A sweeter night..

Dinner was pizza and beer. Sometimes that’s all I need to cheer me up..of course, we don’t order in. We cook our pizza.

We bought dough at Publix for the quickest, easiest pizza. I requested my much beloved pineapple as a topping.

For our pizza, we picked fresh herbs from our “garden” we picked some thyme, greek oregano, and sweet basil. Chopped them up and sprinkled them on top..

I love Amber beers, and this is one of my faves..and it’s a light beer, so I feel better about it. ;)

I ate all but one piece. I usually get full before this point, today was no exception but it’s so yummy and I can’t help myself. Oh well, I really don’t feel too bad about it, it was yummy and worth it.

A little balsamic and EVOO to dip our crusts in. I really really love balsamic.

Okay, I have such amazing friends..case in point: I got a text tonight from Ashley telling me to look outside my door. I handed Adam the phone and opened the door to find an innocent Whole Foods bag sitting on my doorstep. Inside it held a sweet gift from an amazing friend..

It definitely did make my day SO much better!! Ashley, you’re amazing thank you for making me smile and making me realize how great my friends are. You are wonderful, and you are going to KICK BUTT this weekend at that marathon!! You are ready, beautiful and capable! :) Thanks for sweetening up my day more then you know!

I am going to break into this right now, it’s a carrot cake cupcake from whole foods so it’s healthy..right? ;)

I hope you all have a goodnight! I am thanks to a wonderful husband, and incredible friends.

Well, that was rough..

Today was rough, majorly rough. I was crying before 8:15 a.m. I won’t get into too many details since you never know who reads what you write but it was upsetting and I was essentially told at the last minute that my teacher would not be coming in today and I would have to teach. When I am supposed to be done. I also found out she knew this and just didn’t tell me to “test” me. That wasn’t the most upsetting part, again I am not going to say much but let’s just say I was essentially yelled at and blamed for being upset. Long story, I may explain at another time after I get my diploma. I wasn’t upset that I had to teach it was just a lot of sucky things piling up into one big yuckfest. I’m just glad I am home..

Anyways..here’s to hoping tomorrow is much better!

Last night after I posted I realized I needed something in my tummy,

I ate half of this and it was SUPER YUMMY! I love these bars, to be honest though I am not a fan of the fruit ones. I can’t explain why but I have tried a few of the fruit flavors and they aren’t as appealing to me. I KNOW I will love any non-fruit flavors though and this proved me right! Cinnamon goodness. I taped the packaging up and put the other half in my purse as a go-to snack if needed!

I mentioned that we were having a “pre-Thanksgiving” dinner and boy..was there a lot of meat. Vegans/ vegetarians may not want to read on..there was: a turducken. Yep, that’s a chicken stuffed into a duck stuffed into a turkey. I’m not kidding. To be honest, I had a little but only because it was a “bucket list” item for my husband and I since it’s the weirdest thing I have ever heard of. I think i only got some duck and turkey though. There was also a ham..

I grabbed a little ham, and turducken. I know..and I didn’t realize until after that it was during Vegan week! How ironic is that? I did have to try some though..here was my plate..

Starting with the salad and moving clockwise..the salad was yummy! Some crumbly cheese, walnuts, dried apple chips, and pomegranate arils. YUM! Then there was a sweet potato mash with some walnuts and marshmallows, moving onto the turkey and a little bit of duck. A sweet and yummy potato roll, and ham. Add in a smaller roll since I was starving after all of this.

It was all yummy, the duck was okay(i’ve never had duck before). To be honest, it was way more meat then I have even in a while and my stomach hated me. Which brings me onto what I wanted to talk about..

I love Caitlin’s post about the vegetarian/vegan issue. Here’s my stance..

  • I do eat meat.
  • I don’t eat as much meat as I did prior to this summer.
  • Learning from last night, my body likes less meat.
  • If I can make alternatives to meat, I will.
  • I don’t believe at this point becoming a vegetarian/vegan is for me, but I am the first to say that it could one day change.
  • I plan on going vegetarian for a month at some point in the next year. I don’t think it will be hard, but I say that now..we’ll see what I say then ;)

I hope no one is offended by my diet, I do not get offended by anyone else’s and I love seeing how different people feel on different diets, and their beliefs about how they eat. I am looking forward to experimenting with different ways to eat in the future! I just love food..a lot! I love learning more about it. Love love love ;)

Dessert was yummy pumpkin cake. Delightful, but I couldn’t eat too much of it.

This morning, I brewed some coffee. Sadly I then realized we were out of organic milk..Adam had picked up this non-dairy creamer..

Mmm yeah, I wasn’t “delighted” to have to use this, but I needed coffee..so I used a teeny-tiny amount.

With 1/2 a teaspoon of sugar since it was already going to be sweet.

I also made an amazing meal smoothie. To be honest, I only drank half of it after everything went down. When I am in high-stress I do not eat. I just can’t. I did my best to drink down this super thick smoothie.

In honor of Vegan Blogger Week/Day I had the biggest chunk of the vegan chocolate chip cookies we made. Don’t blame me for the shape..if you missed it, this explains it all. ;)
