It’s coooold! YAY!

Today was great, yet draining! It’s slowly starting to settle in that I am SO CLOSE to being done. Sorry, I know I talk about it way too much but it’s very exciting. Also, it didn’t even hit 61 degrees here today! YAY! I love this weather..

For dinner yesterday, they bought us take out from a new BBQ restaurant. Four Rivers Smokehouse in Winter Park. It was SO good! Some of the best BBQ I have ever had..

Roasted corn that tasted exactly like cornbread..mmmmm caramelized corn. I will be roasting corn in the very near future, the best baked beans I have ever had, “corn bread salad”(the dressing had real cornbread in it), and my smoked brisket BBQ sandwich on a white bun. It was a biscuit or a bun for me, I chose bun because I LOVE BBQ sandwiches. This was so good. Like I have said, I don’t worry as much on Wednesdays on what is being served. I know it’s going to be good, and I allow myself to eat it.

I had my dinner with a cup of some “Arnold Palmer” which is half sweet tea, half lemonade..for all you non-southeners out there. ;)

We didn’t have any dessert but it was fine with me, this was way decadent enough. My stomach was happy. Although some peanut M & M’s were passed around, and I grabbed a few. It was a fantastic dinner, but onto today..

Today I had to be observed by county reading specialists at school as I taught their phonics program which was nerve wrecking to say the least. Especially when the kids are used to routine and this broke up routine and you just never know with first graders.

To fuel for my busy day I ate a bowl of H2H and Puffins & flax! I didn’t take a picture because I just had a bowl of that yesterday! I wonder if you care about seeing some of the same pictures over and over again I wouldn’t mind posting them! You let me know. :)

Some All-Bran crackers, veggies, and some mini-Tribe hummus!

I also packed a strawberri Chobani because this seemed to be a pretty meek lunch. I was wrong, this filled me more then I thought. I had Kashi pumpkin spice bar as well. I love listening to my body and while this looked small to me, obviously my body thought it was the perfect amount! I haven’t been able to work out as much lately thanks to being sick, so I don’t need as much fuel. I can’t wait to get back into activity full-time. It shall be lovely.

When I got home, I was planning on eating my strawberry chobani and granola. Instead, I mixed it up and stuck it in the freezer. Growing up, I started freezing my yogurt. Then tart-yogurt got popular(and my mom lived a block over from a Pink Berry in NYC) and I love it even more! So this will be a nice treat. I probably won’t be able to find out until tomorrow night.

I decided to open a vanilla chobani and some MixMy Granola and some dark local honey drizzled on top.

Incredible good! The dried fruit was cold and chewy and the seeds and almonds were crunchy, it was just happiness in a snack.

I am off to catch up on my blogs and apply for a job or two ;) ! Hope you are enjoying your evening!
