Best 20 minutes spent today!

Those 20 minutes? I’ll get to that in a bit! :)

For breakfast, I had a boring cup of coffee and bowl of H2H. Sorry for the lack of picture but it wasn’t too exciting. :)

Today was “Walk to school day” so we joined the students at a park near the school and then some police officers closed the street down so we could all walk to school, in the street, together. It was SO my kind of thing. It’s super important that we promote exercise in all forms. Most of the students that go to this school live very close and their are plenty of crossing guards keeping it safe for them. It helps them with their exercise and also is pretty great for the environment to not be driving every morning when not needed. :) Love it!

 

For lunch:

  • Mini-Tribe hummus
  • Carrots
  • Toasted Sandwich Thin
  • String Cheese
  • Pirate’s booty

I ate all of the carrots, most of the sammie-thin, and the string cheese but I didn’t touch the booty. ;) Didn’t mean for it to sound the way but I am not changing it. I ate the pirate’s booty after school. We got out early since it was Wednesday and we get out an hour early on Wednesdays and we didn’t have a meeting(thank goodness). I headed home and immediately got into my gym clothes and left before I was even tempted to sit and not move the rest of the day. I needed to run! :)

Oh and those twenty minutes?? I RAN 20 MINUTES STRAIGHT! This may not sound like a big deal but I think that’s the longest I have ever ran at once ever. I mean a good, steady run. I didn’t overexert myself(except I did 30 seconds of sprints at the end) and I didn’t jog I stayed 5.0 and over for those 20 minutes and it was awesome. My body is going to be sore tomorrow since I did yoga yesterday as well. Tomorrow will be my rest day. I am super happy with my workout. I ran, on the treadmill, a total of 25 minutes at 1.0% incline since I have been told that’s the closest to actually running outside. That included a 3 minute warm-up and 4 minute warm down. I came in a total of 2.05 miles! It may not be much but I am proud of it. :)

I am now off to read some blogs and get ready for small group tonight! I’ll try and post later, we are having a “pre-Thanksgiving” dinner. Yummmmmmmm! :)

I’m BACK!

Sorry friends, I know it’s been a while but my 4 1/2 years in college just culminated to today and it took some time and work to get here. :) It’s so surreal, and such a relief. I still don’t know exactly what I am going to do, but you will be in on the ride the whole time! Since I missed a couple of days I am going to post pictures of some of the highlights, then I will be back to my normal daily posting self and all will be right with the world! ;) I’ve missed you, friends. Now onto the eats..

Sunday night I made some baked squash.

  • I had Adam cut the butternut squash in half, I brushed some EVOO on and some S&P on top then put in the oven to bake at 375 for 30 minutes.
  • Then I sauteed onions until they started to turn brown.
  • Next, I added a clove of chopped garlic.
  • I added in some portobello mushrooms, frozen veggies, spinach, and broccoli and cooked them up.
  • Once the spinach is wilted and all the veggies are cooked through, I mixed in a little brown rice and gorgonzola.
  • Then I picked some fresh thyme from our “herb garden“(that was the same night Adam surprised me with it!) and sprinkled it on top.
  • Baked for another 25 minutes and while the squash didn’t completely soften up, it did fill me up really quickly!
  • *Adam’s had some sun-dried tomato chicken sausage in his as well, I just had a few bites of it. :)

So, we found out recently that Adam is lactose intolerant. He often just takes some pills to help with eating dairy which are not much more then enzymes to help the milk digest. Still, I prefer to find other alternatives (cause their are SO MANY!). Adam picked up some coconut milk ice cream, this one was “Purely Decadent” cookie dough flavor! It’s. So. Yummy! I love the subtle yet sweet coconut flavor. Next time I want to buy the plain kind!

Monday night during the stress of getting everything together we had a wonderful invite from our friends, Justin and Gayle to join them and their little girl Reese for Thai food! It was their wedding present to us and we feasted! Such a great break in the midst of chaos (more of that later..)

We started out with two orders of fresh rolls, only Gayle and I shared some with tofu. It was glorious with that peanut sauce in the shot glass.

The best wonton soup I have ever had. Spices, veggies, wontons with chicken. It was wonderful!

HOLY YUMMM!! I know a few bloggers use that phrase all the time and this just called for it. I don’t know how they prepared the tofu but it was the perfect texture. A little crunchy/chewy on the outside nice and soft on the inside. The best tofu I have had so far and cooked perfectly in the sauce. Sigh…I love me some pad thai. I reheated it for lunch today and the tofu still had amazing texture.

For dessert, some coconut ice cream. YUMMM!! This had a much creamier texture then the cookie dough I had the night prior. I was told by Lindsey that the cookie dough flavor wasn’t as creamy in texture, this was and I could have eaten a huge bowl of it!

We also had fried banana, but since it’s my favorite dessert I inhaled my share with a little bit of coconut ice cream! That meant silly blogger forgot to take a picture..okay so, better late then never?
Today was so stressful, especially since I had the last meeting of day so I had to sweat for a bit! Everything was turned in, and I passed!!! I just have to mainly observe different grades until Dec. 4th(we have next week off) and then I am home free! PTL! The hardest part is over and I can relax now. Thank goodness!
When I got home..I got home to a mess. I had to unload years of elementary ed. papers, worksheets, etc. and put them into a TESOL notebook which is a portfolio showing you took courses that considered you certified to teach students of other languages which is required in the state of Florida. Long story short, the chaos looked like this:

I grabbed a garbage bag and went at it..I ended up cleaning the entire apartment in less than an hour. I had a snack of some pirate’s booty and got a burst of energy I suppose. The after:

Now that’s more like it.
I headed off to yoga with Ashley less than an hour later. We ran late but got there just in time. If you go to CPY you understand what I mean. I love Theresa and Calvin, the owners/teachers. Theresa makes me so happy and is so full of life and optimism. It was a good class and I felt focused the entire time. But oh boy, am I going to hurt tomorrow! Love it. Love love love yoga! Then we made a pit stop at whole foods for a few things.
I didn’t get home until 9 and I was a starvin’ marvin. I picked up a garnet yam from Whole Foods and quickly washed it, chopped off the ends and microed it until soft. A little smart balance and S&P later. YUM!

I also cooked up some onions, carrots, and portobello mushrooms as a side. The result? A yummy plate of deliciousness! I added a little sprinkle of gorgonzola(that one little tub is lasting a while!). I usually let crumbly cheese go bad on accident, so I am trying to be aware of what we have and can use. Along with it I sipped on some Guava Kombucha.

Ashley couldn’t believe I actually liked this stuff. IT’S SO GOOD! I barely notice the vinegarness of it. It just tastes like a yummy, fruity soda but it’s actually good for you with tons of probiotics! It’s $$$$ but it was my way of celebrating. :)
I am now off to bed, I am not going to get much sleep tonight which is not good. That’s one thing I need to work on is getting back to eight hours. Sleep is so super important and sooooo satisfying! I just wish their were more hours in a day!
