hot sauce

-Wasabi

-Spicy food in general

-Onions

-Sweet Potatoes

-Maybe tomatoes??

Off to the market..

After church we headed to a farmer’s market we hadn’t been to yet! This one is in Maitland at Lake Lily. I love that it’s lined up along the lake so you don’t feel overwhelmed by huge groups of people.

It was past lunch time and we spotted a booth cooking up some yummy fare. I had an arepa(which I shared with Adam)..

I also had a bite of Adam’s steak empanada. SO DELICIOUS!! I will be getting one of those next time.

Adam took this of me walking and while I wasn’t going to put in he said, and I quote “Don’t you delete that, you put that in your blog!” here it is Adam. Happy?

We picked this up while we were there..

I have been seeing pumpkin butter all over the blog world and I have needed some..luckily we found a woman who cooks up jams, butters, and spreads. I wanted to buy at least five other jars but we restrained ourselves to this.

When we got home we split up a large apple and I dipped mine into some of that yummlicious pumpkin butter. SO GOOD! Like dessert..

We then hit up Super Target for groceries and came home to make dinner.

We started with an appetizer (which was supposed to be a side but once we had a taste, we couldn’t stop eating them!) Kale Chips! Thanks to Kath. :) This was our second batch it did not take long to devour. I ate mine with some organic ketchup and hot sauce!

I got hungry waiting for our dinner to finish so I had a cheese stick..

I waved Sunday goodbye with a beer..then dinner was served! I was so hungry I didn’t realize that I hadn’t taken a picture until I got to to this point..

Adam and I shared the celery sticks. We made baked chicken tenders with panko breadcrumbs that we added paprika, chili powder, garlic powder, and S&P to. The chicken soaked in an egg mixture with hot sauce. Baked at 375 for 15-20 minutes until cooked.

We made them healthier chicken wings with home made buffalo sauce(not as much butter as they normally make the sauce) with some vinegar and hot sauce. We shared a small side of blue cheese and celery. My favorite bite is one with a little blue cheese & a little sauce. I always get my wing sauce on the side for the perfect mix. These were much healthier then normal chicken wings and were mighty tasty! It’s all in the spices baby..

We used “steam and mash” ore ida potatoes. Once they steamed in the micro, they were mixed with plain yogurt, milk, a little smart balance and some salt.

This was a perfect “southern comfort” meal for a Sunday with the fried part!

I apologize for the picture of my dinner! My pictures have been sad. Hopefully they will look much better soon. :)

For dessert, of course, some more wedding cake! We each had a slice about the size as the one of the two I had last night. I also had this an hour later.

The perfect extra kick of sweetness I needed!

So, I don’t even know if I will be able to run the outback distance classic since I haven’t been running as much..at all. I was sick a few weeks ago and had to take some time off which I hate. I get so into a routine and become so motivated to workout regularly and then when I am sidelined I lose it and have to get out of being lazy and back to being active. I know the race is not too far but my legs give me issues and pushing hard since I haven’t run 3 miles since my last 5k I don’t know if I want to push it. I would much rather work out earlier and get a few miles in on my own. I think I am just going to put more effort into exercise this week and run 3 miles that morning on my own. Hopefully this week will give me the jump start I need to be motivated again. Once I get into the swing of it again I get more motivated. But it takes a few times to get back into the habit of exercising daily. I think our hotel in Jacksonville probably has a gym so that will be good. Plus I need to save my $$ for a couple races I want to do in the next couple months. :) I felt so guilty at first about it. But really..I am still going to run, I am still going to work out and be active. I just want to listen to my body and not be stressed out when I should be enjoying time with my family.

Some exciting things are happening this week, besides Thanksgiving, and their are so many things to be thankful for!

I am off to Jacksonville to my aunt and uncle’s house..so excited! We’ve been wanting to spend Thanksgiving there for a few years now. It’s also supposed to be a little cooler which is exciting. :) Have a great night!
